1/4 ounce fresh lime juice
Splash soda water
8 mint leaves
2 lime slices
2 1/2 ounces sugar cane juice
1 1/2 ounces white rum, such as Myers's White

Steps:

  • Muddle the mint leaves and fresh lime in a cocktail shaker. Add the sugar cane juice, rum, cane syrup and lime juice and shake well. Pour into a 12-ounce glass and top with soda water.

2 tablespoons tightly packed fresh mint leaves
1 small lime, cut into 4 wedges
1/2 cup light rum
4 tablespoons sugar
1 1/2 cups small ice cubes
1/2 cup club soda
Additional fresh mint leaves

Steps:

  • In each of 2 highball glasses, muddle (crush together) about 1 tablespoon mint leaves with juice squeezed from 2 lime wedges. Add lime wedges to glasses; muddle. Stir 1/4 cup of the rum and 2 tablespoons sugar into each glass. Mix well to dissolve sugar. Add about 3/4 cup ice to each.
  • Pour 1/4 cup club soda into each glass; stir well. Garnish with mint.

The Real Mojito image

This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

10 fresh mint leaves
½ lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice cubes
1 ½ fluid ounces white rum
½ cup club soda

Steps:

  • Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

1/4 cup sugar
1 lime, thinly sliced
8 large fresh mint leaves
1/2 cup white rum
2 tablespoons club soda
ice cubes

Steps:

  • Stir water and sugar in heavy small saucepan over low heat until sugar dissolves. Increase heat and boil without stirring for 1 minute. Cool syrup. Divide syrup, lime and mint leaves between 2 tall glasses. Using wooden spoon, mash lime and mint in each glass. Add 1/4 cup rum and 1 tablespoon soda to each glass; stir to blend. Fill each with ice and serve.
