Entered for safe-keeping. From First 3/09/09, this was a big hit when originally printed in the magazine in 1994. Cooking time is chilling time.

1 large orange, zested and juiced
2 teaspoons white wine vinegar
2 teaspoons sesame oil
1/2 teaspoon salt
4 cups green cabbage, thinly sliced
4 cups red cabbage, thinly sliced
4 scallions, thinly sliced
3 medium carrots, shredded
8 cabbage leaves, for garnish
black sesame seed, for garnish
white sesame seeds, for garnish

Steps:

  • In a bowl, whisk together orange juice, 1 1/4 teaspoon orange zest, vinegar, sesame oil and salt until blended.
  • Add green cabbage, red cabbage, scallions and carrots; toss gently to coat. Cover and chill 1 hour.
  • Arrange cabbage leaves on serving platter, if desired. Top with slaw.
  • Garnish with black and white sesame seeds, if desired.

2 cups cabbage, shredded
1 orange, peeled, sliced to ¼-inch slices
2 teaspoons vinegar
1 teaspoon soy sauce

Steps:

  • cabbage, sliced oranges, vinegar and soy sauce together. May be refrigerated 2 to 4 hours before serving.

1/2 head purple cabbage
1 orange, peeled and sliced into 1/2 inch segments
1 tablespoon olive oil
1 tablespoon apple cider vinegar
1 tablespoon lemon juice
1 dash chili powder

Steps:

  • Slice the cabbage as thinly as possible.
  • Place cabbage in a large bowl, add the orange segments.
  • Toss with olive oil, vinegar and lemon juice then sprinkle with a dash of chili powder.
  • Serve.
