Steps:

  • Mix egg, oil, and milk on low speed of mixer for 1 minute.
  • Add dry ingredients and mix until smooth.
  • Coat onions in flour.
  • Dip in batter.
  • When one side is golden turn to the other side.
  • Fry in hot oil 375* until desired shade of brown.

1 large onion, cut into 1/4-inch slices
1 ¼ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup milk, or as needed
¾ cup dry bread crumbs
seasoned salt to taste
1 quart oil for frying, or as needed

Steps:

  • Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
  • Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
  • Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
  • Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

1 Vidalia onion, sliced crosswise into thin rings
1 1/4 cups all-purpose flour (spooned and leveled)
1/2 cup cornstarch
1 1/2 teaspoons baking powder
1 teaspoon coarse salt
1 can (12 ounces) seltzer or other carbonated water
6 cups vegetable oil
Coarse salt
1/2 cup fresh parsley leaves, washed and dried very well

Steps:

  • Line a baking sheet with paper towels; set aside. Place onion rings in a large bowl of ice water for 10 minutes; drain and pat dry. In a large bowl, whisk together flour, cornstarch, baking powder, salt, and seltzer.
  • In a heavy 5-quart pot or Dutch oven, heat oil over high until a deep-fry thermometer registers 375 degrees. Working in 7 to 8 batches, place onions in batter; using your fingers, lift out, letting excess drip off. Carefully place in oil, making sure not to overcrowd pot; cook until golden brown, 2 to 3 minutes.
  • Transfer rings to prepared baking sheet, and season with salt. Keep warm in a 250-degree oven. Return oil to 375 degrees before starting next batch.
  • Once all the onion rings are done, place on a platter. Very carefully place parsley in pot (oil will spatter), and fry until crisp, 10 seconds; remove, using a spider or slotted spoon, and season with salt. Sprinkle onions with parsley.

2 large Spanish onions, sliced into 1/2-inch-thick pieces
Whole milk, as needed
3 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons fine salt, plus more for sprinkling
2 teaspoons chili powder (optional)
1 teaspoon ground cumin (optional)
2 lager-style beers (12-ounces each)
Vegetable oil for deep frying

Steps:

  • Put the onions in a large bowl and cover with milk. Let soak for 30 minutes.
  • Meanwhile, using a fine-sieve over a large bowl, sift together the flour, baking powder, 2 teaspoons salt, chili powder, and cumin, if using. Stir in the beer until a smooth batter is formed. Set aside.
  • Drain the onions and transfer to a paper towel-lined baking sheet. Blot the onions with paper towels until dry.
  • In a large, wide heavy-bottomed pot, pour in the oil to a depth of about 2 inches. Place over medium heat and heat to 400 degrees F. (The oil must be heated to 400 degrees F. since the temperature drops oil to about 375 degrees F. when the onions are added.)
  • Working in batches, transfer about 8 to 10 of the onions to the batter and mix to coat well. Using tongs, pull several of the onions out of the batter, and let any excess batter fall back into the bowl. Carefully add to the oil and fry, flipping once, until golden brown and crispy, about 3 1/2 minutes per batch. Using the tongs, transfer to a dry paper towel-lined baking sheet to drain. 2 cup(s) panko bread crumbs
1 tablespoon(s) mrs. dash southwest chipolte seasoning
2 teaspoon(s) sea salt
- water
- flour
- canola oil for frying

Steps:

  • Peel and slice onion into rings, don't slice too thin.
  • Mix together bisquick, panko, and seasonings. Mix in just enough water to make a "pancake" like batter.
  • Dip onion rings into batter, then flour, then batter again, fry till golden brown. NOTE: You might have to add more water to your batter if it thickens up on you.
