Number Of Ingredients 12

1 cup all-purpose flour
1 cup whole wheat flour
3/4 cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
1 cup fat-free plain Greek yogurt
1/2 cup orange juice
1/3 cup unsweetened applesauce
2 large egg whites
1 large egg
4 teaspoons grated orange zest
1 cup fresh blueberries or frozen unsweetened blueberries, unthawed

Steps:

  • Preheat oven to 350°. In a large bowl, whisk flours, sugar, baking powder and salt. In another bowl, whisk yogurt, orange juice, applesauce, egg whites, egg and orange zest until blended. Add to flour mixture; stir just until moistened. Fold in blueberries., Coat muffin cups with cooking spray; fill three-fourths full with batter. Bake 24-26 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pans to wire racks. Serve warm.

1 1/2 sticks (12 tablespoons) salted butter, softened
3/4 cup granulated sugar
1 large egg
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
3/4 cup buttermilk
Zest of 1 orange plus 2 tablespoons orange juice
1 cup fresh blueberries
1 cup confectioners' sugar

Steps:

  • Preheat the oven to 425 degrees F. Line 2 baking sheets with parchment.
  • Cream together the butter and granulated sugar in an electric mixer. Add the egg and beat well. Set aside 1 tablespoon of the flour for the blueberries, then add the remaining flour to the butter mixture and mix until combined.
  • In a separate bowl, dissolve the baking soda in the buttermilk. Add the buttermilk mixture to the batter along with the orange zest and mix well.
  • Toss the reserved 1 tablespoon flour with the blueberries in a bowl. Using a spatula, fold the blueberry mixture into the batter until combined.
  • Use a standard ice cream scoop (1/4 cup) to scoop out the dough onto the lined baking sheets, spacing the scoops 2 to 3 inches apart. Bake until lightly browned, about 11 minutes. Transfer the muffin tops to a rack set over a baking sheet to cool completely.
  • In a small bowl, combine the confectioners' sugar and orange juice and mix well. Drizzle the glaze over the cooled muffin tops and let set.

1 cup quick-cooking oats
1 cup orange juice
1 teaspoon grated orange zest
1 cup canola oil
3 large eggs, room temperature, beaten
3 cups all-purpose flour
1 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3 to 4 cups fresh blueberries
TOPPING:
1/2 cup finely chopped nuts
3 tablespoons sugar
1/2 teaspoon ground cinnamon

Steps:

  • Mix oats, orange juice and zest. Blend in oil and eggs; set aside. Stir together flour, sugar, baking powder, salt and baking soda. Add oat mixture; mix lightly. Fold in blueberries. Spoon batter into 24 paper-lined muffin tins, filling two-thirds full. Combine topping ingredients; sprinkle over batter. , Bake at 400° for 15-18 minutes or until lightly browned., Cool for 5 minutes before removing to a wire rack.

These cranberry-orange muffins are not overly sweet, and big on flavor. Lots of tart cranberries and sweet orange juice/zest kick the flavor up. Best when made with fresh cranberries, fresh orange juice, and lots of pulp! My family loves them without the glaze, but some of my sweet-toothed friends prefer it with, as the muffins are only slightly sweet on their own.

1 teaspoon baking powder
½ teaspoon baking soda

1 ⅓ cups fresh cranberries
¾ cup orange juice
½ cup white sugar
⅓ cup butter, melted, cooled
1 egg
1 orange, zested
1 cup powdered sugar
1 tablespoon orange juice, or more as needed
1 pinch grated orange zest

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners.
  • Mix together flour, baking powder, baking soda, and salt in a large bowl. Mix in cranberries.
  • Whisk together orange juice, sugar, melted butter, egg, and orange zest in a separate bowl. Add orange juice mixture to flour mixture, stirring just until moistened; do not overmix. Spoon into the prepared muffin cups.

250g plain flour
1 tsp baking powder
½ tsp bicarbonate of soda
50g caster sugar
pinch of salt
200ml buttermilk
1 egg
50ml butter, melted
juice of 1 orange
2 tsp orange zest
100g raspberries or chopped strawberries

Steps:

  • Preheat the oven to 200°C/Fan 180°C/Gas 6. Line a 12-hole muffin tray with paper cases. Put the plain flour in a bowl and add the baking powder, bicarb, sugar and a pinch of salt. Give it all a quick whisk to get rid of any lumps. Pour the buttermilk into a jug and whisk in the egg, melted butter, orange juice and zest. Add the contents of the jug to the bowl of dry ingredients and stir briskly. Use as few strokes as possible - overworking the batter can result in a rubbery texture. Put a scant dessertspoon of the mixture in each of the muffin cases, then add some berries and top with the remaining mixture. Bake the muffins in the oven for 15-20 minutes until springy to touch.

1 cup fresh or frozen blueberries
⅓ cup olive oil
1 large egg
1 medium orange, juiced and zested
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin or line with paper liners.
  • Combine wheat bran and oat bran in a large bowl. Stir in sour cream and milk; let stand for 10 minutes.
  • Meanwhile, combine brown sugar, both flours, protein powder, baking powder, baking soda, and salt in a separate bowl. Gently stir blueberries into the mixture until they are coated.
  • Stir olive oil, egg, orange juice and zest, and vanilla into the bran mixture. Add flour mixture and stir until just blended. Drop batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 15 to 20 minutes. Cool in the muffin tin for 5 minutes. Remove muffins to a wire rack and let cool completely, about 25 more minutes.

Steps:

  • Sift together the flour, sugar, orange zest, and baking powder into a bowl.
  • Add in blueberries; toss to combine.
  • In another bowl, whisk the milk, butter, egg, and salt together; add to flour mixture.
  • Stir quickly just until all ingredients are moistened.
  • Spoon batter into prepared muffin tin, dividing evenly.

1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup fresh blueberries
coarse decorator sugar, for topping

Steps:

  • Center a rack in the oven; preheat oven to 400°; butter or spray 12 regular-size muffin cups; place muffin pan on a baking sheet.
  • Add orange juice to a large glass measuring cup; pour in enough buttermilk to make 1 cup; whisk in the eggs, honey, and melted butter; set aside.
  • In a big bowl, rub the sugar and orange zest together with your fingertips until the sugar is moist and the fragrance of orange is strong.
  • Whisk in the flour, baking powder, baking soda, and salt.
  • Pour the liquid ingredients over the dry ingredients and, using a whisk or rubber spatula, gently but quickly stir to blend (don't worry about being thorough, the batter will be lumpy and bubbly).
