SWEDISH OVEN PANCAKE WITH BACON
An easy and very tasty oven baked Swedish pancake with bacon - perfect for a busy weekend brunch or breakfast. Try to use high quality smoked bacon for a better flavour and taste.

Steps:
- Snip bacon into bite-sized pieces and spread in 9" x 13" baking or oven proof dish. Place in pre-heated 180C/375F oven until bacon is slightly crispy but not dried out.
- Whilst the bacon is cooking, beat the eggs until frothy. Add salt, milk, and then the flour very gradually.
- Remove bacon from oven. Gently pour the egg mixture over the bacon.
- Return to oven for about 20 to 30 minutes, or until the pancake is puffed up & golden.
- Serve immediately, whilst still puffed up.
- For a traditional way of serving, garnish with: lingonberry jam, sour cream and brown sugar, or maple syrup.

Steps:
- Preheat oven to 450°F.
- To remove saltiness of pork, cover it in water in a small saucepan and boil for 2 minutes. Drain and repeat.
- Cut pork fat into small cubes. Cook the pork in a large skillet until crisp, then drain on paper towels.
- In a food processor, combine the eggs, milk, flour and lemon zest. Process until blended (or whisk in a large bowl).
- Place a 3 quart paella pan (or other low-rimed oven-proof pan) in the oven with the butter until the butter melts. Remove the pan from the oven and tilt until the butter evenly covers the bottom.
- Pour the batter into the pan and sprinkle the pork pieces evenly over the batter.
- Return the pan to the oven and bake until golden and fluffy, about 20 minutes.
- Serve at once. Dust with powdered sugar and serve with berries and whipped cream.

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Spread bacon squares into a 9x13-inch baking dish.
- Cook bacon under preheated broiler until brown, 7 to 10 minutes.
- Preheat oven to 425 degrees F (220 degrees C).
- Beat eggs, sugar, and salt together in a bowl; add milk and flour alternately while mixing with a spoon to make a thin batter. Pour batter into the hot baking dish with the bacon.

This Finnish oven pancake is a delicious pancake that is light and fluffy like a soufflé.

- Place an 11x13-inch baking pan into the oven. Preheat the oven to 425 degrees F (220 degrees C) with the pan in place.
- Beat eggs in a large bowl with a wire whisk; add milk, lemon zest, white sugar, and salt and beat together. Add flour and beat until mixture is very smooth. Mix in lemon juice until incorporated.
- Place the butter into the preheated pan and allow it to melt until it is bubbling. Spread the butter over the entire bottom of the pan by rocking it back and fourth. Pour the batter in the buttered pan.
- Bake in the preheated oven until top of the pancake is lightly browned and puffed, 20 to 30 minutes. Mix coarse sugar and cardamom together and sprinkle over the top. Cut and serve.

PANNUKAKKU (FINNISH OVEN PANCAKE)
I first ate pannukakku while living in Finland on a religious mission. It tastes something like a mix between a German pancake and custard. In Finland, it is usually served as a dessert with jam on top, but we like to eat it for breakfast with pancake syrup on top as well. It is now my kids' favorite breakfast and is requested regularly.

- In a medium bowl, beat eggs with 1 cup of milk until well blended, then stir in salt, sugar & flour to make a smooth batter.

Steps:
- Whisk eggs together before adding rest of ingredients.
- Place 1 teaspoons margarine into large frying pan or a flat griddle.
- Set stove on medium high heat.
- Add just about a 1/2 cup of the batter to the frying pan.
- Making sure the whole bottom of your frying pan is covered with the batter.
- Turn batter over when top looks done.
- The pancakes should be very thin, looking like crepes.
- Take out of pan and set aside to partially cool on waxed paper until you are done with the rest of your batter.
- Take each pancake and spread 1 tablespoon of lingenberry preserves or any type of jelly, jams, or preserves you have on hand inside pancake and roll closed.
- Place rolled pancakes onto plate and sprinkle with powdered sugar.
- Serve and enjoy.
- ANOTHER VERSION OF THESE WONDERFUL PANCAKES IS:.
- Spread 1 tablespoon of cooked ground beef, shrimp or crab meat filling into each cooked pancake.
- Roll up pancakes and place tightly together in a 8" square baking pan.
- Top with a blend of your favorite shredded cheese to put on top.
- You can bake them at 400 degrees F. for about 5-10 minutes. Just until cheese is melted.
- Serve and ejoy.
