1/4 teaspoon pepper
1 egg
2 tablespoons water
2/3 cup crushed corn flakes
1 tablespoon grated parmesan cheese
1/8 teaspoon cayenne pepper
1 lb haddock fillets or 1 lb the fish, of choice

Steps:

  • Preheat oven to 425°F.
  • Combine flour and pepper in a shallow bowl.
  • In a second bowl, combine egg and water.
  • In a third bowl, combine corn flakes, cheese and cayenne.
  • Dredge fish in flour mixture, then egg mixture and coat with corn flakes.
  • Place fish fillets on a baking sheet that has been coated with a nonstick cooking spray.
  • Bake at 425°F for 10-15 minutes, or until fish flakes easily with a fork.

4 to 6 large speckled trout fillets or other whitefish*
1 tablespoon olive oil
1/4 cup unsalted butter, melted
1/2 teaspoon kosher salt, or to taste
1/4 teaspoon freshly cracked black pepper
1 teaspoon Old Bay seasoning
1 teaspoon Creole or Cajun seasoning (like Slap Ya Mama) {affil link}, or to taste, optional
Zest of one lemon
1 tablespoon sliced green onion
2 teaspoons chopped fresh parsley
1 lemon, cut into wedges

Steps:

  • Preheat oven to 375 degrees F.
  • Brush a foil lined baking sheet with olive oil. Drain fish, pat dry and place onto the baking sheet.
  • In a small bowl, combine the salt, pepper, Old Bay and Cajun seasoning; set aside.
  • Mix 1 tablespoon of olive oil with melted butter. Brush trout with the half of the olive oil butter blend, reserving the remainder. Sprinkle seasoning mixture evenly on top.
  • Use a microplane to zest lemon on top of the fish and bake, uncovered, at 375 degrees F for approximately 8 to 10 minutes per inch of thickness, or until fish is mostly opaque throughout and flakes easily, taking care not to overcook.
  • Test in the thickest part of the fillet with the tip of a sharp knife. Actual time will be dependent on the size and thickness of the fillets.
  • Drizzle reserved butter mixture on top of each fillet, sprinkle with green onion and parsley; serve immediately.

1/2 cup Gefen Low-fat Mayonnaise
1 tablespoon freshly squeezed lemon juice
oil, for smearing
1 cup Gefen Bread Crumbs
1/2 teaspoon Haddar Kosher Salt
1/4 cup sweetened shredded coconut flakes (optional)

Steps:

  • Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).
  • Combine mayonnaise and lemon juice in a bowl and mix well.
  • Smear a baking sheet with a very thin layer of oil.
  • Place the bread crumbs, kosher salt, and coconut, if using, in another bowl and mix.

It's just enough time to cook the flesh through so that it's opaque, but not so much that it flakes. The only hitch comes with fillets that are uneven. Use your judgment but err on the side of less is more. You can always put any undercooked parts back in the oven, but you can't undo overdone. Serve these as is in their purist form, or add your favorite sauce on the side. A pesto, aioli or vinaigrette would work well.

  • Melt butter in large glass Pyrex measuring cup and add lemon juice, spices and sugar.
  • Place bread crumbs in a shallow bowl or platter.
  • Spray a shallow baking dish with vegetable spray.
  • Cut fish into individual serving pieces.
  • Dip fish into butter and then coat each fillet well with bread crumbs.
  • Place bread coated fillets into baking dish.
  • Repeat until all fish fillets are covered.
  • Spoon the remaining herb butter mixture over fish.
  • I also use a pastry brush to lightly tap the tops of the breaded fish to make sure it is all cover.
  • You may need to melt more butter to coat fish.
  • Bake, uncovered, for 15 minutes at 400 degrees.
  • Fish is done when fish flakes easily with a fork.
