One-Pan Spicy Meatballs With Lentils and Fennel image

In this one-pan meal, you get spicy meatballs, savory lentils and sweet fennel that are all perked up with vinegar and parsley. For the speediest meatballs, use uncased bulk Italian sausage, which comes fully seasoned. When cooked at high heat and partly submerged in the chicken stock, the meatballs brown on top and stay moist on the inside - and the lentils soak up the flavorful pork juices. The roasted fennel provides sweetness and echoes the fennel seed in the meatballs, but feel free to use another vegetable that cooks at the same rate, like thinly sliced carrots.

1 fennel bulb, cored, cut into 1/2-inch wedges through the root, plus 1/4 cup fresh fennel fronds
2 teaspoons extra-virgin olive oil, plus more for drizzling
Kosher salt and black pepper
1 1/2 pounds bulk hot Italian sausage (or fresh hot Italian sausages, casings removed)
1 egg
4 cups chicken stock
2 cups brown lentils
4 garlic cloves, thinly sliced
1 fresh rosemary sprig
1 tablespoon sherry vinegar, white wine vinegar or apple cider vinegar
1/2 cup fresh parsley leaves, plus more for serving

Steps:

  • Heat the oven to 450 degrees. In a 9-by-13-inch baking pan or baking dish, gently toss the fennel wedges with the olive oil to coat and season with salt and pepper. Roast until golden brown underneath, about 10 minutes. (Fennel will not be tender at this point.)
  • Meanwhile, in a medium bowl, use your hands or a spoon to mix the sausage with the egg until combined. Roll the mixture into 12 (1 1/2-inch) meatballs.
  • Add the chicken stock, lentils, garlic and rosemary to the roasted fennel. Stir to combine, then season with 3/4 teaspoon salt. Place the meatballs in the lentil mixture, drizzle the meatballs with olive oil, then roast until the meatballs are browned on top and lentils are tender, 25 to 30 minutes.
  • Transfer the meatballs to a plate. Discard the rosemary sprig, then stir in the vinegar, parsley leaves and fennel fronds (reserve a few fronds for garnishing, if desired). Season to taste with salt and pepper. Spoon the lentils and any braising liquid onto shallow bowls and top with the meatballs. Garnish with additional parsley leaves and fennel fronds, if desired.

2 tablespoons olive oil, plus 1 tsp, divided
3 cloves garlic, minced
1 shallot, minced
1 ½ cups green lentil, cooked
1 egg
1 tablespoon tomato paste
¼ cup fresh italian parsley, chopped
⅓ cup grated parmesan cheese
1 tablespoon whole wheat breadcrumbs
1 ½ tablespoons italian seasoning
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 375˚F (190˚C).
  • Heat a large skillet over medium heat then add 1 tablespoon of olive oil, shallot and garlic and sauté for 2-3 minutes, or until slightly golden brown then remove from heat.
  • To a food processor, add the garlic and shallot, lentils, egg, 1 teaspoon of olive oil, tomato paste, parsley, Parmesan, bread crumbs, Italian seasonings, salt, and pepper and pulse, mixing until just combined.
  • Transfer the mixture to a medium-sized bowl.
  • Use a cookie dough scoop to scoop out balls of mixture then carefully form into balls.
  • Arrange on a parchment paper-lined baking sheet.
  • Bake for 10-15 minutes.
  • Remove meatballs from oven and allow to cool for 5-10 minutes.
  • Serve with spaghetti.

A lightly spiced & fruity North African inspired dish with a tasty vegetable accompaniment or company as the title says! Made with easily available ingredients & it is also very adaptable. This recipe is a complete meal, but you could if you wish, serve it alongside steamed rice or couscous. Flatbreads would also be ideal, especially for mopping up all the lentils & spicy juices.

2 lbs minced beef
1 garlic clove, peeled & crushed
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon cinnamon
1 large white onion, peeled & finely diced
1 egg, beaten
2 ounces flour
salt & pepper
2 tablespoons olive oil
1 tablespoon olive oil
1 garlic clove, peeled & crushed

4 ounces split red lentils or 4 ounces puy lentils
16 ounces chopped tomatoes
1 pint vegetable stock
1 cinnamon stick
8 ounces no-soak whole dried apricots
1 lb cherry tomatoes, on the vine
2 tablespoons olive oil
2 fennel bulbs, sliced, keep the fronds
2 white onions, peeled & quartered
4 carrots, peeled & cut into 1-inch chunks
2 ounces brown sugar
3 fluid ounces vegetable stock
1 orange, juice and zest of, grated
salt & pepper
fennel bulb, green fronds from
1 teaspoon fennel seed (optional)

Steps:

