ONE-POT CHEESY CREAMED CORN



One-Pot Cheesy Creamed Corn image

Easy to make, tasty and creamiest corn that makes a perfect side dish.

Number Of Ingredients 9

3 14 oz Frozen Kernel Corn ** see notes (thawed and drained)
2 Tbsp Butter
8 ounces Cream Cheese (cubed)
1/2 Cup Milk
1/2 Cup Shredded Cheddar
3 Garlic Cloves Minced (or 1 Tbsp garlic powder)
3 Tbsp Chopped Chives *
1 Tsp Chili Flakes (optional)
Salt and fresh ground pepper, to taste

Steps:

  • Melt butter into a skillet over medium-high heat. Add in corn, garlic, salt, and pepper and saute for 4-5 minutes.
  • Add in cream cheese and milk, and mix until fully combined. Stir in shredded cheese and cook until all cheese melts and you get a thicker consistency. Then remove from heat.
  • Serve and garnish with chives and chili flakes. Enjoy!

1 oz cream cheese
1 Tbsp shredded cheddar cheese
1 Tbsp butter
1/8 cup whole milk
1 tsp sugar
1/8 teaspoon salt
1/8 teaspoon pepper
Fresh Parsley (for garnish, optional)

Steps:

  • In a medium sauce pan over medium heat, add the corn, cream cheese, shredded cheddar cheese, butter, milk, sugar, salt and pepper. Stir to combine. Click for a medium sauce pan.
  • Cook, stirring often, until warmed through, the cheese is melted, and corn is cooked, about 10 - 15 minutes.
  • Garnish with fresh parsley if desired.

Traditional creamed corn gets its luscious richness not from cream or milk, but from the milky juice of the corn kernels and cob. Here, frozen corn steps in during the off-season and holiday months. It's simmered until tender, partially pureed and then thickened with a slurry of flour and water. You'll be surprised at the velvety soft texture and we'll be surprised if this isn't your new go-to creamed corn recipe.

Number Of Ingredients 4

One 32-ounce bag frozen sweet corn, thawed
2 tablespoons all-purpose flour
Kosher salt
2 tablespoons unsalted butter

Steps:

  • Add the corn and 1 1/2 cups water to a large pot or Dutch oven and bring to a boil over high heat. Reduce to a simmer and cook over medium heat, stirring occasionally, until the corn is tender, about 15 minutes.
  • Add 2 cups of the corn and liquid to a blender or food processor and puree until smooth, about 2 minutes. Stir the pureed corn back into the pot and return to a simmer.
  • Meanwhile, whisk together the flour and 2/3 cup water in a small bowl. Stir the slurry into the contents of the pot and season with 1 teaspoon salt. Cook, stirring frequently, until thickened, about 5 minutes. Remove from the heat and stir in the butter and another 1 teaspoon salt.

1/4 cup Butter (Unsalted, Cut into small cubes)
1/3 cup Cream cheese (Full fat)
5 cups Corn (Fresh or frozen)
1 tbsp Granulated sugar
Salt (To taste)
Pepper (To taste)
1 tsp Italian seasoning (Optional)
1 tsp Garlic powder
1 tsp Onion powder
2 stalks Green onions (Thinly sliced, For topping)
1/4 cup Crumbled bacon (For topping, Omit if you want to keep it vegetarian)

Steps:

  • In a large nonstick pot, add milk, butter, cream cheese and cook over medium-high heat until cheese is partially melted.
  • Add corn, sugar, salt, pepper, Italian seasoning (optional), garlic powder, onion powder and mix until combined.
  • Cook for 5-10 minutes until mixture is thickened and corn is fully cooked.
  • Remove from heat and top off with green onions and crumbled bacon. Enjoy!

Steps:

  • Drain corn and pour into slow cooker. Add milk, sugar, and pepper. Stir until mixed.
  • Without stirring- place the thinly sliced butter and cubed cream cheese on top.
  • Cover and cook on high for 2-3 hours.
  • Stir until butter and cream cheese are mixed in. Cover again for 15 minutes.
  • Garnish with thyme and serve.
