I started using this grilled broccoli recipe in 1987 when I began cooking light. It's been a favorite side dish ever since. With its lemon and Parmesan flavors, it once took second place in a cooking contest. -Alice Nulle, Woodstock, Illinois

6 cups fresh broccoli spears
2 tablespoons plus 1-1/2 teaspoons lemon juice
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 cup grated Parmesan cheese
Optional: Grilled lemon slices and red pepper flakes

Steps:

  • Place broccoli in a large bowl. Combine lemon juice, oil, salt and pepper; drizzle over broccoli and toss to coat. Let stand for 30 minutes. , Toss broccoli; drain broccoli, discarding marinade. Place cheese in a small shallow bowl. Add broccoli, a few pieces at a time, toss to coat., Prepare grill for indirect heat using a drip pan. Place broccoli over drip pan on an oiled grill rack. Grill, covered, over indirect medium heat for 8-10 minutes on each side or until crisp-tender. If desired, garnish with grilled lemon slices and red pepper flakes.

SKEWER-FREE GRILLED BROCCOLI (THAT'S RIGHT... GRILLED!) image

3 - 4 crowns fresh broccoli
2 - 3 tbsp olive oil (to taste)
1/2 - 1 tbsp worcestershire sauce (to taste)
1/2 tbsp Tabasco sauce (or other hot sauce of your choice)
1/2 tbsp kosher salt
1/2 tbsp freshly cracked black pepper
1/2 tbsp garlic powder
1 teaspoon red pepper flakes
1 large container/bowl with sealing lid (tupperware or gladware work best)
1 colander
aluminum foil

Steps:

  • 1 - Remove broccoli florets from the stalks. Rinse them in colander and drain thoroughly. 2 - Once drained, put broccoli in large container/bowl and add olive oil (2-3 tbsp to taste). Seal the lid (it must be a tight seal) and shake to coat the broccoli with the oil. Don't shake too much, or you'll make your broccoli floppy. 3 - Remove lid and add worcestershire sauce, Tabasco, salt, black pepper, red pepper flakes, and garlic powder. Re-seal lid and shake again to mix all the ingredients onto the broccoli. Again, take care not to shake too much, just enough to distribute the ingredients. 4 - Set your grill temperature to high. Prepare a sheet of aluminum foil large enough for all the broccoli to fit on in a single layer. Lay the foil on the grill and quickly spread the broccoli out evenly upon it. Make sure to crimp up the side edges of the foil for easy retrieval after cooking. 5 - Close the grill's lid and allow the broccoli to cook at high heat for 8-10 minutes. (8 minutes for crisper broccoli, 10 minutes for more "well-done" softer broccoli. I do not advise cooking for longer than 10 minutes because the broccoli may become mushy and unwieldy.) 6 - When finished cooking, remove the broccoli from the grill by grabbing the foil at the crimped-up sides. The foil shouldn't retain much heat at these edges, but be careful not to burn yourself. Funnel the broccoli into your serving bowl. Some pieces may stick to the foil, but should be easily removed. It's now ready to serve.

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Toss broccoli, oil, pepper, garlic powder, and salt together in a bowl. Make sure broccoli is well coated.
  • Grill broccoli, turning as needed, until lightly browned and fork-tender, 8 to 10 minutes. Transfer to a serving plate and top with Cheddar cheese and red pepper flakes.

1 ½ tablespoons olive oil
½ teaspoon salt
¼ teaspoon ground black pepper
1 pinch red pepper flakes

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place broccoli florets in a large bowl. Drizzle olive oil over the broccoli and toss to coat. Add salt, pepper, and crushed red pepper and toss to coat again.
  • Place broccoli in a grill basket and grill, turning occasionally, until tender-crisp, about 10 minutes.

These skewers are great at a barbecue and it's easy to double or half the recipe. Recipe adapted from Bon Appetit (June 2004)

Number Of Ingredients 9

1/2 cup olive oil
3 tablespoons balsamic vinegar (or red wine vinegar)
1 1/2 tablespoons chopped fresh oregano (or substitute other fresh herbs that are available, basil and marjoram are good choices)
1 tablespoon Dijon mustard (or other spicy mustard)
2 Japanese eggplants, cut into 1 inch rounds
2 zucchini, cut into 1 inch rounds
2 yellow squash, cut into 1 inch rounds
1 pint cherry tomatoes
8 -10 wooden skewers

Steps:

  • Soak wooden skewers for at leat 30 minutes in water.
  • Whisk dressing ingredients (oil- mustard) in a jar and set aside.
  • Alternate vegetables (eggplant, zucchini and summer squash) with tomatoes on skewers. Each skewer should hold approximately 6 vegetables (2 of each eggplant, zucchini and summer squash rounds) and 6 tomatoes.
  • Arrange skewers on baking sheet while you complete all 10 skewers. Brush skewers with dressing. (If making ahead refrigerate for up to 8 hours- refrigerating dressing and skewers separately) Prepare barbecue (or preheat broiler).
  • Brush skewers with dressing, sprinkle with salt and pepper (if desired).
  • Grill (or broil) until skewers are tender and charred slightly, turning often (about 10 minutes).
  • Transfer to serving platter and brush again with dressing.
