- Combine 1 diced mango, 1 diced red bell pepper, 1/3 cup chopped red onion, 2 tablespoons each fresh lime juice and finely chopped fresh cilantro, 1/2 teaspoon ground ancho chile and a pinch of cayenne pepper in a medium bowl; season to taste with salt. (The salsa can be covered and refrigerated for up to 4 hours.)
SPICY MANGO SALSA
This is the best mango salsa I have ever tasted! It's a refreshing, cool and spicy salsa that adds excitement to fish, poultry, pork or tortilla chips! You'll love it! If you're feeling adventurous, use fresh cilantro instead of basil--wonderful!

- In a large bowl, mix together the mangoes, peaches or nectarines, garlic, ginger and basil or cilantro.

Steps:
- Peel, seed and dice mango.
- Place 2 cups mango into a large bowl with garlic and red pepper. Reserve 1/2 cup of mango.
- Place reserved mango in blender and puree until smooth. Combine with diced mango, garlic, and red pepper.
- Heat olive oil in small sauté pan,
- Add red onions and cook until tender, about 2 to 3 minutes. (Red onions can be substituted with yellow onions.)
- Place on paper towel to absorb any excess oil.
- Combine with all remaining ingredients and add to bowl with mango. Mix well.
- Pour into a small sauté pan and heat for 1 to 2 minutes, until warmed.
- Remove from heat and stir in scallions and cilantro.
- Serve immediately over fish.
BONEFISH WARM MANGO SALSA
Steps:
- 1. Peel, seed and dice mango. 2. Place 2 cups of mango into a large bowl with garlic and red pepper- reserve ½ cup of mango. 3. Place reserved mango in blender and puree until smooth. Combine with diced mango, garlic, and red pepper. 4. Heat olive oil in small sauté pan - add red onions and cook until tender (about 2 to 3 minutes). HOT AND SWEET MANGO SALSA

- Using a food processor, process the tomatoes to a chunky puree, do not liquify.
- In a large skillet or frying pan, heat the oil and add the peppers and onions.
- Saute until the onion softens and is clear 5-10 minutes.
- Add the tomato puree and spices. Simmer for 20-30 minutes or until desired consistency.
- Serve warm with tortilla chips.

ABSOLUTE BEST MANGO SALSA
I absolutely adore fresh mango, and this salsa is the perfect way to make them shine! The result is very fresh, sweet and spicy, and chunky...similar to pico de gallo in texture. Make sure you use mangoes at their peak...if they are too ripe, your salsa will be mushy. I make this often for guests by serving with blue corn tortilla chips (the color is so much prettier than plain ol' tortilla chips!) or serve alongside mahi mahi or other grilled fish. I hope you enjoy it as much as I do!

Steps:
- Mix first six ingredients together in large bowl.
- Add jalapeno to taste (I usually use about 3/4 of a medium-sized jalapeno, which gives it quite a quick!).
- Refrigerate for at least 30 minutes to an hour to allow flavors to mellow.
- Immediately before serving, give salsa a quick stir. May be stored in a sealed container for several days.
