This healthy and easy cream cheese frosting recipe is ready in just five minutes and makes enough to frost the top and sides of one 9-by-13-inch sheet cake. We made this frosting healthy, with less saturated fat and calories than traditional versions, by using reduced-fat cream cheese instead of full-fat cream cheese, using Greek yogurt in place of butter and keeping sugar to a minimum.

1/4 cup sugar
2 1/4 teaspoons baking powder
3/4 teaspoon salt
2 large eggs
3/4 cup milk
2/3 cup orange marmalade
1/4 cup vegetable oil (or use melted butter or melted shortening)
1 teaspoon orange extract
1/2 cup orange marmalade
1/2 cup cream cheese, softened
2 cups confectioners' sugar (more if needed)
orange food coloring (optional)

Steps:

  • Set oven to 350°Fs (second-lowest rack).
  • Line 12 regular-size muffin tins with paper liners.
  • In a large bowl combine flour with sugar, baking powder and salt.
  • In another bowl beat eggs with milk, oil and orange extract until well combined.
  • Mix in marmalade until combined.
  • Using a wooden spoon stir the dry ingredients into the marmalade mixture until just combined.
  • Divide the mixture between each muffin tin.
  • Bake for about 18 minutes or until muffins test done.
  • Cool completely.
  • For the frosting; in a bowl beat the cream cheese with marmalade until fluffy; add in confectioners sugar and beat until smooth (adding in more if needed to achieve desired consistency).
  • Spread over cooled muffins.
  • Store in refrigerator.

1 teaspoon orange zest
2 tablespoons fresh orange juice
2 ½ cups confectioners' sugar
¾ cup chopped walnuts

Steps:

  • Beat cream cheese, butter or margarine, orange peel, and orange juice until creamy. Beat in confectioner's sugar until blended and smooth.
  • Spread about 1 1/2 teaspoons on each cooled cookie. Sprinkle with walnuts.
  • Let icing set 1 to 2 hours. Refrigerate in an airtight container with waxed paper between layers up to 1 week.

1/4 cup sugar
1 large egg
1/2 cup orange juice
1-3/4 cups biscuit/baking mix
1/4 cup chopped pecans
6 teaspoons orange marmalade

Steps:

  • In a bowl, beat cream cheese and sugar. Add the egg and juice. Beat well. Stir in the biscuit mix just until moistened. Fold in pecans. , Grease six Texas-size or jumbo muffin pans generously. Spoon 1/4 cup batter into each cup. Spoon 1 teaspoon marmalade into the center of each muffin. Top with remaining batter. , Bake at 400° for 20 minutes or until golden brown. Let stand for 5 minutes before removing to a wire rack.

2 cups sour cream
2 cups sugar
1/2 cup marmalade
2 1/2 tablespoons butter
1 1/2 teaspoons baking powder

  • Blend first 7 ingredients together well.
  • Add the 2 cups flour slowly to mix and stir well.
  • Prepare muffin tins using Pam or muffin liners.

1/4 cup orange marmalade
3 tablespoons cream cheese, softened
1 cup confectioners' sugar

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, beat the eggs, milk, marmalade and oil. Stir into dry ingredients just until moistened., Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack., In a small bowl, beat the marmalade and cream cheese until fluffy. Stir in confectioners' sugar until smooth. Spread over cooled muffins. Store in the refrigerator.

1/4 cup sugar
2 eggs
1/2 cup smucker orange marmalade
3/4 teaspoon salt
2 teaspoons baking powder
3/4 cup milk
4 tablespoons butter, melted
icing
1/3 cup smucker orange marmalade
1 tablespoon soft butter or 1 tablespoon margarine
2 cups sifted powdered sugar

Steps:

  • reheat oven to 400° F.
  • In medium bowl, combine flour, salt, sugar, and baking powder.
  • In a separate bowl beat eggs; add butter, marmalade, and milk.
  • Add all at once to the dry ingredients.
  • Stir quickly and lightly until just mixed.
  • Mixture will be lumpy.
  • Fill greased muffin tins 2/3 full.
  • Bake 20 to 25 minutes.
  • For icing, blend all ingredients in a small bowl until smooth.
  • Frost muffins when cool.
