BAKED BBQ CHICKEN (APPLE CIDER BBQ SAUCE)
This delicious oven baked BBQ chicken is marinated and coated in a delicious and tangy apple cider sauce for a tasty family meal. Easy to make with just a few ingredients, this recipe will make your tastebuds tingle!

Steps:
- In a bowl, stir together all the BBQ sauce ingredients. Reserve ½ cup of the sauce. Set aside.
- Place the chicken breasts in a zip top plastic bag. Add in the reserved ½ cup sauce and place in the fridge for at 1 hour, and up to overnight, to marinade.
- Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
- Simmer the BBQ sauce in a small saucepan for 10 minutes, or until thickened and fragrant.
- Place the marinated chicken on the baking sheet. Bake for 10 minutes. Remove from the oven and baste the chicken with a thick glaze of bbq sauce. Return to the oven and bake for 20-30 more minutes, basting every 10.
- Remove, baste again, and place back into the oven set to broil for 3-5 minutes until the bbq sauce forms a glaze.
- Serve with your favorite sides and enjoy!

OVEN BAKED CHICKEN KABOBS WITH TOMATO APPLE CIDER VINEGAR BBQ SAUCE WITH MAPLE APPLE CIDER VINEGAR SLAW
What you have here is a delicious yet light meal of Chicken Kabobs that are slathered with a zesty Tomato Apple Cider Vinegar BBQ Sauce and served over a Cabbage Slaw that had been tossed with a light Maple Apple Cider Vinegar Dressing.

Steps:
- First off, soak skewers in water.
- Then preheat oven to 375
- Add smoked paprika, coriander, chili powder in a small fry pan and roast over medium heat for 2-3 minutes. Make sure not to let burn.
- Then, in another pan, add olive oil, chopped onion and saute about 15 minutes.
- Add in the minced garlic cloves and saute about 2 minutes.
- Then add in the tomato paste, chili flakes, North Coast Apple Cider Vinegar,
- honey, tomatoes, and the 3 spices that were roasted and mix well.
- Remove from the heat.
- Using a handheld mixer blend all the ingredients so it's not too chunky. You can also use a food processor.
- Season with salt and pepper.
- Mix the cut chicken breasts with 1/2 cup of the tomato apple cider vinegar sauce.
- Then place chicken on soaked skewers, and bake for 20 minutes.
- Serve with Maple apple cider vinegar slaw.
- Add North Coast Apple Cider Vinegar, maple syrup, himalayan salt and pepper to a bowl and mix well.
- Place the chopped red and green cabbage and the carrots and sesame seeds in a bowl.
- Pour in the maple apple cider vinegar dressing. Toss slaw with dressing and serve with tomato apple cider vinegar glazed chicken kabobs.

OVEN BAKED BBQ CHICKEN - WITH QUICK HOMEMADE BARBECUE SAUCE

Made with a quick homemade BBQ sauce, the chicken is braised in the sauce which is loaded with extra flavour from the juices of the chicken. Fabulous sticky glaze, juicy inside!

- Preheat oven to 200°C/390°F.
- Sauce: Mix all Sauce ingredients in a ceramic/glass baking dish (Note 3), then mix in water.
- Add chicken and turn to coat. Place chicken skin side down.
- Bake for 20 minutes. Remove from oven, turn chicken, spoon over Sauce.
- Bake for a further 30 minutes, then remove and spoon over Sauce.
- Skim off fat (optional): Tilt pan and spoon or drain off excess fat.
- Broil/grill - Change to broiler/grill on high. Spoon sauce over chicken generously, then place under grill / broiler for 2 to 3 minutes to caramelise the chicken and the sauce to thicken more. Do not walk away - this can happen quickly!
- Serve chicken, garnished with parsley or green onions, if using. Pictured in post with Mashed Potato and Green Bean Salad (minus feta).
