1 oz peanuts, divided
1 lb boneless, skinless chicken breasts
2 tbsp coconut aminos or soy sauce
1 tsp sesame oil, plus more for drizzling
1/2 tsp garlic powder
1/4 tsp red pepper flakes

Steps:

  • Using a food processor, finely chop half of the peanuts. Process until they're a coarse meal, about 30 seconds.
  • Add in the chicken cubes and pulse 8-10 times, until the mixture is slightly sticky and holds together; transfer to a bowl.
  • In a separate bowl, whisk together the coconut aminos (or soy sauce), 2 tbsp. water, sesame oil, garlic powder, ginger, cilantro leaves, scallions, and half of the peanuts.
  • Pour the sauce over the chicken mixture and toss to coat evenly. Marinate for 20 minutes.
  • Heat a large skillet over medium-high heat and add 1 tsp sesame oil. Add the chicken cubes and cook until browned and cooked through, about 4 minutes per side.
  • Sprinkle with the reserved chopped peanuts and serve over cauliflower rice, if desired.

This recipe has everything you need for a tasty week-night meal - chicken, potatoes, and green beans. It's delicious and dinner's on the table in just 30 minutes!

3 chicken breasts skinless (boneless)
1 lb baby red potatoes halved or quartered
1 cup cherry tomatoes
1 lemon sliced into rings
3 tsp garlic minced
1 tsp oregano
3 tbsp olive oil
salt and pepper to taste
3 sprigs fresh rosemary optional
3/4 lb green beans trimmed

Steps:

  • Preheat oven to 450°F. Set aside a large baking sheet.
  • Pat dry chicken breasts and rub with oil. Then place them on the baking sheet.
  • Add potatoes and tomatoes around the sheet pan and arrange them in one layer. Sprinkle minced garlic, oregano across the pan. Add salt and pepper to taste.
  • Toss to mix well. Place several lemon slices on top of chicken.
  • Bake for 18 to 20 minutes (add green beans during the last 10 minutes).
  • Broil for the last 5 minutes, if your chicken breasts look too pale.
  • Remove chicken breasts from the oven and let rest for 5 to 10 minutes before serving. Cover with aluminum foil while resting. Serve and enjoy!
