1 can (16 ounces) sliced beets
1/4 cup sugar
1-1/2 teaspoons cornstarch
2 tablespoons vinegar
2 tablespoons orange juice
1 tablespoon grated orange zest

Steps:

  • Drain beets, reserving 2 tablespoons juice; set beets and juice aside. In a saucepan, combine sugar and cornstarch. Add vinegar, orange juice and beet juice; bring to a boil. Reduce heat and simmer for 3-4 minutes or until thickened. Add beets and orange zest; heat through.

Steps:

  • Drain the beet liquid into a medium saucepan. To the liquid add vinegar, sugar, cornstarch and salt. Bring to a boil over medium-high heat. Reduce heat to medium; stir in beets and cook until heated through.

This is my Grandma's recipes for tangy, sweet Harvard Beets. I have tried other recipes, but none are as flavorful as hers.

¾ cup white sugar
4 teaspoons cornstarch
⅓ cup white vinegar
⅓ cup water
2 (15 ounce) cans sliced beets, drained
3 tablespoons butter
¼ teaspoon salt
¼ teaspoon pepper

Steps:

  • In a saucepan, combine the sugar, cornstarch, vinegar and water. Bring to a boil, and cook for 5 minute. Add the beets to the liquid, and simmer for 30 minutes over low heat. Stir in butter, salt and pepper and remove from the heat. Serve warm or chilled.

We grow beets in our own garden, and they're so good in this recipe. They have such a nice flavor and are very pretty when served.

Number Of Ingredients 6

3 cups sliced raw beets or 2 cans (16 ounces each) sliced beets
1/2 cup sugar
1 tablespoon all-purpose flour
1/2 cup white vinegar
1/2 teaspoon salt
2 tablespoons butter

Steps:

  • In a saucepan, place raw beets and enough water to cover. Cook until tender, 15-20 minutes. Drain, reserving 1/4 cup liquid. (If using canned beets, drain and reserve 1/4 cup juice.) , In another saucepan, combine sugar, flour, vinegar and reserved beet juice. Cook over low heat until thickened. Stir in beets, salt and butter. Simmer for 10 minutes.

1/4 cup sugar
1 tablespoon cornstarch
3/4 cup beet juice
1/4 cup cider vinegar
1/4 cup orange juice concentrate, thawed
16 ounces sliced beets, drained
1 teaspoon grated orange rind

Steps:

  • Combine sugar, cornstarch, salt and pepper into a 1 quart pan, stir the beet liquid, vinegar and orange concentrate into sugar mixture.cover and cook 5-7 minutes or mixture is glossy and slightly thickened, stirring twice.
  • Add sliced beets and heat till hot.
  • Sprinkle orange rind over to before serving.
  • Keeps well in the refrigerator.

1 1/4 pounds beets fresh, trimmed, leaving 2-inch tops
1 tablespoon cider vinegar
1 teaspoon salt
1 1/2 tablespoons cornstarch
1 tablespoon brown sugar
1/2 cup orange juice concentrate
1/ 4 cup lemon juice
3 tablespoons orange marmalade or 1 teaspoon grated orange rind
1 tablespoon butter

Steps:

  • In a large saucepan, place beets, vinegar and salt cover with water. Over high heat, bring to a boil. Reduce heat to medium-low, cover and simmer for 45 to 60 minutes or until beets are fork tender. Remove from heat and discard cooking liquid cool. Peel and slice beets. Return to saucepan.In a small saucepan, mix cornstarch and brown sugar. Stir in orange juice and lemon juice. Stirring over medium heat, bring to a boil and boil for 1 to 2 minutes or until thickened. Stir in orange marmalade or rind and butter pour over beets. Stir over medium heat until heated through.

  • Mix all ingredients except cornstarch and water in 3 1/2- to 4-quart slow cooker.
  • Cover and cook on low heat setting 11 to 12 hours or until beets are tender.
  • Mix cornstarch and water; stir into beets. Cook uncovered on high heat setting 5 to 10 minutes or until sauce has thickened.
