My Grand's cornbread dressing recipe and how to make it BEFORE Thanksgiving.

1 large skillet cornbread*
5 or 6 slices of white bread, stale
6-8 biscuits, baked
1 onion, processed finely
3 stalks celery, finely chopped
1 can cream of chicken soup
1 tablespoon sage
1 tablespoon poultry seasoning
2 bouillon cubes
1 teaspoon salt
1/2 teaspoon black pepper
1 carton chicken broth
3 eggs, beaten

Steps:

  • Process all 3 breads into crumbs (fine to medium).
  • Store in an airtight bag; freeze or refrigerate until ready to make the dressing.
  • Measure out several cups of broth/stock.
  • Crumble bouillon cubes into broth/stock.
  • Heat to boiling; stir to dissolve.
  • Toss all bread crumbs together in a large bowl.
  • Add onion, celery, soup, spices, and eggs; stir well.
  • Add broth in stages until desired consistency.
  • Preheat oven to 350 F.
  • Bake uncovered for 45 minutes or until a toothpick inserted in middle comes out clean.

1 cup cornmeal
1 cup all-purpose flour
⅔ cup granulated sugar
1 tablespoon baking powder
½ teaspoon salt
1 cup milk
2 lsrge eggs
½ cup 1 stick unsalted butter, softened
1 bag 12 oz dry stuffing cubes
½ cup 1 stick unsalted butter
1 cup onion (chopped)
1 cup 3-4 stalks celery, chopped
2 large eggs
2 ½ - 3 cups chicken broth
1 tablespoon dried parsley
2 teaspoons dried sage
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon pepper

Steps:

  • Preheat oven to 400 degrees F
  • Coat a square 8x8 baking pan with cooking spray
  • In a large bowl, whisk together cornmeal, flour, sugar, baking powder and salt
  • Add milk, eggs and butter
  • Beat until smooth
  • Pour into prepared pan
  • Bake for 20-30 or until toothpick inserted in the center comes out clean
  • Prepare cornbread 1-2 days ahead
  • Be sure cornbread is dry, if not, cut into 1 inch cubes and spread on baking sheet
  • Preheat oven to 250 degrees F
  • Dry cornbread in oven for 30-45 minutes, toss every 10-12 minutes
  • Preheat oven to 350 degrees F
  • Coat 13x9 baking dish with cooking spray
  • In a large skillet, melt butter over medium heat
  • Add chopped onions and celery and cook until soft
  • Remove from heat
  • Add seasonings and mix well
  • Add cornbread and stuffing cubes to very large bowl
  • Add onion mixture and mix well
  • Lightly beat eggs and add to cornbread mixture, mix well
  • Gradually add broth to cornbread mixture and stir with each addition ** see notes
  • Spread stuffing into prepared baking dish
  • Bake for 20-25 minutes or until golden brown
  • Remove from oven and serve immediately

2 tablespoons butter
½ cup chopped celery
1 small onion
2 eggs, beaten
2 cups chicken stock

Steps:

  • Prepare the dry corn bread mix according to package directions. Cool and crumble.
  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.

8 ½ oz cornbread mix (Jiffy Corn Muffin Mix, 1 box)
¼ cup sugar (granulated (*can be omitted if you don't prefer cornbread sweet))
4 tablespoons butter (unsalted )
3 oz cream cheese (whipped cream cheese)
4 oz heavy whipping cream
¼ cup butter (unsalted )
2 tablespoons butter (unsalted )
1 cup yellow onion (diced)
1 cup celery (diced)
1 tablespoon thyme (fresh or dried)
1 tablespoon rosemary (fresh or dried)
1 teaspoon sage (ground)
¼ cup parsley (finely chopped)
½ cup chicken stock (or chicken broth (Use vegetable broth to make this dish vegetarian.))
1 teaspoon salt
½ teaspoon black pepper
1 egg (large)

Steps:

