4 pounds medium leeks (white and light green portions only), thinly sliced (about 8 cups)
1 pound sliced fresh mushrooms
2 tablespoons olive oil
1/4 cup sherry or reduced-sodium chicken broth
1/2 cup reduced-sodium chicken broth
1 tablespoon balsamic vinegar
1 teaspoon orange juice
1/2 teaspoon grated orange zest
1/4 teaspoon salt
1/4 teaspoon minced fresh thyme or dash dried thyme
1/8 teaspoon pepper

Steps:

  • In a Dutch oven, cook leeks and mushrooms in oil in batches over medium heat until tender, stirring occasionally, 15-20 minutes. Return all to the pan. Add sherry, stirring to loosen browned bits from bottom of pan., Stir in the remaining ingredients; cook and stir until liquid is almost evaporated, 10-15 minutes.

1 cup onion, chopped
1 1/2 cups mushrooms, cleaned and sliced
2 cups leeks, cleaned,1/4 inch slice,white part and the start of the green only
1 teaspoon dry oregano
salt and pepper
vegetable oil cooking spray

Steps:

  • Spray a non stick skillet with oil.
  • Saute the onions until tender and starting to brown.
  • Add Mushrooms and continue cooking for apprx 3 minutes.
  • Add leeks, salt, pepper& oregano.
  • Saute a further 8 minutes (if you like your veggies very soft cook longer).

1 (4 to 5 pound) pork loin, trimmed and cleaned
10 cloves garlic, peeled
1 1/2 tablespoons Emeril's Rib Rub
2 1/4 teaspoons salt
1 3/4 teaspoons freshly ground black pepper
3/4 cup freshly squeezed orange juice
7 tablespoons olive oil
3/4 pound beets, scrubbed well, trimmed and cut into quarters
2 medium onions, peeled cut into quarters
3 large parsnips, peeled and cut in 1/2
3 large carrots, peeled and cut in 1/2
1 pound small red bliss potatoes, cut into quarters
1 1/2 tablespoons minced shallots
2 cups chicken stock or low-sodium chicken broth
1/4 teaspoon chopped fresh thyme leaves
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • With a small, sharp knife, make 12 (1 1/2-inch deep) slits around the outside of the pork loin. Cut 6 of the garlic cloves in half lengthwise and insert one half clove into each slit. Rub the pork with the Rib Rub, 1 teaspoon of the salt, and 3/4 teaspoon of the pepper. Place the loin in a zip-top plastic bag or glass dish and pour the orange juice and 3 tablespoons of the oil over the pork. Marinate in the refrigerator for 2 hours, turning occasionally.
  • Remove the pork from the marinade and pat dry. Transfer the marinade to a saucepan, bring to a boil, and reduce to 3 tablespoons, about 6 minutes. Set aside and reserve for the gravy.
  • Preheat the oven to 425 degrees F.
  • Combine the beets with 1 tablespoon of the olive oil, 1/4 teaspoon of salt, and 1/4 teaspoon of the pepper in a small bowl.
  • In a separate, large bowl, combine the onions, parsnips, carrots, potatoes, remaining 4 garlic cloves, and remaining 3 tablespoons olive oil and toss to combine. Season with the remaining 1 teaspoon salt and remaining 3/4 teaspoon pepper.
  • Arrange mixed vegetables and the beets in the bottom of a small roasting pan. Place the pork loin on top of the vegetables and roast for 20 minutes. Reduce the oven temperature to 325 degrees F and until an instant-read thermometer registers 145 degrees F, 1 hour to 1 hour and 5 minutes.
  • Transfer the pork to a cutting board to rest for 10 minutes. Tent the pork and the vegetables with aluminum foil to keep warm.
  • Add the reserved pan juices, shallot, chicken stock, and thyme to the pan with the reduced orange marinade. Bring mixture to a boil and cook until reduced by 1/3 in volume, about 10 minutes.
  • In a small bowl, whisk together the cornstarch and water. Add to the gravy mixture and bring to a boil. Let the sauce boil for 1 minute, whisking constantly. Remove from the heat and carefully pour into a gravy boat.
  • Carve the pork, arrange on a large platter, and surround with the root vegetables. Pass the gravy at the table.

