2 cups 2% milk
1 cup chicken or vegetable broth
1 cup water
1 teaspoon salt
1 cup uncooked old-fashioned grits
2 to 3 cups shredded sharp cheddar or Monterey Jack cheese
Pepper and additional salt to taste

Steps:

  • Combine milk, broth and water in a large saucepan; bring to a boil. Add salt. Whisk in grits; reduce heat to low. Cook, stirring frequently, until creamy, 15-20 minutes., Stir in cheese until melted. Season with pepper and additional salt to taste.

4 cups water
1 cup uncooked old-fashioned grits
1/2 teaspoon salt
1/2 cup 2% milk
1/4 cup butter, melted
2 large eggs, lightly beaten
1 cup shredded cheddar cheese
1 tablespoon Worcestershire sauce
1/8 teaspoon cayenne pepper
1/8 teaspoon paprika

Steps:

  • Preheat oven to 350°. In a large saucepan, bring water to a boil. Slowly stir in grits and salt. Reduce heat; cover and simmer until thickened, 5-7 minutes. Cool slightly. Gradually whisk in milk, butter and eggs. Stir in cheese, Worcestershire sauce and cayenne. , Transfer to a greased 2-qt. baking dish. Sprinkle with paprika. Bake, uncovered, until bubbly, 30-35 minutes. Let stand 10 minutes before serving.

1 cup shredded Cheddar cheese
½ cup shredded Parmesan cheese

  • Bring water and salt to a boil in a saucepan. Whisk in grits, reduce heat to medium-low, and cook until thickened, 5 to 6 minutes. Remove from heat.

In this addictive Cheese Grits Casserole, creamy rich Southern Grits are cooked with garlicky butter and cheddar and parmesan cheeses then baked to perfection. Each flavorful bite oozes melts on the tongue.

Kosher salt to taste
8 cups water
2 cups old fashioned grits
3/4 cup grated cheddar cheese (I used medium here but feel free to use what you prefer (mild, medium or sharp))
1/4 cup grated parmesan cheese
3 tsp minced garlic
1/2 tsp garlic powder
1/2 cup salted butter
2 cups whole milk
3 large eggs (beaten)
Optional: Grated parmesan cheese and parsley sprinkled on top

Steps:

  • Add salt to water and bring to a boil.
  • Add grits to boiling salted water, whisking into the water then lower heat to the lowest setting and cook covered until grits are tender but still pourable, about 12-18 minutes.
  • Remove from heat and whisk in cheddar cheese, parmesan cheese, minced garlic and butter. Continue whisking until both the cheeses and butter are melted and well combined.
  • Next, while vigorously whisking, add milk and eggs and continue to whisk quickly so the eggs won't scramble.
  • Pour grits into a large greased 4 quart casserole dish then sprinkle parmesan cheese on top and bake at 325 for 60-70 minutes or until grits just shake slightly. You can also broil for a couple of seconds to make a gorgeous brown color on top.
  • Sprinkle with chopped parsley and serve.

1 teaspoon unsalted butter
1 onion, minced
1 cup heavy cream
1/2 teaspoon hot sauce
1/2 teaspoon salt
1 1/8 cups old-fashioned grits
2 cups shredded extra-sharp cheddar cheese
3 large eggs, lightly beaten

Steps:

  • Adjust an oven rack to the lower-middle position and preheat oven to 350°.
  • Grease a 9 x 9 inch baking dish with 1 teaspoon butter.
  • Heat the remaining 2 tbs butter in a large saucepan over medium heat until the foam begins to subside.
  • Add the onion and cook until softened but not browned, about 4 minutes.
  • Add 3 cups water, the cream, hot sauce, and salt and bring to a boil.
  • Whisk in the grits and decrease heat to low.
  • Cook, stirring frequently, until the grits are thick and creamy, about 15 minutes.
  • Off the heat, thoroughly stir in 1 1/2 cup cheese, the eggs, and pepper to taste.
  • Pour the mixture into the prepared baking dish, smooth the top with a rubber spatula, and place the grits in the oven.
  • Bake for 30 minutes.
  • Remove the dish from the oven, sprinkle the remaining 1/2 cup cheese evenly over the top, and return to the oven.
  • Continue baking until the top is browned, about 15 minutes.
  • Let rest for 5 minutes and serve.

1/2 cup butter
8 ounces sharp cheddar cheese
2 eggs
1 cup milk
3 tablespoons garlic powder
1 tablespoon paprika

Steps:

  • Cook grits according to package directions.
  • Stir in butter and cheddar cheese, cut into cubes.
  • Crack 2 eggs into measuring cup, and fill measuring cup up to the 1 cup line with milk (scant). Stir. Add generous amounts of garlic powder.
  • Add milk/egg mixture to grits/cheese/butter mixture. Stir well.
  • Pour prepared mixture into 8x8 (brownie size) pan.
  • Bake at 350 F for 60 minutes.
  • ENJOY! They taste even better the next day. Refrigerate leftovers.

1/2 cup shredded Cheddar

Steps:

  • In a saucepot over medium-high heat, add 3 cups water and a pinch of salt. Bring the water to a boil, and then stir in the grits and milk. Raise the heat to bring to a boil again, and then lower to a simmer and cook for about 4 minutes. When the grits begin to thicken but there is still plenty of moisture left, add the mozzarella and Cheddar along with a few grinds of pepper. Stir to melt the cheese, taste and season with salt, if needed. Serve warm.