  • Preheat the conventional oven or Instant Pot Omni Plus oven to bake at 350 degrees for 10 minutes (although you may not use all of this time for melting the butter).
  • Place the 4 tablespoons of butter in an 8-inch skillet and melt in the oven for approximately 5 minutes.
  • While the butter is melting, combine the Jiffy cornbread mix, sugar, cream cheese, and heavy cream in a medium-size mixing bowl.
  • Pour the melted butter from the skillet into the mixing bowl and mix all the ingredients together.
  • Pour the cornbread mixture into the skillet.
  • Bake at 350 degrees F. In the conventional oven for 25-30 minutes. Instant Pot Omni Plus oven for 23-25 minutes.
  • When the baking time has finished, allow the cornbread to cool for approx 10 minutes.
  • Cut the bread lengthwise and then across into 1-inch bread cubes and set aside.
  • Grease an 8″ or similar-sized baking dish and set it aside.
  • Remove the lid from the Instant Pot and turn on the sauté setting for 8 minutes.
  • With the lid off, melt ¼ cup of butter.
  • Add the chopped onion, celery, thyme, rosemary, and sage.
  • Stir to coat the vegetables in the herbs and melted butter and then sauté until they soften and slightly brown.
  • Add the chicken stock, salt, and pepper to the inner pot's simmer, and stir to combine.
  • Remove the herb mixture from heat and set aside.
  • Allow the mixture to cool to the touch so that it can be mixed with the egg. (You don't want the egg to cook from the residual heat and scramble!)
  • While the herbs are cooling off, beat the egg with the parsley in a medium-sized bowl.
  • Gently fold in the cornbread cubes to coat with the egg.
  • Pour in the cooled herb mixture into the egg mixture.
  • Transfer the mixture to the pre-greased baking dish.
  • Cut the 2 tablespoons of butter into small pats and place them all around on top of the dressing.
  • Cover the baking dish with foil and bake at 350 degrees F. 35 minutes in the conventional oven. In the Instant Pot Omni Plus oven for 30 minutes.
  • Uncover and bake until golden, 10-15 more minutes (conventional oven), 10 minutes (Instant Pot Omni Plus oven).
  • Serve cornbread dressing warm, and enjoy!
  • Optional - serve with gravy on top.

Skillet Cornbread, recipe follows, diced into 1-inch cubes
1 loaf crusty French bread, diced into 1-inch cubes
1 stick butter
2 cups finely diced celery (leaves included)
2 carrots, peeled and very finely diced
1 large onion, diced
4 cups low-sodium chicken broth, plus more if needed
2 to 3 teaspoons fresh rosemary, chopped
1/2 teaspoon ground thyme
1/4 teaspoon ground sage
1/8 to 1/4 teaspoon turmeric
Kosher salt
1/4 cup fresh parsley leaves, chopped
1/2 cup all- purpose flour
1 tablespoon baking powder
1/4 cup plus 2 tablespoons shortening
1 cup yellow cornmeal
1 teaspoon salt
1/2 teaspoon baking soda
1 cup buttermilk
1/2 cup milk
1 whole egg

Steps:

  • Spread the Skillet Cornbread and French bread cubes out on 2 baking sheets and let them dry for about 24 hours until totally crisp. Once dry, transfer the cubes to a large mixing bowl and toss to mix them up a bit.
  • Preheat the oven to 350 degrees F.
  • Warm up a large skillet or Dutch oven over medium heat and add the butter. When it's melted, add the celery, carrots and onions, and cook for a few minutes until the onions are almost translucent, about 6 minutes. Add the chicken broth and bring to a boil. Reduce the heat to low and add the rosemary, thyme, sage and turmeric. Gradually ladle the broth mixture into the bread, tossing lightly as you go. Keep gradually adding the broth mixture, tasting as you go and adding more seasoning and herbs if needed. Add salt carefully. You don't want to over salt your stuffing. If the mixture is not quite moist enough, add a bit more chicken broth and stir. Stir in the fresh parsley.
  • Place the dressing in a rectangular baking dish and bake until golden brown on top, 20 to 25 minutes.
  • Preheat the oven to 450 degrees F.
  • Melt 2 tablespoons of the shortening in a cast-iron skillet. In a large mixing bowl, combine the cornmeal, flour, baking powder, salt and baking soda. In a separate bowl, whisk together the buttermilk, milk and egg until fully combined. Slowly incorporate the wet ingredients into the dry, stirring until well combined. Melt the remaining 1/4 cup melted shortening and add to the batter, stirring constantly. Pour into the hot skillet, smoothing the surface with a spatula. Place in the oven and bake until golden brown on top, 20 to 25 minutes.

