3 tablespoons olive oil, divided
2-1/2 cups cubed eggplant (1/2 inch)
1 small onion, halved and thinly sliced
1/2 teaspoon salt
1/8 teaspoon pepper
1 garlic clove, minced
2 naan flatbreads
1/2 cup part-skim ricotta cheese
1 teaspoon dried oregano
1/2 cup roasted garlic tomato sauce
1/2 cup loosely packed basil leaves
1 cup shredded part-skim mozzarella cheese
2 tablespoons grated Parmesan cheese
Sliced fresh basil, optional

Steps:

  • Preheat oven to 400°. In a large skillet, heat 1 tablespoon oil over medium-high heat; saute eggplant and onion with salt and pepper until eggplant begins to soften, 4-5 minutes. Stir in garlic; remove from heat., Place naan on a baking sheet. Spread with ricotta cheese; sprinkle with oregano. Spread with tomato sauce. Top with eggplant mixture and whole basil leaves. Sprinkle with mozzarella and Parmesan cheeses; drizzle with remaining oil., Bake until crust is golden brown and cheese is melted, 12-15 minutes. If desired, top with sliced basil.

Eggplant makes a wonderful alternative to your ordinary pizza crust. I have tons of eggplant from my garden so I make these about once a week! Fun way to get your kids to eat their veggies. I suggest adding pepperoni, mushroom, and peppers.

2 eggs
1 cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon dried oregano
1 large eggplant, sliced into 1/2 inch rounds
¼ cup vegetable oil
1 (14 ounce) can pizza sauce
1 ½ cups shredded mozzarella cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Beat the eggs in a bowl. Mix the flour, salt, pepper, and oregano in a 1 gallon resealable plastic bag. Dip each eggplant slice in the egg, then drop the eggplant in the flour mixture one at a time, shaking the bag to coat the eggplant.
  • Heat the vegetable oil in a large, deep skillet over medium heat. Place the eggplant slices in the skillet to cook, turning occasionally, until evenly browned. Drain the eggplant slices on a paper towel-lined plate. Arrange the eggplant in one layer on a baking sheet. Spoon enough pizza sauce to cover each eggplant slice. Top each eggplant with mozzarella cheese.
  • Bake in the preheated oven until the mozzarella cheese is melted, 5 to 10 minutes.

6 1/3- to 1/2-inch-thick eggplant rounds (3 to 4 inches in diameter; from 1 large)
1 loaf ciabatta or pain rustique, cut horizontally in half, trimmed to 9-inch length
1 1/4 cups purchased fresh marinara sauce
2 ounces soft fresh goat cheese
1/3 cup chopped fresh basil plus 6 whole leaves (for garnish)
1 cup coarsely grated mozzarella cheese (about 4 ounces)

Steps:

  • Preheat oven to 400°F. Heat 2 tablespoons oil in large skillet over medium-high heat. Sprinkle eggplant with salt and pepper. Place in skillet. Cover. Cook until tender, turning, 10 minutes. Transfer to plate. Brush cut side of bottom half of bread with rest of oil. Cook in skillet, cut side down, until golden, 1 minute.
  • Place bread, cut side up, on baking sheet. Spread with 3/4 cup sauce. Crumble goat cheese over; sprinkle with chopped basil. Top with eggplant. Mound mozzarella on eggplant; spoon remaining sauce over.
  • Bake bread until topping is hot and crust is crisp, about 12 minutes. Cut into 6 pieces. Garnish with basil leaves

EASY EGGPLANT AND TOMATO PIZZA



Easy Eggplant and Tomato Pizza image

I would have never thought about putting eggplant on a pizza, but one day I had an extra one laying around and figured it wouldn't hurt to try! This is now a personal favorite. Great way to get your kids to eat some vegetables too.

¾ medium eggplant, peeled and cut into 1/2-inch cubes
2 tablespoons olive oil, divided
1 teaspoon garlic powder
1 teaspoon dried basil
1 medium tomato, chopped
1 (16 ounce) package refrigerated pizza dough
2 cups shredded mozzarella cheese

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Place eggplant in a baking pan. Add 1 tablespoon olive oil, garlic powder, and basil; toss to coat.
  • Broil for 3 to 5 minutes, watching closely. Remove from the oven and mix in tomato. Put back in the oven and broil until eggplant is soft and just a bit golden brown, 3 to 5 minutes; be careful it doesn't burn. Remove from the oven and preheat to 450 degrees F (230 degrees C).
  • Grease a pizza pan or cookie sheet with remaining olive oil. Spread pizza dough to fit, using more dough for thick crust and less for thin. Sprinkle 1 cup mozzarella cheese on top of the dough, then the eggplant-tomato mixture, and finally remaining mozzarella.
  • Bake in the preheated oven until cheese is melted and golden brown, 15 to 20 minutes.

