SWEET ROASTED ACORN SQUASH
Steps:
- Preheat oven to 450 degrees F.
- Assemble acorn squash on a baking sheet. Place 1 tablespoon of butter and brown sugar in each half. Add 1/4 teaspoon of nutmeg in each and season with salt. Bake until golden and tender, about 1 hour to 1 hour 15 minutes, basting flesh of squash several times.
- Twenty minutes before the squash is done, sprinkle edges with raw sugar. Serve squash warm.

- Heat oven to 450°F. Cut squash lengthwise in half; remove seeds. Cut crosswise into 1-inch slices. In 2 (15x10x1-inch) pans, place squash and onion wedges in single layer. Drizzle with 3 tablespoons of the oil. Sprinkle with salt and pepper. Roast uncovered 35 to 40 minutes or until squash is tender.
- In 1-quart saucepan, mix vinegar, brown sugar and pepper flakes with wire whisk. Heat to boiling over medium heat; cook 6 minutes or until reduced by half. Remove from heat; gradually add remaining 1/4 cup oil, stirring constantly with whisk.
- Pour vinegar mixture over squash and onions. Let stand 10 minutes. Transfer squash mixture to serving plate or bowl. Sprinkle with mint.

- Place squash halves in a microwave-safe dish. Microwave on high until tender, about 10 minutes. Let cool.
- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square casserole dish.
- Scrape squash into a bowl; discard skins. Beat squash with a mixer until smooth. Add sugar, butter, evaporated milk, eggs, and vanilla; mix well. Put in the prepared casserole.
- Bake in the preheated oven for 45 minutes.
- While the squash is baking, mix rice cereal, brown sugar, pecans, and melted butter for topping together in a bowl.

- Preheat oven to 375° and cut the sweet potatoes in half.
- Cut the butternut squash in half vertically and scrape out the seeds.
- Put the vegetables, cut side up, in a baking pan and bake, uncovered, until they are very soft, at least 1 1/2 hours.
- Scoop the potato and squash out of the skins, combine them, and mash until smooth.
- Put the orange juice, margarine, and cinnamon sticks in a small saucepan and heat, reducing until it is about 1/4 cup syrup.
- Discard cinnamon sticks and stir orange syrup into the mashed vegetables.

- Cut squash in half; discard seeds. Place squash cut side down in a greased 15x10x1-in. baking pan; add 1/2 in. of hot water. Bake, uncovered, at 350° for 35-40 minutes. - Preheat your oven to 400F and remove butter from fridge so it can get to room temperature. Wash and halve your acorn squash (removing the stem portion), digging out the seeds in the middle. Baste each of the insides with ghee or melted butter before placing on a large baking sheet (insides facing down).
- Bake for 40-45 minutes until completely tender. In the meantime, chop your pecans and walnuts (I kept some whole for a nice texture) and place in a small ziploc with cinnamon, flour and brown sugar. Set aside.
- Once the acorn squash is done, you can either leave the skin on, remove some or try your best to scrape out as much of the squash contents as possible. I tend to just leave the skin on, and eat it. You hardly notice it, it gives the squash an "earthy" flavor IMO, and it is edible when cooked. But that is up to you to decide. *Note - leaving the skin on will turn the squash a hint of a greenish color - this is normal.*
- Obviously you want to mash your acorn squash - however you'd like. I used a handheld blender, but a ricer or masher would work. If you're leaving the skin on, you might have to blend/chop that in some way.