I've tried on quite a few occasions to "gussy up" my family's cornbread dressing recipe. All of the attempts have ended with subpar results and little to no fanfare, so I keep coming back to the classic. Of course the secret to this rich Southern side dish is the butter. But is that really a secret? This version yields an amazingly moist dressing just begging to be drenched in bourbon gravy.

1 cup (2 sticks) unsalted butter
2 cups finely chopped celery
2 cups finely chopped onion (about 2 medium-sized onions)
5 cups day-old crumbled cornbread, recipe follows
2 cups herb-seasoned stuffing mix, such as Pepperidge Farm
1/4 cup minced fresh sage
4 cups turkey or chicken stock, plus more as needed (preferably homemade)
4 eggs, lightly beaten
Freshly ground black pepper, to taste
1/2 cup stone-ground yellow cornmeal
1/2 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
2 teaspoons kosher salt
1/2 teaspoon baking soda
Freshly ground black pepper
2 cups buttermilk
2 large eggs
2 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 400 degrees.
  • Melt butter in a large skillet over medium heat. Saute the celery and onion until soft and translucent, 10 to 12 minutes.
  • In a large bowl, add the celery, onion, cornbread, stuffing mix, and sage. Stir in the chicken stock and eggs and mix until completely combined. Season with a few grinds of black pepper. The mixture should be fairly soupy. Pour into a lightly greased 9 by 13-inch baking dish. Bake, uncovered, until the dressing is set and golden brown, 45 minutes to an hour.
  • Preheat the oven to 425 degrees. Grease a large cast-iron skillet and place in the oven to heat while mixing the batter.
  • In a large bowl, mix the cornmeal, flour, sugar, baking powder, salt, baking soda, and a few generous grinds of black pepper.
  • In a separate bowl, whisk the buttermilk, eggs, and melted butter together until combined. Pour into the dry ingredients and stir until just combined (it's okay if it's a little lumpy). Pour the batter into the hot cast-iron skillet and bake until the top is golden brown, about 25 minutes.
  • Immediately remove the cornbread from the skillet and allow to cool. The cornbread can be made up to 2 days in advance when using for the dressing. Store until needed, then crumble and follow instructions for the dressing.
  • If enjoying the cornbread immediately (not for the dressing recipe), remove the cornbread from the oven, invert it onto a large plate, and then flip it once more so it is right side up. Slice into wedges and serve warm with lots of butter.

This recipe has grown a few strapping boys and delighted even the pickiest gal in the bunch. Our home is always full to overflowing on Thanksgiving and Christmas. This is the one recipe that is a "must" even if we don't do turkey. This has evolved over the years to try to hit everyone's preferences. It's my own invention! It tastes good as is or will serve well with southern cream

1 lb mild ground sausage
2 diced onions
2 cups sliced celery
1 lb sliced fresh mushrooms
4 cans Swanson chicken broth
2 -3 teaspoons sage
salt & pepper (optional)
5 packets cornbread mix (each packet enough for 6 servings of cornbread)
3/4-2 cup butter or 3/4-2 cup margarine

Steps:

