Soul Food Turnip Greens image

Soul food turnip greens! Cooked in a savory chicken broth with onions, garlic, smoked turkey, red pepper flakes and splash of hot sauce! So addictive and delicous with no bitterness!

1 tablespoon unsalted butter
1 cup yellow onions (diced)
1/2 cup red bell pepper (diced)
1 tablespoon garlic (minced)
2 ½ cups chicken broth
1 tablespoon hot sauce
1/4 teaspoon red pepper flakes
1 fully-cook smoked turkey leg (removed from bone and diced)
sea salt & cracked black pepper (add as needed )
2.5 pounds turnips greens (washed & cut)
1/2 teaspoon baking soda
liquid smoke (4-8 splashes)

Steps:

  • Melt butter in a large stock pot.
  • Add onions and red peppers.
  • Cook until tender and then add garlic.
  • Cook garlic until fragrant and golden.
  • Stir in chicken broth, hot sauce, red pepper flakes, and diced smoked turkey.
  • Taste broth and season with salt & black pepper. Broth should taste very well seasoned and delicious.
  • Let broth simmer for 10 minutes.
  • Add turnips greens to pot and allow them to cook down slightly.
  • Stir, cover and simmer for 1 hour (stirring occasionally)
  • Remove lid and taste to adjust seasonings again. (I usually add a bit more salt, black pepper and hot sauce)
  • Stir in baking soda and liquid smoke. (this will help further lessen the bitterness)
  • Cover and simmer for an additional 10- 20 minutes or until greens are tender to your liking.
  • Serve hot.

Turnip Greens
Hot Water
Mason Jars

Steps:

  • 1. Clean one or two bags of turnip greens over cold water, strain and put in a large boiler with hot water. 2. Start the boiling on the turnip greens for about 5 minutes then check to see if they are wilted down. 3. If so turn off boiler and clean two Mason jars and lids to get ready to bottle greens. 4. Start scooping equal amounts of turnip greens in each jar and dry rims, then put lid and caps on each one then tightening. 5. Then take the boiler to the sink and driain all water into a strainer, then rinse with cold water to stop the greens from cooking. 6. You will need two freezer bags, after the turnip greens go to room temperature scoop up equal amounts in each bags then take all air out then seal together. 7. The two Mason jars can store in the fridge for a couple of weeks to use and if you like to follow the canning instructions by putting (the jars in hot water and boil for five minutes to seal. Then removing them let go to room temperature, after check to see if sealed if so store in cool storage, if not put in fridge.) 8. Two freezer bags of turnip greens date a freeze until all gone.

COUNTRY TURNIP GREENS

8 ounces country ham, cubed (see Cook's Note)
1/3 cup apple cider vinegar
1 pound stemmed turnip greens (see Cook's Note)
Freshly cracked black pepper
4 cups low-sodium chicken stock (one 32-ounce carton)

Steps:

  • Put the ham in a large stockpot over medium heat. Cook until the ham is crispy and the fat is rendered, about 8 minutes. Pour in the apple cider vinegar and scrape the bottom of the pot with a wooden spoon to lift up any brown bits.
  • Meanwhile, rip the greens into large pieces to make it easier to fit all of them into the stockpot.
  • Add the greens to the pot and season generously with black pepper. Pour in the chicken stock and stir to combine. Bring the greens to a simmer and cover the pot. Reduce the heat to medium low and cook until the greens are tender and the liquid is reduced by half, about 45 minutes. Remove the lid and continue to cook, stirring occasionally, until the liquid is nearly gone, about 10 minutes more. Serve immediately.

Southern Turnip Greens image

Learn how to cook turnip greens just like they do in the South. Greens are slowly simmered with pork jowl, apple cider vinegar, salt and pepper for a tender, tasty soul food side dish.

