2 tbsp olive oil
1 cup white onion (chopped small)
1 cup carrots (peeled and sliced thin)
2 cups broccoli florets
1 red bell pepper (seeded and cut into chunks)
1 green bell pepper (seeded and cut into chunks)
4 oz portobello mushrooms (sliced)
1 cup sugar snap peas
1 large orange (zested and juiced)
1 tsp sesame oil
¼ cup soy sauce
2 large cloves garlic (crushed)
1 tbsp cornstarch
3 tbsp cold water
salt
2 tbsp olive oil
2 pounds boneless (skinless chicken thighs)
Serving Suggestions
Sesame seeds
White or brown rice

Steps:

  • Heat oil in a large skillet over medium heat
  • Add the onions and carrots, sauté 2-3 minutes
  • Add the broccoli and bell peppers, sauté 3-4 minutes
  • Add the mushrooms and sugar snap peas, sauté 3-4 minutes
  • Transfer vegetables to a bowl, set aside
  • Add the orange juice and zest to a small bowl
  • Pour in the sesame oil and soy sauce, whisk
  • Add the garlic, mix
  • Add the cornstarch to another small bowl
  • Pour in the cold water, whisk
  • Pour the cornstarch slurry into the sauce mixture, whisk
  • Season with salt, set aside
  • Return the skillet to the burner and heat the oil
  • Pat the chicken dry and slice it into bite-sized pieces
  • Add the chicken to the skillet
  • Cook for 4-5 minutes
  • Return the vegetables to the skillet, toss
  • Pour the sauce over the chicken and vegetables, sauté about 2 minutes
  • Reduce heat to simmer, allow to simmer about 5 minutes
  • Sprinkle with sesame seeds
  • Serve over plain white or brown rice

2 chicken breast, boneless, skinless, cut into strips
1 tablespoon cornstarch
2 teaspoons sesame seeds
2 1/2 teaspoons oil
2 cups cabbage or bok choy leaves, shredded
2 red peppers, julienned
1/3 cup stir-fry sauce
1/3 cup orange juice
1/3 cup water

Steps:

  • Put chicken and cornstarch in zipper bag. Seal and shake to coat. Cook sesame seeds in large nonstick skillet over medium heat until golden and fragrant; set aside. In a large skillet, heat 2 teaspoons oil over medium-high heat. Add chicken; stir-fry 5 minutes until opaque in center; remove to a large plate. Heat remaining oil in skillet. Add cabbage and peppers. Stir-fry 5 minutes until almost crisp-center. Stir in remaining ingredients and chicken and heat through.Sprinkle with sesame seeds and serve over white rice, if desired.

1/2 cup orange juice
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon oyster sauce
1 tablespoon orange zest
2 large cloves garlic
1 teaspoon minced ginger
optional sweetener like sugar, honey, agave, etc.
STIR-FRY
1 pound chicken tender cut into cubes
salt and pepper
3 tablespoons corn starch
4 cups chopped vegetables such as broccoli, carrots, celery, mushroom, snap peas, etc.
olive oil
1/2 cup medium yellow onion, chopped

Steps:

  • Blend all the ingredients for the sauce in a blender or food processor for 10 seconds. Taste the sauce and add your choice of sweetener to your liking. Blend again for a few more seconds. Heat the sauce in a large skillet on medium-high heat for 5 minutes. Carefully transfer the sauce to a heat proof bowl. Rinse the skillet clean. Season the chicken with salt and pepper. Add the corn starch and massage the chicken with your hands. If using fresh broccoli or green beans, boil the broccoli for 3-5 minutes until soft enough to pierce with a fork yet firm. Transfer the vegetables to a plate lined with a paper towel. Wipe down the skillet until dry. Heat approximately 1 tablespoon of oil in the skillet on medium-high heat.