30 g butter
1 freshly-grated orange, zest of
6 teaspoons orange juice
salt and black pepper, to taste
3 tablespoons flour
360 ml milk
2 tablespoons lemon juice

Steps:

  • Melt the butter in a large saucepan and fry the leeks for 2 minutes before adding the lemon juice and seasoning to taste.
  • Put the lid on and allow the mixture to sweat gently for about 5 minutes, or until tender.
  • Add the flour to the mixture and stir in thoroughly before adding the orange zest. Stir to combine, then gradually add the milk, stirring all the while.
  • Bring the mixture to a boil then reduce to a simmer, allowing it to cook for 5 minutes more. Add the lemon juice and serve hot.

2 tablespoons extra-virgin olive oil, plus more for serving
6 medium leeks, white and light green parts only, halved lengthwise
1 organic navel or juice orange (seeds removed), sliced crosswise 1/4-inch thick, plus 1 cup orange juice (from about 3 oranges)
3/4 cup low-sodium chicken stock
Coarse salt
3 sprigs fresh thyme

Steps:

  • Preheat oven to 375 degrees. Heat a very large ovenproof skillet with a lid over medium high. Add oil and swirl to coat pan. Add leeks in as close to a single layer as possible. Cook until beginning to brown, 4 to 5 minutes. Add orange juice and stock and season with 1 1/4 teaspoons of salt. Turn leeks over and place oranges and thyme on top. Bring liquid to a boil.
  • Cover and place in oven until leeks are tender, about 30 minutes. Remove from oven and turn oranges over, spooning some liquid over the top. Return to oven, uncovered, and cook until oranges and leeks are browning and liquid is syrupy, spooning liquid over the top twice, about 30 minutes more. If necessary, remove from oven and boil over high heat until liquid reaches desired consistency, about 1 minute more.

1 1/2 pounds button mushrooms
2 tablespoons olive oil
Salt and pepper
1 tablespoon Parmesan cheese

Steps:

  • Quarter 2 trimmed leeks lengthwise; cut into 2-inch pieces.
  • In bowl, toss 1 1/2 pounds button mushrooms with 1 tablespoon olive oil; season with salt and pepper. Place in hot wok; cook until tender, 10 minutes.
  • In bowl, toss leeks with 1 tablespoon olive oil; season with salt and pepper. Cook, tossing, until lightly charred, 15 to 25 minutes. Dust with 1 tablespoon Parmesan.

3 large leeks (white and pale green parts only), halved lengthwise, sliced
2 teaspoons sugar
1/2 teaspoon dried thyme, crumbled
4 6- to 8-ounce orange roughy fillets
1/2 cup whipping cream
1/4 cup dry vermouth
Fresh chives or green onion tops cut into 1-inch lengths

Steps:

  • Melt butter in heavy large skillet over medium heat. Add leeks and sprinkle with sugar and thyme. Season with salt and pepper. Sauté 5 minutes. Reduce heat and cover and cook until very soft, stirring occasionally, about 10 minutes. Season fish with salt and pepper. Arrange atop leeks. Add cream and vermouth. Cover and cook until fish is opaque, about 8 minutes. Transfer fish to plates and keep warm.
  • Boil sauce until slightly thickened, about 3 minutes. Season to taste with salt and pepper. Top fish with sauce and leeks. Garnish with chives.

1/8 teaspoon dried hot red pepper flakes, or to taste
1 1/2 teaspoons fresh lemon juice

Steps:

  • In a microwave-safe dish combine the leeks and the butter and microwave mixture, covered with microwave-safe plastic wrap, at high power (100%), stirring once for 5 minutes. Remove the plastic wrap and microwave the mixture for 5 minutes more, or until the leeks are tender. Stir in the mushrooms, the wine, and the red pepper flakes and microwave the mixture, covered with the plastic wrap, at high power (100%) for 5 minutes. Stir the mixture and microwave it, uncovered, for 8 minutes more, or until the mushrooms are tender. Stir in the lemon juice and salt to taste.
