Weight Watchers Oreo Devil's Food Cake image

This recipe Yields 24 servings each serving is three points on the weight watchers freestyle plan!

1 16 oz box Pillsbury Moist Supreme Cake Mix Premium Sugar Free Devli's Food Cake ( 24 serving) (39 points)
1/2 cup unsweetened applesauce 0 points
6 oz. fat free greek yogurt 0 points
3 eggs 0 points
6 ounces fat-free Cool Whip 12 points
8 Oreo sandwich cookies 19 points
5 sprays cooking spray 0 points

Steps:

  • Preheat oven to 350 degree.
  • In a bowl, mix chocolate cake mix with eggs, yogurt and applesauce.
  • Pour into a 6x11 pan with baking spray.
  • Bake for 35 minutes.
  • Poke the cake with a fork or end of a wooden spoon.
  • Mix the Oreo crumbs into the cool whip.
  • Spread cool whip frosting mixture over cake once it has cooled!

I made these little chocolate-covered Oreo® devils with my kids yesterday and they were a huge hit! I did the covering and they did the decorating. We also did a second batch as little monsters, where we just dunked the tops into red sprinkles and then glued either 1 big eye or lots of little eyes onto them. They were gone in no time at the kids' school Halloween party.

2 ounces red fondant
1 (12 ounce) package red confectioner's coating (such as Wilton® Candy Melts®)
1 (14 ounce) package chocolate sandwich cookies (such as Oreo®)
72 small candy eyeballs

Steps:

  • Shape red fondant into 72 little horns relative to the size of the cookies. Line 2 baking sheets with parchment paper.
  • Place red confectioner's coating in the top of a double boiler over simmering water. Stir constantly, scraping down the sides with a rubber spatula to avoid scorching, until melted, about 5 minutes. Remove from heat.
  • Use a spoon to cover the top and sides of each cookie with melted red coating. Place on the prepared baking sheet. Stick 2 small devil horns near the top and add 2 candy eyeballs. Let stand until dry, about 1 hour.

2 eggs

1/2 cup miniature semisweet chocolate chips

Steps:

  • Preheat oven to 350°. In a large bowl, combine cake mix, eggs, butter and water (batter will be thick). Fold in chocolate chips. , Drop by tablespoonfuls 2 in. apart onto baking sheets coated with cooking spray. Bake 10-13 minutes or until set and edges are lightly browned. Cool 2 minutes before removing to wire racks.

1 cup unsalted butter, softened
1 cup white sugar
2 teaspoons salt
2 large eggs
2 cups all-purpose flour
1 ¼ cups dark cocoa powder
½ teaspoon baking soda
½ cup butter, softened
2 cups powdered sugar
1 teaspoon vanilla

Steps:

  • In a large bowl, cream together 1 cup (225 grams) of softened butter with the white sugar and salt, until light and fluffy.
  • Beat in eggs until fully incorporated.
  • Sieve together the flour, cocoa powder, and baking soda into the mix. Blend well.
  • Add the dry ingredients to the wet ingredients, and mix together until combined.
  • Turn the dough out onto your surface and push together into a flat square. Wrap the dough in plastic wrap and refrigerate for 1 hour.
  • Preheat oven to 325˚F (160˚C).
  • Remove the dough from the fridge, and for ease of rolling out, divide the dough into 4 (this way the dough stays cool longer and prevents the need of re-chilling later on).
  • To roll out the dough, place a quarter of the dough between two sheets of parchment paper (alternatively the dough can be rolled out on a lightly floured surface - though the parchment is preferred as it prevents any additional flour from altering the color/appearance of the dark cookies). Roll the dough between the two sheets of parchment to ¼-inch (½ cm) thickness.
  • Using a small round cookie cutter (alternatively, we found the rim of a champagne glass to be a perfect size!) cut the dough into individual rounds and place on a large parchment-lined baking sheet, leaving at least ½-inch (1¼ cm) between each cookie.
  • Pack together and re-roll out any scraps to cut additional cookies. Repeat with this process with each remaining ¼ of the dough.
  • Bake in a preheated oven for 15 minutes. If baking multiple trays at the same time, be sure to rotate the pans in the oven halfway through. Remove and transfer cookies to a cooling rack to cool completely.
  • To make the filling, combine ½ cup (115 grams) butter, powdered sugar, and vanilla in a medium mixing bowl. Beat together until light and fluffy.
  • Assemble the cookies by spreading a generous scoop of the icing onto one of the cookies and sandwiching it with another. Give it a light squeeze and scrape any excess off to clear and even out the sides.
  • Serve with a glass of milk.

4 cups powdered sugar (more or less depending on how thick you like your frosting)

Steps:

  • Preheat oven to 350 degrees. Mix together cake mix, eggs and shortening until well combined. The dough will be pretty thick. Roll dough into balls, making sure they are all similar in size. Place dough onto ungreased cookie sheet and bake for 8 minutes. Immediately transfer cookies to a cooking rack.
  • Mix together butter, milk, vanilla and powdered sugar until smooth. Spread onto cooled cookies and sandwich together.
