Steps:

  • Heat & Cook: Heat oil in skillet and cook chicken thoroughly, 4 minutes; adding garlic during last 30 seconds. Remove from skillet; set aside.
  • Prepare Knorr: Empty package contents into same skillet and prepare rice according to package directions.
  • Stir & Sprinkle: Stir in cooked chicken, garlic and tomatoes. Sprinkle with mozzarella and basil.

4 chicken breasts, (or 2 large, split horizontally) or 2 diced chicken breasts
2 teaspoons garlic, (fresh or puréed)
1 teaspoon salt
½ teaspoon pepper
3 teaspoons italian seasoning
2 teaspoons olive oil
3 medium tomatoes, diced
¼ red onion, chopped
1 clove garlic, grated
salt, to taste
2 tablespoons olive oil
4 tablespoons fresh basil
½ cup balsamic vinegar
½ cup shredded parmesan cheese, for topping

Steps:

  • Combine chicken and marinade ingredients and set aside.
  • Combine bruschetta ingredients.
  • Place balsamic vinegar in a small saucepan and bring to a boil over high heat. Reduce heat to simmer for 8-10 minutes, until mixture has thickened and formed a glaze (be careful not to over-reduce).
  • Cook chicken in a large skillet over high heat about 5-6 minutes per side. Once cooked, top with bruschetta, a drizzle of balsamic glaze, and a sprinkle of Parmesan cheese.

½ teaspoon salt
¼ teaspoon pepper
2 tablespoons olive oil, divided
1 pint cherry or grape tomatoes
1 (15 ounce) can cannellini beans, rinsed and drained
4 cloves garlic, peeled and halved
4 ounces fresh mozzarella cheese, thinly sliced
1 teaspoon Balsamic vinegar
1 leaf Fresh basil leaves
1 slice Toasted slices French bread

Steps:

  • Heat oven to 375 degrees F.
  • In a greased 15x10x1-inch baking pan, place chicken breasts. Season chicken with the salt and pepper. Drizzle with 1 tablespoon of the olive oil. Bake 10 minutes.
  • Remove from oven and add the cherry tomatoes, cannellini beans, and garlic cloves. Drizzle with the remaining 1 tablespoon olive oil. Top chicken breasts with the sliced mozzarella.
