When I came to America from England in 1967, I made sure to bring along my favorite recipe for scones. Served warm with butter, they're perfect for breakfast.

Yield 10 scones.

Number Of Ingredients 8

2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/4 cup cold butter, cubed
1 cup raisins
1/2 cup milk
1 large egg
Additional milk

Steps:

  • In a large bowl, combine the flour, sugar and baking powder. Cut in butter until mixture resembles fine crumbs. Stir in raisins. Beat milk and egg; add to dry ingredients, stirring lightly. , Turn onto a lightly floured surface; roll to 1-in. thickness. Cut with a 2-1/2-in. biscuit cutter. Bake at 425° until golden brown, 10-15 minutes. Serve warm.

Number Of Ingredients 10

350 g self-raising flour *** Please seive, US Measure is 2 cups and 13 tablespoons
1/4 tsp Salt
1 tsp baking powder
3 tbsp caster or regular sugar
3 oz or 85 g butter, cubed
3/4 cup or 175 ml milk
1 tsp vanilla extract
A squeeze lemon juice
beaten egg, to glaze
1 cup or 200 g raisins, dried fruit etc of your choice. (I used raisins)

Steps:

  • Pre heat oven to 220C/ 425 F / Gas 7. Also pre heat your baking tray.
  • In a mixing bowl, add the sifted flour, salt and baking powder,and combine.
  • Add the butter and rub in with your fingers until the mixture looks like fine crumbs. Using a flat bladed knife, stir in the sugar. Then add the dried fruit if using.
  • Put the milk into a jug and heat in the microwave for about 30 secs until warm, but not hot. Add the vanilla and lemon juice, then set aside for 2 minutes.
  • Make a well in the dry mix, then add the liquid and combine it quickly with a flat bladed knife. Once combined, place it on a well dusted work surface.
  • Take a 5cm (2 inch) cutter -( Plain cutters cut more cleanly and give a better rise than patterned edge cutters ) and dip it into some flour. Plunge in a single movement into the dough, then repeat until you have four scones.
  • By this point you'll probably need to press what's left of the dough back into a round to cut out another four. Try not to over work the dough, be light with your hands when reshaping.
  • Brush the tops with beaten egg, then carefully place onto the hot baking tray. Bake for 10 mins until risen and golden on the top.

Authentic British Scones image

An authentic British Scone is the perfect accompaniment to your warming cup of tea, particularly if you have some clotted cream and jam to serve it with!

2 c unbleached all-purpose flour
2 Tbsp sugar
4 tsp baking powder
½ tsp salt
3 Tbsp unsalted butter, cold
⅔ c milk
1 egg yolk beaten with 1 Tbsp milk, (to glaze)
Strawberry jam, (to serve)
Clotted cream, at room temerature (to serve)

Steps:

  • Preheat your oven to 425F.
  • In a medium bowl, place the flour, sugar, baking powder, salt, and butter. Rub the mixture together with your fingers to break up the butter, until the mixture resembles fine breadcrumbs.
  • Add the milk slowly, mixing as you add, using enough of the milk to get your dough to come together with no lumps remaining. (Your dough should be quite sticky. If a good consistency is not achieved with the listed amount of milk, continue adding until your dough reaches a good consistency.)
  • Spoon the dough out until a well-floured surface. Generously dust the top of the dough and knead the dough 2-3 times to coat it with flour and smooth the surface. Press the dough into a round that is roughly 1 inch thick.
  • Using a well-floured cookie cutter, cut the dough into 2 inch circles. (Be sure to press the cookie cutter straight down and up. Twisting the cookie cutter will impact the amount of rise you get on your scones.)
  • Place the rounds onto a greased and floured baking sheet. Brush them gently with the egg yolk and milk mixture.
  • Bake the scones for 12-15 minutes, until golden and firm.
  • Remove the baked scones from the oven and let them cool for 30 minutes (if you can resist). If you like softer scones, cover them with a clean tea towel as they cool.

Old Fashioned English Lavender Tea Scones image

When I was back home in England recently, I visited a local lavender farm called Wold's Way Lavender in North Yorkshire; we had tea and these delicious lavender scones in their delightful little tea room; this is my attempt to recreate those scones - using some of my home-grown culinary lavender from the garden here in France! I have made them several times now and they have turned out just as I remembered them, especially good if split whilst still warm, buttered and spread with lavender honey or lavender-infused cream! Just a note of interest......lavender was often used during Tudor and Elizabethan times in the preparation of a wide variety of dishes and was a particular favourite of Queen Elizabeth I. The palace gardeners were required to have lavender flowers available at all times which were used to make Conserve of Lavender (a mixture of lavender flowers and sugar) and sweet lavender tisane, a drink made with lavender flowers, boiling water and honey.

225 g plain flour
1 tablespoon baking powder
1/2 teaspoon salt
60 g butter
1 tablespoon natural cane sugar
150 ml milk
1 tablespoon organic lavender flowers
1 egg, beaten

Steps:

  • Pre-heat the oven to 220C/450F, then lightly flour a baking tray.
  • Sift the flour with the baking powder & salt. Rub the butter with the flour until the mixture resembles breadcrumbs. Stir in the sugar.
  • Make a deep well in the flour, pour in the liquid and mix to a soft doughy texture with your hands. Sprinkle on the lavender flowers and knead into the dough very lightly until it is just smooth. Roll out the dough on a lightly floured board & cut out scone rounds.
  • Brush the scones with the beaten egg, and sprinkle a few lavender flowers on top if you wish.
  • Bake in oven for 7 - 10 minutes or until well risen and brown. Leave to cool. Serve with butter, lavender honey or lavender-infused cream.
