2 tablespoons oyster sauce or 2 teaspoons soy sauce
1 tablespoon dry sherry
1 tablespoon soy sauce
1 tablespoon sesame oil
1 teaspoon sugar
1 pound ground pork
1/2 medium onion, finely chopped
1 celery rib, finely chopped
1 medium carrot, finely chopped
2 tablespoons minced fresh gingerroot
3 garlic cloves, minced
40 wonton wrappers
Oil for frying
Plum sauce, optional

Steps:

  • In a small bowl, mix the first 5 ingredients. In a large skillet, cook pork over medium heat until no longer pink, 6-8 minutes; drain. Add vegetables, ginger and garlic; cook 2-3 minutes longer. Stir in sauce mixture; cook and stir until mixture is slightly thickened, 2-3 minutes. Cool slightly., Place about 1 tablespoon filling in center of each wonton wrapper. Moisten wrapper edges with water. Fold 1 corner diagonally over filling to form a triangle; press edges to seal., For shallow fry: In an electric skillet or deep skillet, heat 1 in. of oil to 375°. For deep fry: In an electric skillet or deep fryer, heat oil to 375°. Fry wontons in batches until golden brown, 2-3 minutes, turning once. Drain on paper towels. If desired, serve with plum sauce.

3 skinless, boneless chicken breasts
50 wonton wrappers
3 (12 fluid ounce) bottles tzatziki sauce
2 (8 ounce) packages feta cheese, crumbled
1 egg
1 tablespoon water
vegetable oil for frying

Steps:

  • Place chicken breasts in a pot; cover with 1 inch water. Bring to a boil. Reduce heat and simmer, covered, until chicken is no longer pink in the center, 10 to 14 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Drain chicken and cool until easily handled, 5 to 10 minutes. Cut into small cubes.
  • Place chicken cubes in a blender; blend until easily scooped with a tablespoon.
  • Lay wonton wrappers on a flat work surface. Brush 1 teaspoon tzatziki sauce over the center of each wrapper. Top with 1 teaspoon chicken and 1 teaspoon feta cheese. Fold over and seal edges.
  • Whisk egg and water together in a small bowl. Brush over top of wontons.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Fry wontons in batches until golden brown, about 2 minutes per batch. Drain on paper towels.

For ice cream
2 cups whole milk
1 cup heavy cream
1 cup granulated sugar
3 tablespoons chopped peeled fresh ginger (from a 4-inch piece)
7 large egg yolks
For wontons
1/3 cup heavy cream
1 teaspoon unsalted butter
3 ounces fine-quality semisweet or bittersweet chocolate, chopped
12 wonton wrappers
1 large egg, lightly beaten
5 cups vegetable oil
Garnish: confectioners sugar
Special Equipment
an ice cream maker; a deep-fat thermometer

Steps:

  • Make ice cream:
  • Bring milk, cream, and 1/2 cup sugar to a boil in a 3-quart heavy saucepan. Remove from heat, then stir in ginger and let steep, covered, 15 minutes. Meanwhile, whisk together yolks and remaining 1/2 cup sugar. Add milk mixture to yolk mixture in a slow stream, whisking, then transfer custard to saucepan. Cook over low heat, stirring constantly with a wooden spoon, until custard is thick enough to coat back of spoon and registers 175 to 180°F on an instant-read thermometer (do not let boil).
  • Pour custard through a fine-mesh sieve into a metal bowl, discarding solids, and chill, its surface covered with wax paper, until cold, about 1 1/2 hours. Freeze in ice cream maker, then transfer to an airtight container and put in freezer to harden, at least 4 hours.
  • Make wontons:
  • Bring cream and butter to a boil in a 1-quart saucepan. Pour hot cream over chocolate in a bowl and let stand 1 minute. Whisk ganache until smooth, then chill, covered, until firm, about 1 hour.
  • Lightly brush 1 side of each of 6 wonton wrappers with beaten egg, then put 1 1/2 teaspoons chocolate ganache in center of each. Fold filled wontons in half to form triangles, pressing gently around filling to eliminate any air bubbles and sealing edges with more egg. (If there are any pockets of air, wontons may burst when fried.) Make 6 more wontons in same manner. Freeze filled wontons on a wax-paper-lined tray until firm, about 20 minutes.
  • Heat oil in a 4-quart heavy saucepan over moderate heat until it registers 365°F on deep-fat thermometer. Fry wontons, 3 at a time, turning once, until golden brown, about 1 1/2 minutes total. Transfer with a slotted spoon to paper towels to drain. (Return oil to 365°F between batches.) Dust with confectioners sugar and serve wontons warm with ice cream.

I recently learned to make homemade won tons from my mother. They can be deep fried as an appetizer, but I prefer them in a rich, homemade chicken broth with baby bok choy or other leafy greens. Extras will freeze well for later enjoyment.

½ pound ground pork
¾ pound cooked shrimp, shelled, deveined and coarsely chopped
2 tablespoons minced green onions
1 tablespoon minced fresh ginger root
2 tablespoons chopped water chestnuts
1 teaspoon cornstarch
¼ teaspoon garlic salt
1 pinch white sugar
1 tablespoon dry sherry
1 teaspoon chili oil
1 tablespoon soy sauce
¼ teaspoon sesame oil
1 (16 ounce) package wonton skins
1 pinch garlic salt
1 egg white

Steps:

  • In a large skillet, cook the ground pork over medium heat until no longer pink.
  • In a large mixing bowl, combine the shrimp, ground pork, green onions, ginger, and water chestnuts. Mix in the cornstarch, garlic salt, and sugar. Mix in the dry sherry, chili oil, soy sauce, and sesame oil.
  • Place about one teaspoon of the mixture in the center of each won ton wrapper. Bring points of the wrapper together (in a triangular shape) and pinch the edges, sealing them closed with egg whites.
  • Meanwhile, bring a large pot of water to boil. Carefully place won tons into boiling water without crowding. (Work in batches if necessary.) When the wontons float to the surface, add a cup of cold water and allow the water to come to a boil again. Then remove from the boiling water.
