This is a classic recipe for macaroni and cheese. The kids will love this!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Prepare the elbow macaroni according to package directions.
- Meanwhile, melt the butter in a small saucepan over medium high heat. Stir in the flour until a cream colored paste forms. Then pour in the milk and stir constantly until this comes to a hard boil, then stir for 1 more minute. Remove from heat and set aside.
- When the macaroni is cooked, spread 1/2 of it into the bottom of a lightly greased 9x13-inch baking dish. Then layer 1/2 of the grated onion, 1/2 of the salt and pepper and 1/2 of each of the cheeses. Repeat this one more time: macaroni, onion, salt and pepper and cheeses, and then pour the reserved white sauce over all. Top off with small pats of butter to taste.
- Cover and bake at 350 degrees F (175 degrees C) for 45 minutes.

- Combine cooked macaroni, butter, cheese, salt and pepper.

- To make the hard-boiled eggs: Add the eggs to a medium-sized saucepan. Cover with cold water and bring up to a boil over medium heat. Cover with a lid and turn off the heat. Let the eggs sit in the hot water for 14 minutes. Drain and cool under cold running water. Peel the eggs and chop. Reserve.
- While the eggs are cooking, bring a large pot of salted water to a boil over high heat and add the macaroni. Cook until al dente. Drain and rinse with cold water.
- In a large serving bowl, combine the eggs, ham steak, celery, shallots and lemon juice Add the macaroni and stir to combine.
- In a separate bowl, whisk together the mayonnaise, mustard, pickled relish, and salt and pepper, to taste. Add the dressing to the macaroni and toss to coat. Season with more salt and pepper, if needed. Cover and chill for 2 hours for the flavors to meld.

- Bring a large pot of salted water to a boil.
- Pour in elbow macaroni and cook until very tender.
- Drain completely but don't rinse.
- Stir a little mayonnaise into the macaroni to keep it from sticking.
- Cool completely.
- Combine mayonnaise, mustard, vinegar, salt, pepper, and sugar in a small bowl and mix well. Taste and adjust seasoning and sweetness.
- Put the cooled macaroni, celery, carrot, onion, peppers, and olives in a large bowl.
- Pour mayonnaise mixture over and stir gently to combine.
- Cover with plastic wrap and chill overnight if time permits.
- Add a little more dressing if necessary before serving
- Store in the refrigerator for up to 5 days - keep chilled if you are bringing it to a cookout or picnic.

I love Macaroni & Cheese and this is my all time favorite recipe from a newspaper food section a long time ago. It's quick, it's easy and it reheats the next day fabulously. This recipe gets requested more often then any other from my very fussy 12 year old niece so it's a real winner with kids too.

- Place water in a large microwave-safe bowl.
- Microwave, covered, at high for 10 minutes to bring to boil.
- Add the macaroni, stir and cover.
- Microwave 7 to 8 minutes at high.
- Stir, cover and let stand 3 minutes.
- Drain.
- Place half the cooked macaroni in a buttered 6-cup microwave-safe baking dish.
- Sprinkle with half the cheese, top with half the sour cream and dot with half the butter.
- Repeat with remaining ingredients.
- Sprinkle with paprika.
- Microwave, uncovered at high for 8 to 10 minutes.
- My notes: I cook macaroni on stove top instead of microwaving it.
- My microwave is so old it takes forever to boil water.
- I also will mix up the cheese sometimes using different cheddars but it's really great if you use some freshly grated pecorini cheese as well in the mix.

- Prepare the pasta according to package directions. Drain, reserving 1/4 cup pasta water.
- While the pasta is cooking, in a large sauce pan or deep skillet, add the bacon fat over medium heat.
- Add the diced and stewed tomatoes. Stir and bring to a boil.
- Reduce heat and simmer for 10 minutes.
- When the pasta is done, add the cooked noodles and stir to combine.
- Let the macaroni and tomatoes simmer for an additional few minutes to allow the flavors to mix.
- If the sauce is too thin you can add a little of the pasta water or a cornstarch slurry to thicken it.
- Remove and serve. Garnish with fresh parsley and grated Parmesan cheese if desired.

- Preheat oven to 350 degrees. Grease a 9x13 cooking dish lightly with butter or cooking spray. Mix together milk and eggs.
- Place 1/2 of cooked macaroni in the prepared dish.
- Top mac with approx. 1/3 of cheese.
- Pour 1/2 of egg mixture over cheese. Repeat steps 2 & 3 to make a second layer.
- Top with remaining cheese. Dot with slices of margarine.

GRANDMA'S OLD-FASHIONED YEAST ROLLS
This recipe is one of our family traditions. We don't know how old it is, but it is at least Depression Era (no milk, no eggs). It was handed down from my Grandma Pearl Nash. She never wrote down the recipe, always measured by memory and her hands. She developed breast cancer in the early 60's and shortly before she died. My Daddy asked her to measure out all the ingredients so the recipe would not be lost. He carried her into the kitchen, where she carefully placed the ingredients on newsprint paper. My mama (who my kids called Tutu) shifted the ingredients into measuring cups and spoons to record the amounts.

- Dissolve yeast in warm water in the bowl of a stand mixer fitted with the dough hook. Stir in sugar and salt until you see foam rising. Add 3 cups flour and 3/4 cup shortening; mix with the dough hook until the mixture is the consistency of a thick pancake batter.
- Fill a pot with hot (not boiling) water.
- Remove the mixer bowl and cover it with plastic wrap and a towel. Place the bowl over the pot of hot water, making sure the bottom does not touch the water. Let rise until doubled in size, 45 minutes to 1 hour.
- Place the bowl back on your stand mixer and gradually mix in remaining 4 cups flour until dough is smooth and elastic; you may need to add up to 1 additional cup.
- Heavily grease two 9x13-inch pans with shortening.
- Divide dough into 24 balls. Place 12 balls into each of the prepared pans; cover with plastic wrap and a towel. Let rise in a warm area until doubled in size, about 1 hour; balls will start out at about 1 1/2 inches in diameter but will rise and touch the sides of the pans.
- Preheat the oven to 375 degrees F (190 degrees C).
- Bake rolls in the preheated oven until golden brown on top, 25 to 30 minutes. Remove from the oven and brush melted butter over top.

- On a LOW heat to avoid burning the flour, start by melting the butter and when it begins to sizzle and bubble then you can add the FLOUR slowly, stirring constantly to avoid burning. Watch to make sure the FLOUR is becoming a light brown color, still continuing to stir constantly. This may take 5 minutes or more. If this is not done properly you will either have undercooked flour or you will burn it.
- Once the butter and flour has retched a light brown color, and your sauce has cooled for 5 minutes slowly add in your "COLD" milk and stir till combined. Next, turn down the burner to low heat and add in your thyme, paprika, nutmeg along with white pepper into the white sauce and whisk it all together for 2 minutes or until fragrant. Then your Worcestershire sauce, salt and continue stirring for 5 minutes.
- Time to add in your "Old Shredded Cheddar Cheese" a bit at a time while stirring it over a low heat until the cheese melts into the white sauce. Now add a tsp of your Dijon Mustard and let it sit to combine. Enjoy!
- Pour into a baking dish and sprinkle the panko bread crumbs over the top. Bake 350 f for 30 minutes. Enjoy!
