JALAPENO JELLY

Jalapeno Jelly image

This recipe came from the Black Lakes in Canada. It is the best that I have ever tasted, and very easy to make.

Provided by Sue Delgrego

Categories     Side Dish     Sauces and Condiments Recipes     Canning and Preserving Recipes     Jams and Jellies Recipes

Time 1h5m

Yield 32

Number Of Ingredients 7

1 large green bell pepper
12 jalapeno peppers
1 ½ cups apple cider vinegar
1 pinch salt
4 ¼ cups granulated sugar
4 ounces liquid pectin
4 jalapeno peppers, seeded and finely chopped

Steps:

  • Combine the green bell pepper and 12 jalapeno peppers in the container of a food processor or blender. Process until finely chopped. This can be done in batches, if the peppers do not fit.
  • Transfer the peppers to a large saucepan, and stir in the cider vinegar. Bring to a boil, and let simmer for 15 to 20 minutes. Strain the mixture through at least 2 layers of cheesecloth, and discard pulp. You should have about 1 cup of liquid.
  • Return the liquid to the saucepan, and stir in the salt and sugar until dissolved. Bring to a boil over medium-high heat. When the mixture comes to a rolling boil (one that cannot be stirred down), boil for one minute, then stir in the liquid pectin.
  • Stir in the remaining jalapeno peppers, and ladle into sterile jars leaving 1/4 inch headspace. Seal jars in a hot water bath. Refrigerate jelly after seal is broken.

HOMEMADE JALAPEñO JELLY

Homemade Jalapeño Jelly image

This homemade Jalapeño Jelly is so flavorful! It tastes like a fancy jelly you would find at Williams-Sonoma or Harry and David. *This recipe makes 6 half pint jars with approximately 16 (1 Tbsp) servings in each jar.

Provided by Erica Walker

1 green bell pepper
10 jalapeños (mild to medium (see recipe notes))

6 cup sugar
1 pouch Certo liquid fruit pectin ((usually by the Jell-O in grocery stores))

  • Place peppers in large pot with vinegar, salt and sugar. Boil for 10 minutes stirring often.
  • Add Certo pouch and boil 1 more minute.

  • Serve on crackers with cream cheese. This jelly is also delicious as a dipping sauce for steak or chicken nuggets.

ORANGE JUICE JELLY

Orange Juice Jelly image

This is a great recipe for when you are in the mood to make jelly but have no fresh fruit on hand.

Provided by Can_It_Rachael

Categories     Side Dish     Sauces and Condiments Recipes     Canning and Preserving Recipes     Jams and Jellies Recipes

Time 8h15m

Yield 24

Number Of Ingredients 5

2 (6 ounce) cans frozen orange juice concentrate
2 ½ cups water
1 (1.75 ounce) package powdered fruit pectin
4 ½ cups white sugar
6 half pint canning jars with lids and rings

Steps:

  • Place the orange juice concentrate, water, and pectin in a saucepan. Bring to a boil over high heat, stirring constantly. Once the mixture reaches a boil, add the sugar, and return to a simmer, stirring constantly. Boil hard for 1 minute, then remove from the heat and skim off any scum that has formed at the top.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pour the jelly into the hot, sterilized jars, filling the jars to within 1/2 inch of the top. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 5 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all).

ORANGE JELLY

Orange Jelly image

Sam Bompas and Harry Parr call what they do "contemporary food design," among other things. Their projects include building painstakingly correct models of St. Paul's Cathedral in London and a Madrid airport terminal out of jelly. This recipe was used as part of the pair's first job in the United States. It was paired with Campari jelly, and the dessert they made for a 2009 dinner in New York tasted something like a Campari and soda in jelly form.

Provided by Florence Fabricant

Categories     quick, dessert

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 5

1/4 cup sugar
3/4 cup orange juice, at room temperature
1 packet unflavored gelatin
1 orange, skin and membrane removed, flesh diced
Campari jellies ( see recipe)

Steps:

  • Make simple syrup: Place sugar in a saucepan, add 1/2 cup water, bring to a simmer and cook just until sugar dissolves. Allow to cool to room temperature.
  • In a bowl, mix orange juice and simple syrup. Place gelatin in a small metal bowl or 1-cup metal measuring cup and pour 1/4-cup orange juice mixture over it to soften. When gelatin is soft, place bowl or cup in a shallow pan with simmering water below rim of bowl or cup. Let water simmer until gelatin mixture liquefies. Slowly whisk liquid gelatin into rest of orange juice mixture. Stir in 1/2 cup water.
  • Divide orange pieces among 4 4-ounce or 6 3-ounce metal or silicone molds. Pour orange juice mixture into molds. Refrigerate until firm, at least 4 hours. Unmold onto a flat surface, like a baking sheet, by first dipping molds in hot water for count of 20. Return to refrigerator for at least 1 hour before serving. Serve with Campari jellies.

From leppfarmmarket.com
Estimated Reading Time 2 mins
  • Peel oranges and process sections in small batches in a food processor. Pour into a mesh strainer placed over a large bowl to collect the juice. Use a spoon to spread pulp back and forth in mesh strainer to get out as much juice as possible. OR, squeeze by hand or use a juicer, if you’re lucky enough to own one. However you do it, you need to end up with 3 ½ cups orange juice. I wouldn’t recommend using purchased orange juice as freshly squeezed juice is best.
  • Mix sugar with Pomona’s pectin in a small bowl, set aside. In a large pot, add strained orange juice, water, thinly sliced lemon, peppers and calcium water. Bring to a boil over high heat stirring often. Add sugar all at once and return to a rolling boil (one that doesn’t stop when you stir it), and boil hard for one minute.
  • Ladle jelly into prepared canning jars, using a spoon to evenly distribute the peppers and lemon slices into each jar, leaving 1/4-inch head-space. Cover with lids and bands and process in boiling water bath 10 minutes.
  • Remove jars from water bath and let sit on a kitchen towel on your counter-top. Jars are sealed when button on the top of the lid is fully depressed and won’t move up and down. Once jars are sealed, and while the jelly is cooling and thickening, slightly shake jars to evenly distribute lemon slices and peppers throughout.
