1 cup butter, softened
1-1/2 cups sugar
1 large egg
2 tablespoons dark corn syrup
4 teaspoons grated orange zest
3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground cloves
ICING:
4 cups confectioners' sugar
3 tablespoons meringue powder
5 to 6 tablespoons warm water
Assorted decorations: raisins, cranberries and sprinkles

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg, corn syrup and orange zest. In another bowl, whisk flour, baking soda, cinnamon, salt and cloves; gradually beat into creamed mixture. Divide dough in half., On a lightly floured surface, roll each portion of dough into a 9-in. square. Cut into 18 rectangles, 3x1-1/2-in. each. Place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until edges are light golden. Remove from pans to wire racks to cool completely., For icing, in a large bowl, combine confectioners' sugar, meringue powder and enough water to reach a piping consistency. Beat on high speed with a portable mixer 10-12 minutes or on low with a stand mixer 7-10 minutes or until peaks form. Frost cookies. Using a #3 round tip, pipe designs on cookies; decorate as desired.

1 teaspoon baking powder
½ teaspoon ground nutmeg
¼ teaspoon ground cloves

½ cup finely chopped almonds
3 tablespoons grated orange zest
2 cups sifted confectioners' sugar
⅔ cup orange marmalade
2 tablespoons orange juice
½ cup sliced almonds for garnish

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Combine the flour, baking powder, nutmeg, cloves, cinnamon, and salt.
  • Beat the shortening and butter with an electric mixer until smooth. Add the sugar and beat until combined. Mix in the chopped almonds and orange zest. Gradually add the flour mixture to the butter mixture and stir until combined.
  • Transfer the cookie dough to a lightly floured surface and roll it into a rectangle about 13 inches long. Cut the dough into 3 1/2-inch rectangles using a fluted pastry wheel or sharp paring knife. Place the cookies on an ungreased baking sheet.
  • Bake in the preheated oven until lightly browned, about 12 minutes. Allow the cookies to cool slightly on the baking sheets, and then transfer them to a wire rack to cool completely.
  • Combine the sifted confectioners' sugar, the orange marmalade, and the orange juice and stir well. Spread the glaze on the cookies and garnish with sliced almonds, if desired.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/3 cup mascarpone cheese or 1 package (3 oz) cream cheese
1/4 cup butter or margarine, softened
1 tablespoon grated orange peel
1 tablespoon fresh orange juice
1/4 teaspoon pumpkin pie spice
1 egg
1 cup finely chopped pecans
2 cups white candy melts, coating wafers or white vanilla baking chips (12 oz)
Edible orange glitter, if desired

Steps:

  • Heat oven to 375°F. In large bowl, beat cookie mix, cheese and butter with electric mixer on low speed until well mixed. Add orange peel, orange juice, pumpkin pie spice and egg; beat until thoroughly mixed.
  • Using small cookie scoop, shape dough into 1-inch balls. Roll balls in pecans. On ungreased cookie sheets, place balls 2 inches apart.
  • Bake 11 to 13 minutes or until edges are light golden brown. Cool 5 minutes. Remove from cookie sheets to cooling racks. Cool completely.
  • In small microwavable bowl, microwave candy melts uncovered on High 1 to 2 minutes, stirring every 30 seconds, until melted and stirred smooth. Dip each cookie halfway into melted candy, letting excess drip off. Place on waxed paper until almost set. Sprinkle dipped half of each cookie with edible glitter. Let cookies stand until candy coating is completely set, about 1 hour. Store between sheets of waxed paper in tightly covered container.

1 cup powdered sugar
1 cup butter or 1 cup margarine, softened
2 eggs
4 cups all-purpose flour
2 teaspoons grated orange peel

1/2 teaspoon ground cardamom
1/4 teaspoon salt
granulated sugar

Steps:

  • In a large mixing bowl, combine 1 cup granulated sugar, the powdered sugar, butter, shortening, and eggs.
  • Beat at medium speed until light and fluffy.
  • Add the flour, orange peel, cream of tartar, baking soda, cardamom, ginger, and salt.
  • Beat at low speed until a soft dough forms.
  • Cover with plastic wrap.
  • Chill 1-2 hours or until firm.
  • Preheat oven to 350 degrees while dough is chilling.
  • Shape dough into 1 inch balls.
  • Roll balls in granulated sugar.
  • Place balls 2 inches apart on ungreased cookies sheets.

½ cup unsalted butter, softened

2 ½ cups all-purpose flour
6 medium oranges, zested

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.

1/2 cup/115 grams cold unsalted butter, cut into ½-inch cubes, plus more at room temperature for brushing the pan
1 1/3 cups/175 grams all-purpose flour
3/4 cup/80 grams almond flour
3/4 cup packed/160 grams dark brown sugar
1 teaspoon kosher salt (Diamond Crystal)
1/4 teaspoon ground cloves

Steps:

  • Position a rack in the middle of the oven and heat the oven to 350 degrees. Butter a 9-inch springform pan.
  • In a medium bowl, combine the flour, almond flour, brown sugar, salt, cloves and black pepper. Rub the butter into the flour mixture using your fingers until small pebbles form. (Alternatively, use a food processor to pulse the dry ingredients with the butter.) Pour the cream over the mixture, stir just until combined and squeeze until the dough forms ¾-inch clumps. Transfer a little less than half of the crumble (1½ loosely packed cups/210 grams) to a small bowl and refrigerate.
  • Transfer the remaining dough to the buttered pan and flatten into an even layer by pressing into the bottom of the pan with a glass. If you tap the surface of the cookie, it should sound hollow.

Zest the orange directly over the top while the crumble is still warm. Cool completely in the pan, then run a knife along the edges of the crumble before releasing the sides. Steps:

  • Cream together the sugar and butter in a large mixing bowl.
  • Grate one orange to collect the zest. Squeeze the juice of the excess orange into the mixture Crack in the egg, add the honey and stir to combine.
  • Sift in the flour, cinnamon and nutmeg. Add the zest of one orange and mix together thoroughly.
  • Mix in the chocolate chunks.
  • Put the mixture in the fridge for 2 hours to chill, if desired. This step is not essential, but will improve the texture and flavour of the cookies.
  • Set the oven to 200 degrees C. Spoon the mixture and roll into balls of your desired size.
  • Place the cookie dough balls on baking paper covered trays. Make sure to leave plenty of space for each cookie as they will grow a lot when baking.
  • Bake for 13 minutes and remove. Keep the cookies on the tray for a further 10-15 minutes as they will continue to bake outside of the oven. Do not attempt to transfer the cookies off the tray beforehand as they will still be a little sloppy before they firm up.