  • Preheat oven to 425 for cornbread.
  • Place stick of butter in bottom of roasting pan and place in oven to melt it (This will allow the cornbread to"fry" while it's baking).
  • Mix up corn bread mix according to package instructions (Usually, this will be the addition of 2/3 cups sweet milk and 1 egg per package of mix.) (Cornbread can be baked ahead, which I usually do the night before).
  • When done, use a knife and score through the cornbread to make very small cubes.
  • (You should have enough to be able to enjoy a few cubes of this buttered delight while it's still hot).
  • Brown sausage in dutch oven.
  • Add onions, celery and mushrooms and the other half stick of butter if you need more oil.
  • Saute til sausage is done and onion is translucent.
  • Add about 3 cups of cornbread and sage.
  • Let brown a bit.
  • Add rest of cornbread and stir well.
  • Turn dressing from dutch oven into the roaster pan.
  • Drizzle with chicken broth til nice and moist (This is a personal taste thing).
  • Bake at 350 for about an hour or until golden brown.
  • This makes enough for 24 to 30 servings depending on appetites.
  • Is wonderful left-over.
  • Your guests will even want to take some home with them.
  • Freezes well.
  • (I don't salt during cooking. Just place salt and pepper shakers on the table for those who want more than what's already there).

  • Preheat oven to 350 degrees F.
  • Prepare corn bread mix according to package directions. Let cool and crumble into bite size pieces.

1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon ground dried thyme
1 teaspoon ground white pepper
½ teaspoon ground black pepper
½ teaspoon cayenne pepper
½ teaspoon onion powder
1 pound ground pork
½ cup extra-virgin olive oil
¾ cup finely chopped onion
¾ cup finely chopped green bell pepper
½ cup finely chopped celery
1 tablespoon minced garlic
1 cup reduced sodium chicken broth
2 large bay leaves
5 cups crumbled cornbread
1 tablespoon chopped fresh thyme, or more to taste
1 tablespoon chopped fresh oregano, or more to taste

Steps:

  • Stir together salt, dried basil, oregano, thyme, white pepper, black pepper, cayenne pepper, and onion powder in a small bowl for seasoning mix.
  • Cook pork in a 5- to 6-quart pot over medium-high heat, stirring to break up meat, until browned, 8 to 10 minutes. Transfer to paper towels; discard grease.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish.
  • Add oil to the same pot and heat over medium-high heat. Add onion, bell pepper, celery, and garlic. Cook, stirring, until softened, about 5 minutes. Stir in seasoning mix. Add cooked pork, broth, and bay leaves; bring to a boil. Reduce heat and simmer, covered, for 20 minutes. Remove and discard bay leaves. Mix in cornbread.
  • Transfer dressing mixture to the prepared baking dish. Cover with foil.

This is how the last 5 generations of our family have made cornbread dressing. Surprised not to see this on Zar. So here is my family recipe. I was always the official taste tester. Before it went into the oven my mom would give me a bowl of it. I would tell her what seasonings needed adjusting. It became a ritual. LOL The cornbread is baked with the onion and celery in it. Really makes a difference to taste.

2 cups cornmeal (White Lily the best)
1 cup self rising flour (again White Lily is best)
1/3 cup oil
1/2 cup celery, chopped
1 onion, chopped
1 cup buttermilk
1 cup milk (more if needed)
2 eggs
4 slices bread, toasted and torn into small pieces
1 teaspoon dried sage (to taste)
1 teaspoon pepper (to taste)
3 cups hot chicken broth (more if needed)
1 tablespoon salt (to taste)
1/3 cup butter, melted

Steps:

  • Heat oven to 400 degrees .
  • Make cornbread by mixing cornmeal, flour, oil, eggs, buttermilk and milk.
  • Stir until well blended. Stir in celery and onion.
  • If the batter is too thick, add more milk. (should be pourable).
  • Pour into greased hot iron skillet (if you have one, if not get one, they aren't expensive and you can get them at Wal Mart. I have one I use just for cornbread!).
  • Bake for 30 minutes or until top is light brown.
  • When done and cooled down a bit. Crumble into a large bowl.
  • Add bread pieces, butter and seasonings. Mix well.
  • Start adding chicken or turkey broth, stirring and adding more broth as needed. (important: add broth until you think it is just right, then add more. It will soak up and dry out in the oven).
  • Adjust seasoning to taste. (appoint someone special).
  • Pour into a grease 13x9-inch (3-quart) baking dish or pan.
