I haven't tried this recipe, but it looks delicious and I cant wait to try it. I found it on the tasteofhome.com website.

1/2 cup all-purpose flour
1/2 cup egg substitute
4 boneless skinless chicken breast halves (1 pound)
1/4 cup grated parmesan cheese
1/4 cup dry breadcrumbs
1 tablespoon butter, melted
2 large tomatoes, seeded and chopped
3 tablespoons minced fresh basil
2 garlic cloves, minced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place flour and eggs in separate shallow bowls. Dip chicken in flour, then in eggs; place in a greased 13-in. x 9-in. x 2-in. baking dish. Combine the Parmesan cheese, bread crumbs and butter; sprinkle over chicken. Loosely cover baking dish with foil. Bake at 375° for 20 minutes. Uncover; bake 5-10 minutes longer or until top is browned.
  • Meanwhile, in a bowl, combine the remaining ingredients. Spoon over the chicken. Return to the oven for 3-5 minutes or until tomato mixture is heated through. Yield: 4 servings.

After making fresh batch of bruschetta one day, I decided to use it on chicken instead of on toasted baguette. This has become one of my family's favorite meals. It is sweet, tangy and salty all at once.

1 lb chicken breast, boneless and skinless cut into serving pieces and pounded 1/2-inch thick
1 large egg, lightly beaten
1/2 cup breadcrumbs
3 tablespoons vegetable oil
3 tablespoons olive oil
2 teaspoons balsamic vinegar
2 tablespoons fresh basil, chopped
1/8 teaspoon garlic powder
1/8 teaspoon onion salt
1 large tomatoes, chopped
salt, to taste
pepper, to taste
mozzarella cheese, shredded for topping

Steps:

  • In a medium bowl, whisk together the olive oil and balsamic vinegar. Stir in the basil, garlic powder, onion salt and tomato. Season with pepper to taste. Allow to sit for at least 15 minutes, stirring occasionally.
  • Meanwhile, heat the vegetable oil over medium heat. Season the chicken with salt and pepper. Dip the chicken into egg, shake off the excess and then press into the breadcrumb mixture to coat.
  • Heat the vegetable oil over medium heat in a large skillet. Place the chicken in the skillet and cook for 5 to 7 minutes on each side, until chicken is no longer pink in the center and it has a golden brown color. Reduce heat to low.
  • Spoon the bruschetta over the chicken. Top with mozzarella cheese. Cover the chicken just long enough for the cheese to melt.
  • Enjoy!

1/2 cup flour
2 eggs, slightly beaten
4 boneless skinless chicken breasts
1/4 cup grated parmesan cheese
1/4 cup dry breadcrumbs
1 tablespoon butter or 1 tablespoon margarine, melted
2 large tomatoes, chopped & seeded
1 tablespoon olive oil
2 garlic cloves, minced
3 tablespoons minced fresh basil, set aside a few whole leaves as garnish (coriander or cilantro can also be used for a different taste)
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place flour and lighlty beaten eggs in separate containers that are large enough to accommodate each chicken breast.
  • Dip chicken in flour then in egg and place in greased 9x13 pan.
  • Combine the cheese, breadcrumbs & butter and sprinkle over chicken.
  • Loosely cover dish with foil & bake at 375 for 20 minutes.
  • Meanwhile combine remaining ingredients.
  • Uncover the chicken and bake an additional 5-10 minutes longer until top is browned.
  • Spoon tomato mixture over chicken, return to oven for 3-5 minutes or until just heated through.
  • Plate each breast and garnish with 2 or 3 whole basil leaves.
