Steps:
- Preheat oven to 350F. Prepare a 12-cup Bundt pan with butter and flour (or spray that has both). If you only have a 10-cup Bundt pan, remove 2 cups and make cupcakes out of that batter!
- Place the raisins and the chopped orange in a food processor and pulse until the mixture is finely ground. Pour the 1/4 cup hot water into the mixture and set aside.
- Combine the flour, baking soda, and salt in a large bowl and set aside. Beat the sugar and butter in a large bowl until light and fluffy.
- Add the eggs in one at a time, mixing well after each addition. Alternately, add the flour ingredients and the buttermilk to the sugar-butter mixture until smooth. Stir in the orange-raisin mixture and the nuts.
- Pour the batter into the prepared Bundt Pan. Note - if your pan is less than 12 cups, like the Harvest Bundt Pan I used, remove 2 cups of batter and bake as cupcakes!
- Bake for 45-50 minutes or until a toothpick comes out clean. Allow the cake to cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- Dust with confectioners' sugar prior to serving

- Heat the oven to 350 degrees F. Combine the orange and raisins in a food processor; pulse until the mixture is finely ground. Pour hot water over the mixture; set aside. Combine the flour, baking soda and salt in a medium bowl; set aside. Combine the sugar and butter in a large bowl; beat with an electric mixer until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Alternately add the flour mixture and buttermilk to the sugar-butter mixture, beating until smooth with each addition. Stir in the reserved orange-raisin mixture and the nuts. Pour batter into a greased and floured 12-cup Bundt pan. Bake until a toothpick inserted in the center comes out clean, 40-50 minutes. Let cake cool in pan 10 minutes. Invert it onto a wire rack; cool completely. Dust with confectioners' sugar.
WALNUT-ORANGE CAKE

- Preheat oven to 350°F. Spray 9-inch-diameter springform pan with nonstick olive oil spray. Place parchment paper round in bottom of pan and spray paper.
- Grind walnuts in processor until finely ground but not powdery. Combine ground walnuts, flour, and baking powder in medium bowl; set aside.
- Using electric mixer, beat eggs in large bowl until frothy, about 2 minutes. Gradually add sugar, beating until light, thick, and pale yellow, about 4 minutes. Gradually add walnut-flour mixture; then add orange juice, orange peel, and olive oil, beating just until blended. Transfer batter to prepared pan. Place pan on rimmed baking sheet, and bake cake until tester inserted into center comes out clean, about 1 hour. Cool cake completely in pan on rack.
- Release pan sides. Carefully invert cake onto platter and remove parchment paper. Sprinkle powdered sugar atop cake and serve.
CRANBERRY ORANGE CAKE

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 10-inch fluted tube pan (such as Bundt®) with baking spray.
- Combine flour, sugar, oil, eggs, orange juice, baking powder, vanilla extract, and salt in a bowl using an electric mixer until thoroughly incorporated. Stir in cranberries and orange zest. Pour into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.

I adore cakes with orange flavours and this cake is so moist and flavorful. You would be amazed how good it tastes. I found this recipe on net--I don't remember where I got this from, but I guess it's from allrecipes.com.

Steps:
- Sieve flour salt and baking powder together.
- In a separate bowl, mix chopped nuts and raisins. Coat them together with a tsp of flour to avoid them sinking to the bottom of the cake pan.
- In a large bowl, cream butter and sugar. Add eggs one at a time; beat for 1-2 minutes on a slow speed mixer.
- Stir in vanilla.
- Add the flour mixture to the butter mixture alternating with the orange juice.
- Mix well.
- Add nuts and raisins; mix with a wooden spoon.
- Pour in greased dish and bake at 175°c for about 60 minutes.
- Let cool well before serving
- (My cake usually cooks even before one hour and at times takes longer to brown, however keep checking and don't overcook or else it would loose its moistness).

- Beat butter at medium speed with an electric mixer until fluffy. Gradually add 2 cups sugar, beating well. Add eggs, one at a time, beating until blended after each addition.
