Ginger Cookies with Orange Glaze image

These are deliciously soft, chewy cookies. They are wonderful for Christmas plates and bake sales because they don't fall apart easily. Garnish with decorative pearls if desired.

2 ¼ cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon salt
1 cup packed brown sugar
¾ cup vegetable oil
¼ cup molasses
1 egg
¼ teaspoon salt
2 tablespoons butter-flavored shortening (such as Crisco®)
2 cups confectioners' sugar
1 ½ teaspoons orange extract
2 tablespoons milk
¼ teaspoon salt

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix flour, baking soda, ginger, cinnamon, cloves, and salt together in a large bowl.
  • Combine brown sugar, oil, molasses, egg, and 1/4 teaspoon salt in a large bowl; beat with an electric mixer until smooth. Pour over flour mixture; mix until a dough forms.
  • Roll dough into 1-inch balls and arrange on ungreased baking sheets.
  • Bake in the preheated oven until firm, 8 to 9 minutes. Let cool on the baking sheets for 5 minutes. Transfer to a wire rack to cool.
  • Place shortening in a large microwave-safe bowl. Heat in the microwave until melted, about 1 minute.
  • Stir confectioners' sugar and orange extract into the melted shortening. Mix in milk a little at a time until glaze runs smoothly off the end of a spoon. Add 1/4 teaspoon salt. Spoon glaze over cooled cookies.

2 pounds salmon fillet
1 cup orange juice
2 teaspoons balsamic vinegar
1 teaspoon finely chopped fresh ginger root
salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place orange juice in a small saucepan over medium low heat. Cook and stir 10 to 15 minutes, until reduced by about 1/2 and thickened. Remove from heat, and allow to cool.
  • Stir balsamic vinegar and ginger root into orange juice.
  • Line a medium baking dish with parchment paper. Place salmon fillet on paper, skin side down. Season with salt and pepper. Cover with 1/2 the orange juice mixture.
  • Bake salmon in the preheated oven 10 to 15 minutes. Brush with remaining marinade, and continue baking 10 to 15 minutes, until easily flaked with a fork.

1/4 cup soy sauce
2 tablespoons frozen orange juice concentrate
1 teaspoon ground ginger
1 teaspoon orange zest (optional)
2 tablespoons cornstarch
1 lb lean beef, cut into strips (sirloin, flank, top round)
1 tablespoon vegetable oil
2 cups broccoli florets (fresh or frozen)
1 onion, cut into thin strips
1 (14 1/2 ounce) can beef broth
hot cooked rice

Steps:

  • In large bowl, combine soy sauce, orange juice concentrate, cornstarch, ginger, and orange peel.
  • Stir to dissolve cornstarch.
  • Marinate beef strips in this mixture for at least 30 minutes.
  • Meanwhile, in large skillet (or wok), cook and stir broccoli and onion in oil until tender-crisp.
  • Remove vegetables from skillet.
  • Drain beef, reserving marinade.
  • In same skillet, over medium-high heat, cook and stir beef for 3 to 4 minutes until browned.
  • Remove from skillet.
  • Add reserved marinade and broth to skillet, letting boil 5 minutes.
  • Add beef and vegetables to sauce.
  • Heat through.
  • Serve over rice.

I'm taking traditional gingersnaps up a notch with my Orange Glazed Gingersnaps recipe! These cookies have a bright, citrusy flavor, and they're perfect for your cookie trays!

Gingersnaps
8 tablespoons butter (softened)
¾ cup sugar
2 eggs
1 teaspoon vanilla
½ cup molasses
1 tablespoon baking soda
2 1/2 teaspoons ginger
1 ½ teaspoons cinnamon
½ teaspoon cloves
4 cups flour
1 cup sugar
Zest of one orange
1 ½ cups powdered sugar
1 scant tablespoon orange juice

Steps:

  • 1. In the bowl of a stand mixer, cream together the butter and sugar. Add the eggs one at a time, mixing well after each addition. Pour in the vanilla and molasses and stir until combined.
  • 2. Sprinkle the baking soda, ginger, cinnamon and cloves over the top of the wet ingredients. Stir in.
  • 3. Add in the flour and mix until combined.
  • 4. Divide the dough into three portions and place each on an 18" long piece of plastic wrap or parchment paper. Roll the dough into logs that are approximately 1 ½" in diameter. Refrigerate until firm.
  • 5. Preheat the oven to 350F. Line 3 baking sheets with parchment paper or spray with cooking spray.
  • 6. Add the sugar and zest to a shallow bowl. Use your fingers to combine the two until the sugar turns orange.
  • 7. Cut the dough into 1/4" slices. Roll each slice in the orange sugar, then place 1" apart on prepared cookie sheets.
  • 8. Bake in preheated oven for 10 minutes in center of oven. If baking multiple sheets at a time, rotate halfway through. Remove to wire rack to cool.
  • 9. Stir together the glaze ingredients and drizzle over cookies when cool.

