This Classic Macaroni Salad is the perfect side dish for a summer cookout, family reunion or even a tailgate. Along with the traditional ingredients, the dressing for this version of macaroni salad includes sweetened condensed milk. This is definitely a recipe your friends and family will be asking for after they taste it.

16 oz. macaroni pasta
3 large carrots (grated)
1 onion (diced small)
1 green pepper (diced small)
2 cups mayonnaise
1/4 cup vinegar
1/4 cup sugar
1 14 oz. can sweetened condensed milk
Salt and Pepper (to taste)

Steps:

  • Cook macaroni according to package directions to al dente. Drain.
  • Mix together mayonnaise, vinegar, sugar, sweetened condensed milk and salt and pepper; add to macaroni and stir well.
  • Add in carrots, onion and green pepper. Mix until completely incorporated.
  • Refrigerate for a minimum 4 hours before eating.

For the dressing:
1/3 cup mayonnaise
1/4 cup sour cream
1 teaspoon Dijon mustard
1-2 teaspoons sweet pickle juice
1/2 sweet onion (finely chopped)
3 celery ribs (finely chopped, leaves reserved and finely chopped)
3 sweet pickles (finely chopped)
2 hard-cooked eggs (chopped)
1/8 cup fresh chives (chopped)
1/2 cup pasta cooking water

Steps:

  • Bring a pot of salted water to a boil over high heat. Reduce the heat to medium, add the elbow macaroni, and cook according to package directions. With a measuring cup, save some of the pasta cooking water. Drain the macaroni.
  • For the dressing: Combine the mayonnaise, sour cream, Dijon, pickle juice, salt and pepper. Stir to mix well.
  • Add the onion, celery and chopped pickles. Add the macaroni and about 1/2 cup of the starchy macaroni hot cooking water. Add the celery, onions, celery leaves, chives and chopped hard boiled egg. Gently stir. Garnish with celery leaves and wedges of hard boiled eggs.

For the perfect balance, use a more savory brand of mayonnaise here, since the recipe gets its sweetness from a bit of sugar and shredded carrots. Make sure the macaroni salad is cold when you serve it; the only time macaroni has to be served hot is when it's covered in mounds of cheese, like this Southern Macaroni and Cheese.

1 pound elbow noodles
2 celery ribs, finely diced
1 red bell pepper, finely diced
1/2 cup shredded carrots (from 1 medium carrot)
1/2 cup finely diced red onion
1 cup mayonnaise
1/2 cup sour cream or plain Greek yogurt
1/4 cup apple cider vinegar or white vinegar
1 tablespoon granulated sugar
1 tablespoon Dijon or yellow mustard
1 teaspoon kosher salt, plus more as needed
1/2 teaspoon black pepper, plus more as needed

Steps:

  • Bring a large pot of salted water to a boil. Cook noodles until a little past al dente, then rinse under cold water and drain. Once the noodles are cool enough to handle with your hands, transfer them to a large bowl.
  • Add the celery, bell pepper, carrots and onion to the cooled noodles; toss to combine.
  • Prepare the dressing: In a medium bowl, whisk together mayonnaise, sour cream, vinegar, sugar, mustard, salt and pepper.

Steps:

  • To make the hard-boiled eggs: Add the eggs to a medium-sized saucepan. Cover with cold water and bring up to a boil over medium heat. Cover with a lid and turn off the heat. Let the eggs sit in the hot water for 14 minutes. Drain and cool under cold running water. Peel the eggs and chop. Reserve.
  • While the eggs are cooking, bring a large pot of salted water to a boil over high heat and add the macaroni. Cook until al dente. Drain and rinse with cold water.
  • In a large serving bowl, combine the eggs, ham steak, celery, shallots and lemon juice Add the macaroni and stir to combine.

2 tablespoons of pickle juice or vinegar
1 tablespoon of granulated sugar
1 tablespoon of Creole or other spicy brown mustard
1/2 teaspoon of kosher salt
Salad:
2 cups of dry elbow macaroni
1 teaspoon of olive oil
1 cup of chopped sweet onion
1/4 cup of chopped celery
1 (2 ounce) jar of pimentos, drained
1/8 cup of chopped pickles, sweet or dill
1/4 cup of pickle juice, optional
Kosher salt and freshly cracked black pepper, to taste

Steps:

  • In a large serving bowl, whisk together the dressing ingredients; set aside. Cook pasta in well salted water until al dente according to package directions. Drain, rinse and drizzle with olive oil; add to serving bowl. Top with the onion, celery, pimentos, pickles and pickle juice and toss. Taste, add salt and pepper, taste and adjust as needed. Refrigerate before serving for at least 2 hours, or overnight, if possible; toss again before serving, stirring in additional mayonnaise or pickle juice if more moisture is needed.
