These festive OREO Turkeys are so cute - you won't want to wait until Thanksgiving to make them! Even the littlest helpers will love attaching candy corn feathers to the turkeys' cookie tails.

6 OREO Cookies
1 ounce semi-sweet baking chocolate, melted
30 pieces candy corn
6 chocolate malted milk balls
6 cinnamon red hot candies

Steps:

  • Separate each cookie, leaving all the creme filling on one half of each. Set filling-topped halves aside.
  • Use small amount of melted chocolate to attach 5 candy corn pieces, pointed-sides down, to each plain cookie half for the turkey's tail. Refrigerate 5 minutes or until chocolate is firm.
  • Attach malted milk ball to center of each filling-topped cookie half with melted chocolate for the turkey's body. Use additional melted chocolate to attach cinnamon candies to bodies for the heads.
  • Attach turkey tails to bodies with remaining melted chocolate. Refrigerate until firm.

1 cup semisweet chocolate chips
30 candy corn candies, plus 6 white tips of candy corn
6 chocolate sandwich cookies
6 mini peanut butter cups
6 malt balls
1 cup Red Frosting, recipe follows
6 chocolate sandwich cookies with top cookies removed
1/2 stick (1/4 cup) unsalted butter, at room temperature
1 1/2 cups powdered sugar
1/2 teaspoon pure vanilla extract
2 tablespoons whole milk
Red food coloring, as needed

Steps:

  • Place the chocolate chips in a medium stainless steel or glass bowl. Set the bowl over a saucepan of barely simmering water. Cook, stirring occasionally, until the chocolate has melted, about 4 minutes. Set aside to cool slightly.
  • For each turkey, push 5 candy corn candies, tip-side down, into the cream filling of a chocolate sandwich cookie to make the feathers for the turkey. Lay the cookie on a work surface.
  • Dip the flat, larger end of a peanut butter cup in the melted chocolate allowing any excess chocolate to drip back into the bowl. Place the peanut butter cup, chocolate-dipped end down, onto the sandwich cookie.
  • Dip a malt ball into the melted chocolate allowing any excess chocolate to drip back into the bowl. Place the malt ball above the peanut butter cup to make the head of the turkey.
  • Dip the flat end of the white candy corn tip in the chocolate. Place on the malt ball, to make the turkey beak. Refrigerate until the chocolate has set, about 10 minutes.
  • Place the Red Frosting in a piping bag. Using scissors, cut a small opening in the end of the piping bag. Pipe a small piece of frosting under the malt ball to make the turkey's beard.
  • Place a cookie (with top half removed) on a platter. Stand the turkey upright into the cream filling. Repeat with the remaining ingredients.
  • In a medium bowl, using an electric hand mixer, beat the butter until smooth, about 20 seconds. Add the powdered sugar, vanilla extract and milk. Beat on low speed until combined. Increase the speed to high and beat until the mixture is smooth. Color the frosting by mixing in 1 drop of red food coloring at a time until the desired color is reached.

Build an Oreo turkey with Oreos, candy and frosting. This would be a fun activity for (school-age) kids at a Thanksgiving gathering to put these together. They can display them at their dinner place and eat them for dessert....if they can wait that long. The recipe I am listing will be to make one dozen turkeys.

24 Oreo Double Stuff cookies
12 miniature peanut butter cups
12 malted milk balls
1 cup candy corn
4 ounces chocolate frosting
4 ounces white frosting
red food coloring

Steps:

  • Place one Oreo cookie as the base. Put one teaspoon of chocolate frosting on top.
  • Place one small peanut butter cup on it's side so that the top and bottom are perpendicular to the base -- and stuck in the frosting. Place a teaspoon of chocolate frosting on the top(widest part) of the p-butter cup.
  • For the second cookie. Stick some candy corn into the Oreo 'stuff' along one edge for the feathers -- pointy side down. They should fan out around the edge. If you have trouble doing this, you can help them stick with some white frosting.
  • Place this second Oreo cookie (the tail) on it's edge and sticking to a dab of brown frosting on the back of the peanut butter cup.
  • Place a dab of chocolate frosting on top of the peanut butter up (for the head). Place a malted milk ball on top for the head.
  • Take a small amount of the white frosting in a separate dish. Mix in red food coloring.
  • Use a toothpick with the white and red colors to place eyes, and wattle. You can pinch off the small pointy top of a candy corn and dip it in brown frosting for the beak.
  • Your turkey is complete!

