FRIED CABBAGE

Fried Cabbage image

When I was young, my family grew our own cabbages. It was fun to put them to use in the kitchen, just as I did with this comforting side. With potatoes, deviled eggs and cornbread, fried cabbage tastes like home. -Bernice Morris, Marshfield, Missouri

FRIED CABBAGE

Fried Cabbage image

This fried cabbage recipe is easy and delicious. It's the perfect way to use your fresh from the garden cabbage heads

Provided by Mary Bostow

Categories     Side Dish

Number Of Ingredients 5

6 slices thin or thick cut bacon
salt and pepper to taste
1 medium cabbage head with the core removed, shredded, then cut into small pieces
1 large onion, diced
1 Teaspoon white sugar

Steps:

  • Place the 6 slices of bacon into a large frying pan over medium heat. Fry the bacon until it's fully cooked through. Remove the cooked bacon from the frying pan , reserving the bacon grease in the pan. When the bacon has cooled, crumble it and set it to the side. Add the shredded cabbage , diced onion and sugar to the pan with the bacon grease. Cook the cabbage and onions in the pan, turning the cabbage with a spatula until it wilts down and becomes soft. Continue cooking if you like until it browns slightly. Add the crumbled bacon to the pan and mix it in by folding it into the cabbage with a spatula. Salt and pepper the cabbage to taste before serving.

BEA'S BAKED CABBAGE

Bea's Baked Cabbage image

Paprika and red pepper were our seasonings of choice! This cooking technique made for perfectly done cabbage... that would be great with a few cubed red potatoes thrown in too!

Provided by Bea L.

Categories     Vegetables

Number Of Ingredients 8

1 head of cabbage
1 or 2 pats of butter
olive oil
salt & pepper
water
sprinkle of sugar (optional)
paprika (optional)
crushed or ground red pepper (optional)

Steps:

  • 1. Preheat oven to 350 to 375, depending on how hot of oven you have. Spray roaster pan or deep casserole dish on sides and bottom.
  • 2. Cut cabbage into strips and place them into the pan or dish. Pour olive oil over cabbage (you be the judge of the amount). Put a pat of butter or two on top then salt & pepper to your liking. Put just enough water to basically cover the bottom...no more than a fourth way up.
  • 3. Cover and bake for approximately 45 minutes. Remove lid and continue to bake until water has evaporated. Stir occasionally.
  • 4. I bake mine until it's real tender and has started to brown only because that's the way that I like it. My total time of baking is probably 1 hour & 15 minutes. You can bake it to the tenderness that you prefer.
  • 5. NOTE: Rudy doesn't use olive oil. She uses only butter...probably 1 to 2 sticks! Nor does she use paprika or red pepper. Yeah, she's worse than I am...LOL!!!!!
  • 6. *You don't have as much aftertaste as you do when it's boiled. You also don't have that "green fly" that seems to come around when cooking cabbage.
  • 7. **I added potatoes on top as Janet suggested and it was wonderful! I'll make them like that again. Thanks for the suggestion, Janet!:D
  • 8. 6/17/14: Since it was 99 degrees today and I had fresh cabbage that needed cooking I decided to experiment to see how it would be done in a crockpot. It is very good and push comes to shove I would do this again. Ideally, it would be great to use the crockpot on the patio or deck because I found that it has a much stronger smell this way than baking it in the oven. Go figure. It took 4 1/2 hours on high for one head of cabbage.

OLD-FASHIONED CABBAGE ROLLS

Old-Fashioned Cabbage Rolls image

It was an abundance of dill in my garden that led me to try this. My family liked the taste so much that, from then on, I made my old-fashioned cabbage rolls recipe with dill. This is how to make easy cabbage rolls. - Florence Krantz, Bismarck, North Dakota

Provided by Taste of Home

Categories     Dinner

Time 1h55m

1/8 teaspoon cayenne pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 teaspoon sugar

BAKED CABBAGE

Baked Cabbage image

The bacon adds flavor while the browned butter adds it's own unique taste. It's absolutely delicious! This is a baked cabbage recipe your whole family will love.

Provided by Mary Bostow

Categories     Side Dish

Time 50m

Number Of Ingredients 5

One head green cabbage cleaned (cut into wedges, core removed from wedges)
4 slices uncooked bacon (cut into pieces)
Salt and pepper
drizzle of olive oil
1/4 cup butter (melted and browned)

Steps:

  • Preheat the oven to 450 degrees.
  • Cut the cabbage head in half. Cut each half again, making four wedges. Cut each of the 4 wedges to make a total of 8 wedges. Cut the core from each wedge on an angle.
  • Place the wedges in a roasting pan. Salt and pepper the wedges, drizzle with a little bit of olive oil and lay the bacon pieces on the wedges.
  • Using a small saucepan over low heat, melt 1/4 cup of butter. Cook and stir until the butter turns brown (being careful not to over cook, it will burn quickly). Drizzle over cabbage.
  • Bake with the pan covered with foil for 30 minutes. Remove the foil, bake another 30 minutes or until cabbage is tender and starting to turn golden brown, serve immediately.

CABBAGE STEAKS

Cabbage Steaks image

Roasted Cabbage Steaks are an easy, flavorful side you can eat with so many things. Just slice a head of cabbage then bake or grill it to crispy perfection!

Provided by Erin Clarke / Well Plated

Categories     Side Dish

Time 30m

Number Of Ingredients 8

1 small head green cabbage (any dark, loose leaves removed)
1/4 cup extra virgin olive oil
2 cloves garlic (minced)
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/3 cup raw pecan halves or walnut halves (optional)
1 small lemon (halved (optional but very good))
For serving: grated Parmesan (highly recommended) (chopped fresh herbs, such as thyme or parsley (optional))

Steps:

  • Preheat oven to 400 degrees F. Generously coat a rimmed baking sheet with nonstick spray and set aside.
  • Cut off the bottom (root) end of the cabbage and place it on a cutting board sitting up so that the flat end is on the cutting board. Cut top to bottom into 3/4- to 1-inch thick slices. Place on the prepared baking sheet. If you have more slices than fit on your baking sheet without touching, divide them between two baking sheets.
  • In a small bowl, whisk together the olive oil, garlic, salt, and pepper. Brush over one side of the cabbage, then flip the cabbage over and brush the other side. Roast the cabbage for 26 to 28 minutes, or until crispy at the edges and tender in the center. (If you are using one pan, roast it on the center rack; if two, use the the upper and lower-third racks.) Halfway through the baking time, rotate the pan(s) 180 degrees; if you are using two pans, switch their positions on the upper and lower racks at this point too. No need to flip the cabbage over. Don't worry about any extra crispy, dark leaves around the very outsides; they'll taste incredible.
  • While the cabbage bakes, toast the pecans in the oven at the same time: spread the pecans onto a small, ungreased baking sheet. Toast them in the oven with the cabbage until fragrant and the center of a pecan is light tan when broken in half, about 8 minutes, tossing them once halfway through. DO NOT WALK AWAY during the last several minutes of baking. Nuts love to burn the second you do. Remove the pecans from the oven and transfer immediately to a cutting board (if you leave them on the hot pan and they are super toasted already, they may burn). Let cool, then roughly chop.
  • Sprinkle the roasted cabbage with Parmesan and fresh herbs. Squeeze the lemon over the top, then finish with the chopped pecans. Serve hot.
