Ingredients

1 (29 ounce) can sweet potatoes
2 eggs, lightly beaten
1 cup packed brown sugar
1 cup milk
¼ cup melted butter
2 teaspoons lemon juice
¼ teaspoon ground ginger
¼ teaspoon ground cloves
½ teaspoon ground cinnamon
½ teaspoon salt

Steps:

Preheat an oven to 350 degrees F (175 degrees C). Grease a 1 1/2 quart baking dish.
Combine sweet potatoes and eggs in a medium bowl. Beat in the brown sugar, milk, butter, lemon juice, ginger, cloves, cinnamon, salt. Pour into prepared dish.
Bake in preheated oven until hot and golden brown on top, about 30 minutes.

This Vietnamese dessert is sweet, warming and a bit gooey ! Its very nice and simple, flavorful too. Got this recipe when I went on a cooking course in Hanoi and this was the dessert of the four dishes I made.

Ingredients

500 g sweet potatoes, washed, peeled and diced
1 cup sugar
4 -5 slices fresh gingerroot
4 cups water
arrow starch

Steps:

Bring the water to the boil, and put in the sweet potato.
When the water returns to the boil, add the ginger, and continue cooking until the potato is tender and cooked through.
Add sugar and a little arrow starch, and allow it to dissolve completely. Then remove from the heat. Serve hot.

2 cups water
1 cup sugar
2 tablespoons butter
1 teaspoon vanilla essence
2 tablespoons butter
1 beaten egg
1/2 cup milk
1/2 cup of chopped dates or 1/2 cup raisins
1 teaspoon ginger
1/4 cup sugar
1 1/2 teaspoons bicarbonate of soda
2 tablespoons jam
1 cup flour
salt

Steps:

Boil together the syrup ingredients for five minutes and pour into a greased dish. Keep warm while you prepare the mixture.
Mixture:.
Cream butter and sugar and add egg. Dissolve bicarb in milk and pour over dates and jam. Add to butter mixture and stir well. Sift the dry ingredients together and add to butter mixture. Stir well. Put the mixture in the warm syrup using a spoon and bake for 30 minutes at 180°C Serve with custard.
