½ cup cornstarch
½ cup soy sauce
½ cup corn syrup
½ cup dry sherry
¼ cup cider vinegar
3 cloves garlic, minced
2 teaspoons fresh grated ginger
¼ teaspoon ground cayenne pepper

Steps:

  • Combine chicken broth, cornstarch, soy sauce, corn syrup, sherry, cider vinegar, garlic, ginger, and cayenne pepper in a 1 1/2-quart jar with a tight-fitting lid. Shake well.

1 tablespoon chili or vegetable oil
3/4 pound boneless skinless chicken breast, cut into 1/2-inch pieces
1 teaspoon finely chopped gingerroot
1 can (8 ounces) no-salt-added tomato sauce
1 tablespoon chili puree with garlic
1 teaspoon soy sauce
1 package (16 ounces) ready-to-serve original pizza crust (12 to 14 inches in diameter)
1 can (8 ounces) sliced water chestnuts, drained
2 ounces small snow (Chinese) pea pods (1/2 cup)
1/3 cup sliced red onion
2 cups shredded mozzarella cheese (8 ounces)
1 tablespoon chopped fresh cilantro

Steps:

  • Heat oven to 375°F. Heat wok or 10-inch skillet over high heat. Add oil; rotate wok to coat side. Add chicken and gingerroot; stir-fry 2 to 3 minutes or until chicken is no longer pink in center. Reduce heat to medium. Stir in tomato sauce, chili puree and soy sauce.
  • Spoon chicken mixture onto pizza crust to within 1/2 inch of edge. Top with water chestnuts, pea pods and onion. Sprinkle with cheese.
  • Bake 15 to 20 minutes or until pizza is hot and cheese is melted. Sprinkle with cilantro.

Preheat oven to 375° F. Pre-bake pizza shell for 10 minutes. Sauté chicken strips, snow peas, red peppers, celery, green onions and baby corn in stir-fry oil until crisp. Set aside to cool. Brush pizza shell with peanut satay sauce and sprinkle with sesame seeds. Arrange sautéed chicken and vegetables on shell. Top with Wisconsin cheese and peanuts. Bake at 375° F for 12-18 minutes. Top immediately with rice noodles for crunch.Peanut Satay Sauce: Stir fry garlic, shallots, cayenne and lemon peel in oil. Remove lemon peel. Add the lemon juice and simmer for a minute. Add peanut butter and water. Bring to a boil. Add sugar and salt. Boil until thickened.

  • Heat oven to 425°F. Lightly grease 15 x 10 x 1-inch baking pan. Unroll dough and place in greased pan starting at center, press out with hands. 1/4 cup cooking sherry
1/4 cup soy sauce (I use the lite kind)
2 tablespoons cider vinegar
1 teaspoon ground ginger
2 teaspoons cornstarch
2 tablespoons canola oil
1 lb boneless skinless chicken breast, cut into 1 inch pieces
1 red bell pepper, cut into 1 inch lengths
3 scallions, cut into 1 inch lengths
1 cup sliced mushrooms
1 (8 ounce) can sliced water chestnuts, drained

Steps:

  • In a small bowl, combine sherry, soy sauce, vinegar, ginger and cornstarch; stir to blend well.
  • In a wok or large frying pan, heat oil over medium-high heat.
  • Add chicken and stir-fry 2 minutes until meat turns white.
  • Add red pepper, scallions, mushrooms, and water chestnuts; stir-fry 2 minutes.
  • Stir sauce and add to wok; stir over heat until sauce thickens.
  • Serve over rice.
  • **Note: This is the original recipe, but sometimes I like to add different veggies like celery, broccoli, snow peas, etc.

1 (10 ounce) package pizza dough
3 chicken breasts, cut into strips
1 tablespoon olive oil
1 large onion, cut into slices
1 medium green pepper, chopped
1 medium red pepper, chopped
1 cup sliced fresh mushrooms
2 garlic cloves, minced
1 1/2 cups shredded mozzarella cheese
1/2 teaspoon dried basil
1 teaspoon sesame seeds (optional)

Steps:

  • Put pizza dough in a greased pizza pan. Bake at 425 degrees for 8 minutes.
  • Stir fry onion, peppers, mushrooms, and garlic in olive oil for 2-3 minutes until tender and crisp.
  • Stir fry chicken 2-3 minutes until no longer pink and done. May need to add extra olive oil.
  • Return vegetables to skillet and mix together.
  • Sprinkle half the mozarella cheese over crust. Spoon mixture of chicken and vegetables over cheese layer evenly. Top with the rest of the mozarella cheese.
  • Sprinkle basil and sesame seeds on top.
  • Bake at 425 degrees for 5-7 minutes, or until cheese melts.
