Organic beef bone broth recipe with roasted beef bones and vegetables. You can make the bone broth on the stove or in the slow-cooker.

3-4 lbs of mixed beef bones (1.4-1.8 kg, oxtail, knuckles, neckbones and/or short ribs)
2 medium carrots
3 celery stalks or (150 g/ 5.3 oz celeriac)
2 medium onions
1 tablespoon olive oil
2 tablespoons apple cider vinegar
1 bay leaf
2 teaspoon peppercorns
fine sea salt to taste

Steps:

  • Roast bones: Preheat oven to 200 degrees Celsius/ 400 degrees Fahrenheit. Place the beef bones in a single layer on a roasting pan. Drizzle with the oil and rub the bones to coat with it. Roast for 30 minutes, then flip the bones over and roast for an additional 30 minutes.
  • Simmer: Put bones, bay leaf, cider vinegar, chopped vegetables, and peppercorns in a large crockpot or soup pot. Cover entirely with water and bring almost to a boil, but don't let it start to boil. Add salt. Turn the heat down to low and let simmer for 12-24 hours. If using a crockpot/slow-cooker, simmer on Low for 12-24 hours. Add water, if necessary, to keep all the ingredients submerged.
  • Strain: Once the broth has reached a dark rich brown color, remove from heat. Discard the bones, vegetables, and bay leaf and strain through the bone broth through a fine-meshed sieve lined with a cheesecloth into a clean pot.
  • Store: Once at room temperature, pour into jars. Add more salt to taste when using the broth.
  • Skim the fat off the top of the broth before using it. Use as suggested above.

2 onions, chopped (if very large, use only 1)
3-4 pounds beef bones that have cartilage and some meat on them (i.e. knuckle bones, shank bones, oxtail, rib bones, femur bones)
1 tablespoon turmeric powder
1 tablespoon sea salt
1 teaspoon black pepper

Steps:

  • Add all ingredients to a large pot (or pressure cooker) and add enough water to just cover the bones. Let it boil and once it boils, turn it off so you can skim any scum that may have surfaced. (This is optional but some believe it to be helpful in keeping the taste pure. Sometimes I do it and sometimes I don't. Totally up to you.)
  • If using pressure cooker like InstantPot, put it on the pressure cooker setting on high for 3 hours and allow the pressure to naturally release when it's done. If using a regular pot over the stove, let it simmer for 12-16 hours.If using a slow-cooker, let it simmer for 12-16 hours.
  • Strain the cooked broth to keep the liquid gold you've just made.

The longer you cook this nourishing broth, the more savory and concentrated it will become. Roasting the bones and vegetables beforehand will add even more flavor and richness. Season with salt and sip this restorative broth on its own, use it as a cooking liquid for grains or legumes, or deploy it as a base for sauces and soups like hearty, healthy Detox Pho.

Yield Makes about 8 cups of broth, depending on cooking time

Number Of Ingredients 11

4 pounds beef bones, preferably a mix of marrow bones and bones with a little meat on them, such as oxtail, short ribs, or knuckle bones (cut in half by a butcher)
2 medium unpeeled carrots, cut into 2-inch pieces
1 medium leek, end trimmed, cut into 2-inch pieces
1 medium onion, quartered
1 garlic head, halved crosswise
2 celery stalks, cut into 2-inch pieces
2 bay leaves
2 tablespoons black peppercorns
1 tablespoon cider vinegar
Special equipment:
6-quart (or larger) stockpot or a large slow cooker

Steps:

  • Preheat oven to 450°F. Place beef bones, carrots, leek, onion, and garlic on a roasting pan or rimmed baking sheet and roast for 20 minutes. Toss the contents of the pan and continue to roast until deeply browned, about 20 minutes more.
  • Fill a large (at least 6-quart) stockpot with 12 cups of water (preferably filtered) . Add celery, bay leaves, peppercorns, and vinegar. Scrape the roasted bones and vegetables into the pot along with any juices. Add more water if necessary to cover bones and vegetables.
  • Cover the pot and bring to a gentle boil. Reduce heat to a very low simmer and cook with lid slightly ajar, skimming foam and excess fat occasionally, for at least 8 but up to 24 hours on the stovetop. (Do not leave on stovetop unattended, simply cool and continue simmering the next day.) The longer you simmer it, the better your broth will be. Add more water if necessary to ensure bones and vegetables are fully submerged. Alternately, you can cook the broth in a slow cooker on low for the same amount of time.
  • Remove the pot from the heat and let cool slightly. Strain broth using a fine-mesh sieve and discard bones and vegetables. Let continue to cool until barely warm, then refrigerate in smaller containers overnight. Remove solidified fat from the top of the chilled broth.

Neophytes just drop those bones in a pot of boiling water. They soon find out that that brothy smell coming off the stovetop becomes sickening after 5 hours or so. This browning step, along with the onions, garlic and seasonings changes the boney, gutsy aromas to savory. Remember…you want to ensure that you and everyone else in your family will enjoy the broth…even after 8 hours of cooking (and smelling!).
  • Place your stockpot on the stovetop, and if it is a heavy bottom pot, sautee’ the onions and garlic until just carmelized (if the olive oil is an issue for you, this step can be skipped and you can add the onions and garlic raw).
  • Drop the bones in. Add 2 gallons water and seasonings. The bones should be completely covered. Bring to boil. Cover. Now start simmering. The longer the better. We have gone for 24 hours at a low simmer. Remember, though, you MUST add water several times over the long simmer period to keep bones covered. You’ll also want to skim off the impurities that rise to the top of the water. These will look like foamy scuzzies floating around on top and you can remove them with a slotted spoon. They’ll start showing up after about 45 minutes of simmering.