This comes from Country Living and is a nice change from your regular pizzas that have a ton of sauce and it is super easy to make. The eggplant makes the flatbread nice and moist and the feta cheese adds some nice flavour. I usually make this when my boyfriend wants pizza on a vegetarian night. You can also make this on the stove top but it is better when grilled as the recipe calls for. I usually serve it with salad, either Greek or Caesar.

1 medium eggplant, sliced into 1/2 inch thick rounds and quartered
1/4 cup extra virgin olive oil
2 tablespoons extra virgin olive oil
1 teaspoon cumin seed, crushed
1/4 teaspoon salt
4 pieces flat bread
1 cup feta cheese, crumbled
1/2 cup kalamata olive, sliced
1 teaspoon ground pepper

Steps:

  • Heat grill to medium high heat and heat oven to 400 degrees.
  • Combine eggplant, 1/2 cup oil, cumin seeds and salt in a large bowl and toss to combine.
  • Grill eggplant until just cooked through - about 8 minutes. Remove from grill and set aside.
  • Brush both sides of flat bread with remaining oil. Grill flat bread for five minutes.
  • Turn the bread over, top with eggplant, olives, cheese and pepper and grill for 5 more minutes. Transfer pizzas to baking pan, bake for approximately 8 minutes and serve immediately.

Roasted eggplant meets garlicky sauteed chard and gooey provolone cheese in this irresistible pan pizza. Other combinations of roasted vegetables and greens would also be wonderful here -- plan to use about 1 cup of toppings for each pizza.

2 3/4 cups unbleached all-purpose flour, plus more for dusting
2 teaspoons kosher salt
1 teaspoon instant dry yeast
1/4 cup extra-virgin olive oil
2 tablespoons extra-virgin olive oil
Kosher salt
1/2 small onion, finely chopped
1 can (28 ounces) diced tomatoes
Kosher salt and freshly ground pepper
1 eggplant (about 12 ounces), stemmed and cut lengthwise into 1-inch-thick slices
Coarse salt
3 tablespoons extra-virgin olive oil
1 clove garlic, thinly sliced
1 bunch Swiss chard, stems removed, cut into 2-inch pieces
12 ounces provolone, thinly sliced
Fresh oregano leaves, for serving

Steps:

  • Dough:Stir together flour, salt, yeast, and 1 1/4 cups water in a large bowl until dough is very sticky. Cover with plastic wrap; let stand 12 to 18 hours at room temperature.
  • Sprinkle dough with flour. Divide in half. Divide oil between two 10-inch ovenproof nonstick skillets (preferably cast iron). Swirl to coat. Add dough to each skillet; turn to coat with oil. Gently flatten dough with your hand. Cover; let rise in a warm spot until doubled in bulk, about 2 hours.
  • Sauce:Meanwhile, heat oil in a medium pot over medium heat. Add pepper flakes and onion. Cook, stirring, until onion is tender, 6 to 8 minutes. Add tomatoes and juices. Bring to a boil, then reduce heat and simmer, stirring occasionally, until slightly reduced, about 20 minutes. Let cool slightly. Puree sauce in a blender, in batches (to avoid filling jar more than halfway), until smooth. Season with salt and pepper.
  • Toppings:Meanwhile, preheat oven to 400 degrees. Place eggplant in a colander; season with salt. Let stand 30 minutes.
  • Rinse eggplant, drain, and pat dry. Arrange on a baking sheet; brush with 2 tablespoons oil. Roast, turning once, until very tender, about 25 minutes. Let cool slightly, then cut into 1/2-inch pieces.
  • Heat remaining 1 tablespoon oil in a large skillet over medium heat. Add garlic; cook, stirring, until fragrant, 30 seconds. Add chard in batches with 1 to 2 tablespoons water. Cook, stirring, until just wilted, about 5 minutes. Season with salt. Let cool.
  • Preheat oven to 475 degrees with rack in lower third. For each pizza, press dough until it touches edge of skillet. Ladle 3/4 cup sauce over dough, leaving a 1/2-inch border. Top with 3 ounces cheese. Add 1/2 cup each chard and eggplant. Top with another 3 ounces cheese. Bake until crust is golden brown and cheese is melted, about 18 minutes. Sprinkle with oregano; serve.

