I was going to make my outstanding brownies(posted) for my friends birthday but didn't have enough cocoa, then i dug out my edmonds new zealand recipe book and found this, i mixed up the soda and the baking powder but it still turned out absolutely delicious. this was in the top 20 voted by new zealanders. mine turned out an odd shape but that is due to me just stuffing the baking paper in

Steps:
- pre-heat oven to 190 degrees Celsius.
- grease a 20cm round cake tin and line base with baking paper.
- melt butter and syrup in a small saucepan.
- pour melted ingredients into a small bowl.
- add egg and sugar, beat well.
- sift cocoa, flour and BAKING POWDER together.
- fold sifted ingredients and essence into egg mixture.
- dissolve baking soda in milk.
- fold into egg mixture.
- pour mixture into prepared pan and bake for 30 minutes or until cake springs back when lightly touched.
- leave in tin 5 minutes before turning out onto wire rack.
- when cold ice with chocolate icing.
- Chocolate Icing:.
- sift icing sugar and cocoa in a bowl, add butter, add sufficient water to mix to a spreadable consistency, flavour with essence.

- Preheat oven to 350°F. Butter two 8-by-2-inch round cake pans; dust with flour, tapping out excess. In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt. Whisk in eggs, buttermilk, water, vanilla, and oil.
- Divide batter evenly between prepared pans. Bake until tops spring back when lightly pressed, about 30 minutes. Transfer pans to a wire rack; let cool 15 minutes. Invert cakes onto rack, remove parchment, then turn top-side up (to prevent sticky tops from sticking to rack); let cool completely.
- Spread 1 1/2 cups frosting over top of one cooled cake layer. Top with remaining layer. Spread a thin coat (about 1 cup) of frosting over top and sides of cake to create a "crumb coat." Refrigerate about 20 minutes, then frost top and sides of cake with remaining frosting. (For a more refined look, trim domed top of cake flat before layering and frosting.)

- Preheat the oven to 325°F (170°C). Grease a round cake pan and line with parchment paper.
- Add the chocolate chips to a microwave-safe bowl and melt completely, about 1 minute.
- Separate the egg yolks from the whites. With an electric hand mixer, whisk the whites until soft peaks form.
- Add the egg yolks, one at a time, the bowl of melted chocolate and stir to combine.
- Using a rubber spatula, gently fold ⅓ of the whipped egg whites at a time into the chocolate mixture.
- Pour the batter into the prepared cake pan and smooth the top. Bake the cake for 30 minutes.
- Once the cake is cool to the touch, gently invert it onto a serving plate. Slice and dust with powdered sugar and/or serve with ice cream and fruit, if desired.

- Divide batter among prepared pans. Bake, rotating once, until tester inserted in center comes out clean, 35 to 45 minutes for 8-inch layers, depending on amount of batter.
- Let cakes cool in pans on a wire rack for 20 minutes, then remove from pans and cool completely, right side up on rack.
