2 1/2 cups milk
1 tablespoon coffee beans, roughly crushed
3 onions, minced
2 tablespoons butter
2 tablespoons flour
salt and pepper
3/4 cup milk
1/4 teaspoon sesame oil, grilled

Steps:

  • Soup: In a casserole, bring milk to boil. Remove casserole from the heat. Add coffee. Cover and let infuse 10 minutes. Line a strainer of 2 thickness cheesecloth. Strain the milk. Set aside.
  • In a casserole, brown onions at low heat in butter until caramelized. Onions must caramelized slowly and be near the consistency of a puree. Sprinkle with flour. Stir well. Add milk and bring to boil.
  • In blender, reduce in a creamy puree. Add salt and pepper. Set aside and keep warm.
  • Froth milk: In a little casserole, bring milk and sesame oil to boil. Remove from heat. With a hand mixer, froth the milk.
  • Pour the onion cream in espresso cups. Garnish with froth milk. Add pepper.

6 cups thinly sliced onions (about 4 large)
1/4 teaspoon salt
1 tablespoon cider vinegar
2 tablespoons brown sugar

Steps:

  • Heat oil in a large skillet over medium heat until hot. Add onions and sprinkle with salt. Cook and stir for 15 minutes or until moisture from onions has evaporated and onions are completely wilted., Reduce heat to medium-low. Sprinkle vinegar over onions. Cook and stir for 20 minutes or until lightly golden. Stir in brown sugar; cook and stir for 15-20 minutes longer or until onions are a caramel brown color. , If onions begin to stick to skillet, add water, 1 tablespoon at a time, until onions no longer stick to skillet.

2 tbsp vegetable oil
4 medium or 3 large onions, halved and sliced as thinly as possible
1 1/2 tsp kosher salt
1 tsp freshly ground black pepper
2 tsp finely chopped fresh thyme

Steps:

  • In a large skillet, heat the vegetable oil over medium heat. Add the onions and cook, tossing and stirring occasionally, for 15 to 20 minutes, or until softened. Reduce the heat to low and continue cooking, stirring occasionally, for another 50 to 60 minutes, or until the onions are completely soft and caramelized. They will look dark brown and mushy. Remove from the heat and add the salt, pepper, and thyme and mix well to combine. The onions will keep in an airtight container in the fridge for up to 1 week.

  • In a large skillet, cook the onions, brown sugar, wine, salt and pepper in butter over medium-low heat for 30-40 minutes or until onions are caramelized, stirring frequently., On a greased baking sheet, roll out pizza crust into a 13-in. x 10-in. rectangle.
