This tender orange cake bakes up deep golden brown and is a favorite of mine, my friends and my family. 1 cup butter, softened
2 cups sugar
2 tablespoons grated orange zest
6 large eggs, room temperature
1 teaspoon vanilla extract
3 cups all-purpose flour
3/4 cup 2% milk
3 teaspoons baking powder
1/8 teaspoon salt
GLAZE:
1/3 cup confectioners' sugar
1/4 cup butter, melted
1/4 cup orange juice
Chopped candied orange peel, additional powdered sugar

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Add eggs, one at a time, beating well after each addition. Beat in orange zest and vanilla. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition (batter may appear curdled)., Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 45-50 minutes., Poke holes in warm cake using a fork or wooden skewer. Mix confectioners' sugar, melted butter and orange juice; spoon slowly over cake. Cool 15 minutes before removing from pan to a wire rack; cool completely. Serve with candied orange peel and additional confectioners' sugar.

1 tablespoon fresh lime juice
2 tablespoons spicy tomato salsa (can be store bought)
1/2 cup mayonnaise (low-fat if desired)
2 tablespoons plain nonfat yogurt
6 orange roughy fillets (1/3 to 1/2 pound each)
2 tablespoons parsley, chopped (for garnish)

Steps:

  • Preheat the oven to broil.
  • In a small bowl, combine the glaze ingredients and mix.
  • Taste for seasoning.
  • Place the fillets on a broiler pan and spread half the glaze mixture on top.
  • Broil the fish about 3 inches from the heat for 3 minutes or until nicely browned.
  • Turn the fish over carefully, using a spatula, and spread with the remaining glaze mixture. Return to the broiler and broil about 3 minutes more until bubbly and well browned.
  • Be careful not to let the fish burn.
  • Using a large spatula, remo ve the fish from the broiler pan, taking care not to break the pieces.
  • Place the fish on serving dishes.
  • Garnish with parsley and serve immediately.
  • ADVANCE PREPARATION: Can be prepared up to 1 day ahead through step 1, covered and refrigerated.

The original recipe only called for sauteing the chicken in butter, so I added a few ingredients to customize it and make the chicken more flavorful. Goes great with steamed green beans and rice. Note: Can substitute orange marmalade or other jams for the apple-butter.

1 tablespoon butter
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons red wine vinegar
2 boneless skinless chicken breast halves
1/2 teaspoon cornstarch
1/4 teaspoon ground mustard
1/4 cup orange juice
2 tablespoons apple butter
1 tablespoon soy sauce

Steps:

  • Salt and pepper chicken breasts.
  • Melt butter in an 8-inch skillet or 3-qt. saucepan over medium heat. Cook chicken in butter about 5 minutes, then add red wine vinegar (vinegar will smell awful when reducing, but taste great in the end). Cook another 10 minutes, turning once, or until juice of chicken is no longer pink when center of thickest piece is cut.
  • While chicken is cooking, mix cornstarch and mustard in a small bowl. Stir in remaining ingredients.
  • Place chicken on serving plate; cover to keep warm.
  • To make the glaze, pour orange mixture into skillet. Heat to boiling over medium heat, stirring constantly. Boil about 1 minute, stirring constantly, until glaze is thickened. Pour over chicken.
