  • Cook eggs in medium nonstick skillet sprayed with cooking spray on medium heat 2 to 3 min. or until set, stirring frequently. Remove from heat.
  • Place bacon pieces on muffin halves.
  • Top with cheese, eggs and ketchup.

2 tablespoons extra-virgin olive oil
4 slices Canadian bacon (about 2 ounces), diced
1 small onion, chopped
1 1/2 cups grape or cherry tomatoes, halved
1 teaspoon chopped fresh thyme
3 cups frozen collard greens (about 12 ounces)
Kosher salt and freshly ground pepper
1 avocado, sliced
1 teaspoon hot sauce
4 large eggs
2 multigrain hoagie rolls, split
8 slices low-fat muenster cheese (about 4 ounces)

Steps:

  • Heat 2 teaspoons olive oil in a large nonstick skillet over medium-high heat. Add the Canadian bacon and cook, stirring occasionally, until it starts browning, about 2 minutes. Add the onion, half of the tomatoes, and the thyme; cook until the onion softens, about 5 minutes. Add the collards and season with 1/4 teaspoon salt and a few grinds of pepper; continue to cook, stirring occasionally, until the collards are tender, about 10 minutes.
  • Meanwhile, combine the remaining tomatoes, the avocado, hot sauce and 1 tablespoon olive oil in a medium bowl; season with salt and gently toss. Set aside.
  • Heat the remaining 1 teaspoon olive oil in a separate large nonstick skillet over medium-high heat. Crack the eggs into the skillet and cook until the whites are almost set, about 3 minutes. Cover and cook until the whites are set but the yolks are still slightly runny, about 2 more minutes; season with salt and pepper.
  • Meanwhile, toast the rolls. Top each half with 2 slices cheese, some collards and a fried egg. Serve with the avocado salad.

  • Cook bacon in medium nonstick skillet on medium heat until crisp. Remove bacon from skillet, reserving 4 tsp. drippings in skillet. Drain bacon on paper towels. Add eggs, 1 at a time, to drippings in skillet; cook 3 min. or until whites are firm and yolks are cooked to desired doneness.

16 slices thick sliced smoked bacon
1 medium yellow onion, sliced thin
1 cup red pepper jelly
1 tablespoon A.1. Original Sauce
1 teaspoon brown sugar
2 tablespoons coarsely ground walnuts
1/2 olive oil
1/2 cup rice flour
2 teaspoons black pepper
1 teaspoon fine kosher salt
1 cup large spinach leaves
4 eggs
4 brioche rolls, split
1 roma tomato, diced

Steps:

  • Fry bacon until crisp in a medium size non-stick pan over medium-high heat. Remove the bacon to paper towels. Remove all but 1 tablespoon of bacon grease. Add the onions to the remaining bacon grease and cook until soft and brown, approximately 10 minutes. Add the jelly, A.1., and brown sugar and cook for 12 - 15 minutes, stirring occasionally until sauce begins to thicken like jam. Stir in the walnuts and set aside.
  • Add the oil to a small saucepan and heat until shimmering over high heat. Place rice flour, pepper, salt, and spinach leaves in a zip lock bag to coat. Lower heat to medium-high and drop in the spinach. Fry until lightly crisp, approximately 2 minutes. Remove to paper towels.
  • To a small nonstick skillet, add one egg at a time and cook sunny side up.
  • While eggs cook, heat buns according to package directions. Remove from oven and keep warm.
  • To plate: Spread jam onto both cut sides of the roll, add 4 slices bacon to one side, then the spinach and tomatoes. Top with the egg and serve open faced. Enjoy!
  • Note: extra jam can be stored in the refrigerator for up to 2 weeks.

Parmesan cheese shavings, for serving

Steps:

  • Cook the bacon in a heavy large skillet over medium-high heat until brown and crisp; transfer to paper towels to drain.
  • Wipe out skillet. Brush the cut sides of the bread with 1 tablespoon oil. Place the bread cut side down in the skillet. Cook over medium heat until golden, about 3 minutes. Place 1 bread square, golden side up, on each of 2 plates. Top each with half of the bacon, then 2 tomato slices.
  • Whisk 1 tablespoon of oil, the shallot, and vinegar in a medium bowl to blend. Season the dressing with salt and pepper. Add the arugula and toss to coat.
  • Heat the remaining 1 tablespoon oil in the same skillet over medium heat. Crack the eggs into the skillet. Sprinkle with salt and pepper. Cook until the whites are set and the yolks are cooked as desired. Top each bread stack with arugula, egg, and cheese.

One of my favorites. I have two rules for this sandwich. Always use Pepperidge Farm Original White Bread and make two per person as one is never enough.

2 slices pepperidge farm original white bread
2 slices American cheese
1 tomatoes, cut in thin slices
3 slices bacon

Steps:

  • Pre-heat broiler.
  • Place bread on a broiler safe pan. Top each slice of bread with a slice of cheese then a slice of tomato. Depending on how big your tomato slice is you may want to put on two but keep it a single layer of tomato. Cut each slice of bacon into 2 pieces. Then lay 3 of the pieces on each sandwich. Broil until bacon is crisp and cheese melted. Bread and cheese may get a little burnt. That makes it better!
  • Note: Originally I put raw bacon on the sandwich and cooked it all the way under the broiler. Now I cut the strips in half and partiality cook in micro-wave and then put on sandwich and broil to finish cooking.