1 pre-made flat bread or 1 thin crust pizza crust
2 boneless skinless chicken breasts
1/2-1 eggplant fruit
1 medium onion, sliced in rings
5 garlic cloves (minced)
1/3 cup feta cheese
1/3 cup mozzarella cheese
1/2 cup pizza sauce
1/2 teaspoon curry powder (optional)
1 teaspoon lemon juice (optional)
1 tablespoon extra virgin olive oil

Steps:

  • Grill or panfry chicken 'till done, adding curry powder & lemon juice.
  • Slice Eggplant in strips or squares, however you prefer.
  • Lightly greese cookie sheet & layer eggplant on, season lightly with salt.
  • Bake eggplant at 450 in oven for 10 mins, turning 1/2 way through so golden brown & soft on each side -- feel free to let cool while preparing the rest!
  • When chicken is done & cooled pull or cut into strips or chunks.
  • Preheat oven as directed for pizza crust.
  • Lightly drizzel olive oil all over crust.
  • Spoon & spread pizza sauce (I like very light sauce).
  • Add minced garlic all over crust.
  • Top with chicken pieces, roasted eggplant, & onions.
  • Sprinkle on mozzerella & feta cheese (I also like light cheese).
  • Bake in oven according to crust directions
  • Tis pizza was soooo good would be great meatless too!
  • Remember to enjoy a good beverage while cooking!

Unleavened flatbreads are popular throughout the Arabian Gulf. This version is schmeared with a charred eggplant spread, then topped with arugula salad, pickled red onion, and a citrusy, smoky tahini sauce.

1 small red onion, thinly sliced
2 tablespoons fresh lemon juice
2 tablespoon distilled white vinegar
Pinch of sugar
3 small eggplants (about 2 pounds)
Kosher salt
1/4 cup extra-virgin olive oil
2 cups unbleached all-purpose flour, plus more for dusting
1 teaspoon baking powder
2 teaspoons nigella seeds
1 cup plain whole-milk Greek yogurt
2 tablespoons ghee
2 cups baby arugula
1 cup fresh mint leaves
1/3 cup tahini
3 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
1 1/2 teaspoons paprika
1/2 teaspoon cayenne pepper
Kosher salt

Steps:

  • Make the pickled red onion: Combine onion, lemon juice, vinegar, and sugar in a small bowl. Refrigerate for at least 4 hours or up to overnight. Drain.
  • Make the flatbreads: Heat broiler with rack 6 inches from heating element. Pierce eggplants all over with a fork. Place on a rimmed baking sheet and broil, flipping once, until charred on both sides, 20 minutes. When cool enough to handle, cut open, then scrape out flesh and discard skin. (You should have about 1 1/2 cups.) Using a fork, mash eggplant, then season with salt and stir in 2 tablespoons oil. Set aside.
  • Whisk to combine flour, baking powder, nigella seeds, and 2 teaspoons salt in a medium bowl. Add yogurt and stir until mixture comes together and forms a dough. Knead dough in bowl until soft and sticky, about 1 minute. Cover bowl with plastic wrap and let rest 15 minutes. On a lightly floured surface, divide dough into 4 equal pieces. Roll each piece into an 11-by-4-inch oval, about 1/8 inch thick.
  • Heat a large cast-iron griddle or skillet over medium-high. Brush with 1 tablespoon ghee. Working with 1 oval of dough at a time, brush with ghee, then cook flatbread ghee-side down, turning once, until deep brown, about 2 minutes per side.
  • In a small bowl, toss arugula and mint with remaining 2 tablespoons oil; season with salt.
  • Make the tahina sauce: Mix tahini, lemon juice, oil, paprika, and cayenne in a small bowl until smooth; season with salt.
  • To serve, divide the eggplant mixture among the 4 flatbreads and spread evenly to cover. Top each with arugula mixture and pickled onion. Cut each flatbread crosswise into 8 triangles, drizzle with tahina sauce, and serve.
