One Pot Cheesy Taco Pasta image

Make dinner easy tonight with this One Pot Cheesy Taco Pasta! It comes together in a single pot (even the pasta cooks right in the sauce) for super speedy cleanup.

½ tablespoon olive oil
1 pound ground beef
1 onion (chopped)
1 stalk celery (chopped)
1 tablespoon taco seasoning
3 cups chicken broth (or more, depending on your pasta (some kinds need more liquid, but only add more as it cooks and is too dry))
1 cup salsa
1 (12-oz) box small pasta shapes
1 red pepper (chopped)
½ cup sweetcorn
salt & pepper (to taste)
½ cup shredded Mexican blend cheese (or more to taste)

Steps:

  • Sauté vegetables: Heat oil in a large, deep skillet or large pot over medium heat. Add onion and celery and cook until softened but not browned, about 3-4 minutes.
  • Brown beef: Increase heat to medium-high and add the ground beef. Cook until browned, breaking up meat to crumble as it cooks. Stir in taco seasoning, then pour in chciken broth, scraping any browned bits off the bottom of the skillet.
  • Add remaining ingredients: Add salsa, pasta, red pepper, corn, salt and pepper to skillet and stir well. Bring to a boil.
  • Simmer: Reduce heat to a simmer, cover with a lid and cook until sauce has thickened and pasta is done (about 10-15 minutes, depending on your pasta). Uncover and stir every 2-3 minutes to keep pasta from sticking to bottom. Depending on thickness of your pasta, you may need to add up to ½ extra cup of broth during cooking if it's looking dry. Cook uncovered for final 2-3 minutes.
  • Finish: Once pasta is done, take skillet off the heat. Check for seasoning and add salt and pepper, if needed. Stir in cheese and let pasta sit for 1-2 minutes or until cheese has melted. Serve immediately.

Here's what you need: ground beef, tomato, whole kernel corn, tomato sauce, water, taco seasoning, salt, pepper, elbow macaroni, colby jack cheese

Number Of Ingredients 10

1 lb ground beef
1 can tomato, diced (15 oz - 425g)
1 can whole kernel corn, (15 oz - 425g)
1 can tomato sauce, (15 oz - 425g)
2 cups water
1 package taco seasoning
salt, to taste
pepper, to taste
2 cups elbow macaroni, uncooked
1 ½ cups colby jack cheese

Steps:

  • In a large quart pot over medium-high heat brown the ground beef. Drain fat and return beef to the pot.
  • Add taco seasoning, water, diced tomatoes, corn and tomato sauce. Bring to a boil.
  • Add uncooked macaroni and reduce heat to low. Cover and simmer for 10-15 minutes (until pasta is cooked through). Stir occasionally.
  • Remove from heat. Sprinkle cheese on top and cover.
  • Serve once cheese is melted!
  • Enjoy!

1 pound pasta noodles ((I liked shells for this recipe))
1 red pepper (, sliced)
1 yellow pepper (, sliced)
1 cup frozen corn
1 red onion (, sliced)
1 packet taco seasoning
2 10 ounce cans RO*TEL with Green Chilies ((do not strain))
4 1/2 cups water
1 TBS olive oil
1/2 tsp red pepper flakes
1 can black beans (, drained and rinsed (14 ounces))
juice from 1 lime
1 cup colby jack cheese (, shredded)
3 green onions (, chopped)

Steps:

  • In a large stock pot, add pasta, peppers, corn, red onion, taco seasoning, RO*TEL, olive oil, and red pepper flakes. Stir to combine, cover, and turn heat on high. Once boiling, reduce heat to medium/low (so it's simmering), stir, and cover. Cook for 12-16 minutes or until pasta is tender and most of the liquid is absorbed - stir throughout this cook time.
  • Add black beans, lime juice, and cheese; stir well to combine.
  • Top with green onions. Serve immediately and enjoy!

  • BEEF: Brown the ground beef in a large nonstick skillet. Transfer the beef to a plate and drain the fat. Add in the onion and garlic in the skillet. Stir until fragrant - about 30 seconds to a minute on medium-high heat. Add in the taco seasoning and stir for 30 more seconds.
  • OTHER INGREDIENTS: Add in one cup of water, salsa, and corn. Stir well and add in the uncooked pasta, taco sauce, and reserved cooked beef.
  • BOIL & SIMMER: Bring mixture to a boil and then lower to low-medium heat and cover the skillet with a lid. Let simmer for about 5-7 minutes and then add in the last cup of water and stir everything together again. Return lid and let simmer until pasta is tender, about another 5-7 minutes.
  • ADD TOPPINGS: Remove from heat and sprinkle with cheese. Stir into the pasta until melted. Top taco pasta with optional toppings of choice. We love avocado, sour cream, cherry tomatoes, and fresh cilantro or green onions. Serve immediately.