4 large bunches of turnip or collard greens (washed)
1 (16 ounce package) Clifty Farm pork jowls, chopped ()
1/4 cup apple cider vinegar
1 teaspoon sugar
1 teaspoon salt
½ teaspoon pepper

Steps:

  • Remove the center stems from the greens. Discard the stems and coarsely chop the leaves.
  • Heat the pork jowls in a large stock pot over medium heat. Cook for 3-5 minutes to render off some of the grease, but so not drain the grease.
  • Add one quart (4 cups) of water to the pot. Bring the water to a boil, then reduce the heat to low, cover and simmer for 10 minutes.
  • Add the cider vinegar, sugar, salt and pepper to the pot. Bring the pot to a boil again.
  • Add the greens. You may need to work in batches, allowing the greens to wilt down to make room for more.
  • Reduce the heat to low. Cover the pot again, then cook for 1 -2 hours. The longer the greens cook, the more tender they will become.
  • Season the greens with salt and pepper if needed.

My family's way of "fixin'"greens. You can use any kind of green or a mix. So simple but so good. Serve with cornbread for soppin' up the pot liquor! Measurements are approximates.

4 bunches greens
1/3 cup cold bacon grease (3 big spoonfuls)
1/2 cup ham stock or 1/2 cup chicken broth
salt and pepper
2 pinches sugar

Steps:

  • Fill sink with cold water.
  • Put in greens, making sure they have room to float.
  • The greens will rise to the top, while the dirt will sink.
  • Let greens sit in water for about 20 minutes.
  • Scoop out greens being careful not to stir up the dirt on bottom.
  • If they still look dirty, change water and repeat process.
  • Finish the cleaning by rinsing under running water.
  • Tear greens into pieces, throwing away thick veins and stems.
  • In a large pot, heat the bacon grease over med-high.
  • Add the greens and toss well with bacon grease for a couple of minutes.
  • Add ham stock, salt and pepper and sugar and stir.
  • Cover and simmer gently until very tender (DO NOT BOIL).
  • As the greens cook, they will produce a lot of liquid that will cook down. Add water as needed to prevent burning, but only use what is necessary so your pot liquor won't be watered down.
  • Cook time will vary but usually about 3 hours The flavor of collards is much better if you can cook for about 6 hours.

3 tablespoons lard or shortening, divided
1 large onion, chopped
6 garlic cloves, minced
1-1/2 pounds smoked ham hocks
6 cups water
2 teaspoons seasoned salt
1 to 3 teaspoons crushed red pepper flakes
1/4 teaspoon sugar
1 large bunch collard greens (about 2 pounds), coarsely chopped
1-1/2 cups white wine

Steps:

  • In a 6-qt. stockpot, heat 1 tablespoon lard over medium heat. Add onion and garlic; cook and stir until tender. Add ham hocks, water, seasoned salt, pepper flakes, and sugar. Bring to a boil. Reduce heat; simmer, uncovered, until meat is tender, 55-60 minutes., Add collard greens, wine, and remaining 1 Tbsp. lard. Return to a boil. Reduce heat; simmer, uncovered, until greens are very tender, 55-60 minutes. Remove meat from bones; finely chop and return to pan. Discard bones. Serve with a slotted spoon.

4 quarts water
1/2 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon garlic powder
2 chicken bouillon cubes
1/4 teaspoon ground ginger
1 bunch turnip greens, with roots
4 tablespoons butter
1 teaspoon sugar (optional, may be used if greens are bitter)
1 cup all-purpose cornmeal
1/2 teaspoon salt
1 small onion, chopped
1 egg
2/3 cup liquid from cooked turnip

Steps:

  • Place smoked meat in water along with spices and bouillon. Cook over low heat for 1 1/2 hours. Strip turnip leaves free of the big stem that runs down the center of each leaf. Wash in a sink full of clean water. Drain and wash twice more, since greens can often be sandy. Peel and slice or quarter roots. Add greens to meat; cook for another 30 minutes, stirring often. Add roots and continue to cook for approximately 15 minutes, or until roots are tender. (Reserve 2/3 cup turnip liquid for the dumplings.) Add butter and sugar.
  • For dumplings: Mix cornmeal, salt, onion, and egg. Dipping by teaspoonfuls, gently roll batter in the palms of your hands into approximately 1-inch balls; drop into boiling turnip liquid Make sure each dumpling is completely covered in liquid by shaking the pot gently; do not stir. Boil for about 10 minutes.