  • Heat oven to 180C/fan 160C/gas 4.
  • MEATBALLS:.
  • Mix the garlic, cumin, coriander and cinnamon, salt & pepper together.
  • Break up any lumps in the minced beef and add the spices, finely diced onion and the beaten egg.
  • Mix together well, using your hands.
  • Shape into balls the size of a walnut - you should get about 32 to 36 meatballs.
  • Roll them into the flour and heat up the olive oil in a large frying pan.
  • Fry them in batches - do not overcrowd the pan - fry until golden brown, are firm & keeping their shape.
  • Put the meatballs to one side.
  • LENTILS:.
  • Heat up the olive oil in the same frying pan as the meatballs were cooked inches.
  • Fry the garlic and onion over a low heat until translucent & golden but not brown.
  • Add the spices and then the lentils and stir them around to get a good coating of the oil.
  • Add the tinned tomatoes, vegetable stock, cinnamon stick & the dried apricots.
  • Give them all a good stir and cook over a low heat for about 2 minutes.
  • Pour the lentils into a large ovenproof dish and place the meatballs on top. Scatter the cherry tomatoes around the meatballs.(They look good if kept on the vine).
  • Cover and cook for about 1 hr, or until the sauce has thickened.
  • Take the cover off for the last 10-15 minutes and allow the meatballs & cherry tomatoes to brown.
  • Remove the cinnamon stick before serving.
  • Whilst the meatball & lentil bake is cooking, prepare and cook the vegetable accompaniment.
  • Take a large wok and heat up the olive oil.
  • Add the fennel bulb, onions & carrots and stir well.
  • Add the brown sugar, stir well & turn up the heat. Cook the vegetables until they are tinged brown on the edges and the sugar has completely dissolved.
  • Turn the heat down and add the vegetable stock, cover the wok and cook for about 30 minutes or until the vegetables are tender but still holding their shape.
  • Add the orange juice and mix well, cook without a lid for a further 5 minutes.
  • Pour into a serving dish & garnish with grated orange zest, fennel seeds and some of the green fronds from the fennel.
  • Serve alongside the meatball and lentil bake.
  • Garnish the meatball & lentil bake with some of the green fronds from the fennel bulbs.
  • Flatbreads, rice or couscous would also be good accompaniments, if needed, for this meal.

If you have never experienced a "flavor bomb" exploding in your mouth try this. Comes from Middle East. An all time favorite in my home - guests who have had it once ask if it's on the menu when they are invited again. Says it all I think.

750 g lean ground lamb
200 g bacon, rashers de-rinded and diced
2 tablespoons water
4 cloves garlic, crushed
3 tablespoons mint, finely chopped
2 tablespoons parsley, finely chopped
2 teaspoons paprika
1/2 teaspoon cayenne
1/2 teaspoon cumin
1/2 teaspoon coriander
1/2 teaspoon cinnamon
1 pinch oregano
1 pinch thyme
1 pinch clove
1 pinch cardamom
fresh ground black pepper
salt
2 tablespoons olive oil
1 onion, finely diced
1 carrot, finely diced
3 cloves garlic, peeled,left whole
1 1/2 cups lentils
2 cups canned diced tomatoes
6 cups chicken stock
5 sprigs parsley
1 sprig thyme
1 bay leaf
2 tablespoons olive oil, extra
3 tablespoons mint, finely chopped for garnish

Steps:

  • In a bowl, combine lamb, bacon, water, garlic, mint, parsley, spices and seasoning.
  • Mix well.
  • (This can also be done in a food processor but do not process the mixture to a puree, just process in short bursts to combine).
  • Divide the mixture into about 25-30 small meatballs- flatten a little to a disc shape.
  • Place on tray and refrigerate until ready to use.
  • To prepare the lentils, heat the olive oil in pan and add the onion, carrot and cloves of garlic and saute for 5 minutes until the onions have become transparent.
  • Add the lentils and stir to coat with the oil, about 2-3 minutes.
  • Add 1 cup tomatoes, chicken stock, seasoning and bouquet garni.
  • Bring to the boil and turn down to a simmer.
  • Cover and cook until the lentils are tender.
  • Discard the bouquet garni.
  • Heat extra olive oil in a pan and saute the meatballs in batches in a single layer.
  • Remove and add to the lentils.
  • Continue to simmer the meatballs and lentils for 15 minutes or until the meatballs are cooked through.
  • Add the remaining cup of tomatoes and cook a further 10 minutes.
  • Taste and adjust seasoning.
  • Serve in large soup plates and garnish with the mint.

Sausage and mash with a healthier twist - roll your bangers into patties and serve with parsley pulses

450g pack low-fat sausage
1 tsp fennel seed , crushed
1 tbsp olive oil
1 onion , finely chopped
2 medium carrots , finely chopped
1 fennel bulb , trimmed and finely sliced
2 garlic cloves , crushed
100ml full-bodied red wine
200g puy lentils
1 tbsp tomato purée
850ml hot chicken or beef stock
juice ½ lemon
handful parsley , chopped, to serve

Steps:

  • Squeeze the meat from the sausages into a large bowl. Add the fennel seeds and mix well with your hands. Shape the meat into 16 walnut-sized balls.
  • Heat 1 tsp of the oil in a large non-stick frying pan. Fry the meatballs for 5 mins, turning regularly, until golden but not completely cooked through. Remove to a plate.
  • Add the rest of the oil to the pan, tip in the onion, carrots and fennel, cover and let the veg sweat over a gentle heat for 10 mins until softened. Stir now and then.
  • Uncover the vegetables, turn up the heat and let them start to colour here and there. Stir in the garlic, sizzle for 1 min, then splash in the wine and let it reduce by half. Stir in the lentils, tomato purée and stock. Cover and simmer for 25 mins or until the lentils are almost tender. Add the sausageballs, plus a splash of water if the pan is looking a little dry. Cover and simmer for a further 10 mins until the meat is cooked through. Squeeze over the lemon juice, season to taste and scatter with parsley to serve.
