CHEESY CHICKEN TACO PASTA

Chicken Taco Pasta is like mac and cheese blended with a flavorful chicken taco! All cooked in one pot for a simple weeknight dinner.

2 tablespoons olive oil
3/4 cup diced white onion (about half of one medium-sized onion)
1.5 pounds boneless, skinless chicken breasts (about 2 large) (sliced into 1-inch pieces)
2 tablespoons taco seasoning
16 ounces bowtie pasta (1 box)
3 cups low sodium chicken broth
1 cup half and half (or any combination of milk and cream)
2 cups shredded cheddar-jack cheese
2 limes
2-3 Roma tomatoes (seeded and diced)
Fresh minced parsley for garnish (or cilantro or green onion)

Steps:

  • Heat a large, deep skillet or saute pan (4-5 quart) over medium heat. Add olive oil and when hot, add diced onions. Stir and cook until soft and translucent.
  • Coat chicken with taco seasoning and add to the skillet. Cook for about 5-6 minutes, turning once.
  • Srit in pasta, chicken broth and half and half. Bring to a boil over medium heat, reduce heat to low, cover and simmer for 12-15 minutes or until pasta is tender. (stir once about halfway through to avoid pasta sticking to the bottom of the pan).
  • Stir in shredded cheddar cheese and juice from one lime.
  • Garnish with diced tomatoes, sliced green onions and serve with lime wedges.

1 cup shredded lettuce
1/2 cup chopped tomatoes
1/4 cup sliced black olives

Steps:

  • Cook and stir chicken in large skillet on medium heat 8 to 10 min. or until done.
  • Stir in water and seasoning mix; simmer on low heat 5 to 10 min. or until sauce is thickened.
  • Meanwhile, prepare Dinner as directed on package. Stir in chicken mixture; heat thoroughly. Top with remaining ingredients.

1 pound boneless skinless chicken breasts, cut into bite-sized pieces
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons olive oil
1 jalapeño pepper, diced
1 medium sweet onion, diced
1 cup frozen corn
1 packet taco seasoning
2 cups dry pasta, such as macaroni
2 cups salsa
1 cup milk
1 cup water
6 ounces Roth Canela or Jalapeño Havarti cheese, shredded
1 tablespoon chopped cilantro

Steps:

  • Place chicken in a bowl, and season with cumin, salt, and pepper. Add olive oil to a deep 12-inch skillet, and heat over medium. When the oil is hot, add the chicken to the pan and cook, stirring occasionally, for 6 minutes. Add jalapeño, onion, corn, and taco seasoning. Stir and continue cooking for 4 minutes, stirring occasionally. Add pasta, salsa, milk, and water to the pan, and stir well. Bring to a boil, reduce to a simmer, and cover for 12 minutes, stirring once halfway through cooking time. Turn off the heat and sprinkle Canela or Jalapeño Havarti cheese over pasta. Cover and let sit for 2 minutes to melt the cheese. Stir well, and top with cilantro before serving.

8 ounces mild Cheddar, shredded (about 3 cups)

2 tablespoons unsalted butter, cut into small pieces
1 teaspoon Dijon mustard
Large pinch cayenne pepper
Large pinch freshly grated nutmeg
Kosher salt

Steps:

  • Put the milk and macaroni in a medium saucepan. Bring the milk to a boil over medium heat, stirring frequently to keep the macaroni from clumping, then cook, stirring frequently, until the macaroni is tender and the milk has thickened to the consistency of heavy cream, 4 to 5 minutes. Remove the saucepan from the heat, add the Cheddar, mozzarella, cream cheese, butter, mustard, cayenne, nutmeg and 1 1/2 teaspoons salt, and stir until smooth, thick and creamy. Serve hot. 1 lb ground beef
1 small white onion, diced
1 tablespoon garlic, minced
2 tablespoons taco seasoning, divided
½ lb small macaroni, dry
1 cup water
2 cups beef stock
2 cups shredded white cheddar, yellow cheddar works as well
1 cup tomato, diced
green onion, diced, for garnish

Steps:

  • In a 4-quart chicken fryer, heat approximately 1 tablespoon olive oil over medium-high heat and cook the onions until they begin to soften.
  • Add garlic and stir for 30 seconds.
  • Add the ground beef and 1 tablespoon of taco seasoning. Using your spatula, break up the ground beef and stir until cooked. Drain the excess liquid from the pan.
  • Add water, beef stock, pasta, tomatoes, and 1 tablespoon of taco seasoning back to the pan. Stir to combine.
  • Cook over low heat for 15 minutes, stirring twice to keep the pasta from sticking to the bottom of the pan.
  • Increase heat to medium after 15 minutes, and stir pasta until most of the liquid is gone.
  • Turn off heat and add the shredded cheese. Stir until cheese is completely melted.
  • Top with green onions.
  • Enjoy!