1 cup brown sugar
1 large egg
2 tablespoons plus 1 teaspoon molasses
1 tablespoon orange juice
1 tablespoon finely grated orange zest
2 3/4 to 3 cups flour
1 teaspoon baking soda
1/2 teaspoon ground cloves
2 teaspoons ground cinnamon
2 teaspoons ground ginger

Steps:

  • In a mixing bowl or standing mixer cream together the butter and sugar until light. Beat in 1 egg and mix in the molasses, orange juice, and zest. Sift together the dry ingredients and stir them into the wet ingredients to make a soft, smooth dough, adding more flour if dough is too sticky. Knead the dough three times on a lightly floured board.
  • Shape the dough into 3 logs, about 8-inches long, wrap in plastic wrap and refrigerate at least 1 hour or overnight.
  • Preheat oven to 350 degrees F. Slice logs into thin circles, less than 1/8-inch thick. Place on lightly greased baking sheets.
  • Bake cookies for about 8 to 10 minutes. Remove from oven and transfer cookies to a rack to cool.

2 teaspoons pumpkin pie spice
1 teaspoon ground ginger
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups confectioners' sugar
2 to 4 teaspoons water
Red coarse sugar, for decorating

Steps:

  • Microwave the coconut oil in a large microwave-safe bowl until melted, 1 to 2 minutes. Whisk in the granulated sugar and molasses. The mixture should be mostly smooth; if it?s not, return to the microwave for 30 to 45 seconds and whisk again to combine. Set aside to cool slightly.
  • Whisk the flour, pie spice, ginger, baking soda and salt in a medium bowl. Whisk the flour mixture into the coconut oil mixture until smooth, switching to a rubber spatula when the dough becomes too stiff to whisk (it will seem dry at first, but will come together).
  • Scrape the dough onto a large piece of plastic wrap and roll into an 8- to 9-inch-long log. Wrap in the plastic wrap. Press the sides with a ruler to square off the log. Refrigerate, re-pressing the squared sides after about 20 minutes, until the dough is firm, at least 1 hour or overnight.
  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Unwrap the dough and slice 1/4 inch thick. Arrange the slices about 1 inch apart on the prepared pans.
  • Bake, switching the pans halfway through, until the cookies are firm around the edges, 18 to 22 minutes. Let cool completely on the pans.
  • Make the glaze: Whisk the confectioners' sugar and 2 teaspoons water in a small bowl. Gradually stir in up to 2 more teaspoons water until the glaze is smooth and thick. Dip half of each cookie in the glaze; return to the baking sheet and sprinkle with coarse sugar. Let set, about 30 minutes.

1 spiral ham (bone in, butt or shank)
1/4 cup orange marmalade
1 tablespoon gingerroot, minced
2 teaspoons Dijon mustard
1/2 cup ginger ale
1/4 cup orange juice
2 tablespoons orange juice
2 teaspoons brown sugar
1 tablespoon cornstarch

Steps:

  • Prepare and heat the ham according to directions.
  • Meanwhile combine marmalade, ginger root and mustard thoroughly.
  • Remove meat 30 minutes, before the ham is done.
  • Raise oven heat to 425°F.
  • Brush with marmalade mixture.
  • Pour ginger ale and 1/4 orange juice into the roasting pan.
  • Bake uncovered for 30 minutes, basting the ham with the pan juices every 10 minutes.
  • Remove from pan, put on a board, cover lightly with foil and let rest for approx 15 minutes.
  • Pour cooking juices into a small sauce pan. Stir in brown sugar; heat and let simmer.
  • Combine the remaining orange juice with the cornstarch.
  • Add to the mix and let simmer until the sauce thickens, about 1-2 minutes.
  • Drizzle ham slices before serving.