15 lb turkey
¼ cup kosher salt
2 tablespoons dark brown sugar
1 tablespoon freshly ground black pepper
1 tablespoon granulated garlic
cooking oil, of choice, for drizzling
1 turkey carcas
1 medium yellow onion, quartered
3 carrots, peeled and halved
3 stalks celery, cut into thirds
kosher salt, to taste
cooking oil, of choice, for drizzling
cold water
2 bay leaves
⅓ cup rendered turkey fat, or butter
⅓ cup all-purpose flour
1 qt turkey stock, or chicken stock
1 bunch fresh sage, optional
kosher salt, to taste
freshly ground black pepper, to taste

Steps:

  • The day before serving, prepare the turkey for brining. Pat dry with paper towels.
  • Set the neck aside for the stock. Cut off the wing tips and set aside with the neck.
  • Butcher the turkey into 8 pieces: 2 breasts, 2 legs, 2 thighs, and 2 wings. Set aside the carcass for the stock.
  • Combine the salt, brown sugar, pepper, and granulated garlic in a small bowl.
  • Set a wire rack inside a baking sheet. Place the turkey parts skin-side up on the rack and generously sprinkle with the seasoning blend. Refrigerate, uncovered, for at least 2 hours, or overnight.
  • Make the stock: Preheat the oven to 450˚F (230˚C).
  • Place the turkey carcass, wing tips, and neck on a baking sheet with the onion, carrots, and celery. Season lightly with salt and drizzle with oil.
  • Roast for 30-45 minutes, or until the carcass and vegetables are deep brown.
  • Transfer the roasted vegetables, turkey carcass, and other parts to a large stock pot.
  • From the still-warm baking sheet from roasting the carcass, pour any rendered fat into a small bowl. Add about 1 cup (240 ml) of water to the pan and scrape off any browned bits from roasting process, then pour into a separate bowl. Reserve for the gravy.
  • Strain the stock, discarding the solids. The stock will keep for 5 days in the refrigerator or for 3 months in the freezer.
  • Cover the carcass with cold water. Add the bay leaves and bring to a gentle simmer over medium heat. Continue to simmer (don't boil!) for 3 hours.
  • Make the gravy: Heat a medium saucepan over medium heat. Add the turkey fat and flour, stirring to combine. Cook the fat and flour together, stirring constantly, for about 5 minutes. This is a roux--you are cooking out the raw flour taste and deepening the flavor.
  • Gradually add the stock to the roux, stirring constantly to prevent lumps. Bring to a boil, continuing to stir until thickened. Season with salt and pepper to taste.
  • Remove the pan from the heat and let cool to room temperature. Store in the refrigerator until ready to warm for serving with the turkey. The gravy will keep in the fridge for up to 5 days, or in the freezer for up to 3 months.
  • 2 hours before you are ready to serve the turkey, preheat the oven to 425°F (220˚C).
  • Remove the turkey parts from the fridge and drizzle with oil before placing in the hot oven.
  • Roast for 30 minutes, then rotate the baking sheet to ensure even browning. Reduce the oven temperature to 400˚F (200˚C).
  • Continue roasting until an instant-read thermometer inserted into the thickest part of breast registers 160°F (70˚C).
  • Or when the thigh registers 170˚F (77˚C). Start checking after about 20 minutes, removing any parts from the oven as they reach proper temperature so that they don't overcook.
  • Once all parts are done, loosely cover with foil and let rest for 5-10 minutes while you warm the gravy.
  • Add the gravy and sage, if using, to a medium saucepan over low heat and bring to a simmer, stirring occasionally. Season to taste with more salt and pepper, if needed.
  • Serve the turkey with the gravy and your favorite Thanksgiving dishes.
  • Enjoy!
