ROASTED GREEN BEANS
A great alternative to fast-food French fries. My family and friends love these as a snack or hors d'oeuvre. No matter how many I make, it's never enough!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Pat green beans dry with paper towels if necessary; spread onto a jellyroll pan. Drizzle with olive oil and sprinkle with salt and pepper. Use your fingers to coat beans evenly with olive oil and spread them out so they don't overlap.
- Roast in the preheated oven until beans are slightly shriveled and have brown spots, 20 to 25 minutes.

OVEN ROASTED CARROTS AND GREEN BEANS
Oven Roasted Carrots and Green beans make a simple vegetable side dish with lots of flavor from sliced shallots and italian seasoning.

Steps:
- Preheat oven to 425 degrees Fahrenheit.
- Trim your green beans to remove the stems.
- Peel carrots and trim ends. Halve or quarter carrots if they are thick, ideally to a similar thickness of the green beans so they cook at a similar rate.
- Peel shallot and slice into thin strips.
- Coat with olive oil and then sprinkle with italian seasoning, salt, and pepper. Toss to coat. (I like to season my vegetables right on the baking sheet as it cuts down on dishes, but feel free to season them in a large bowl if you prefer).
- Spread into a single layer on a sheet pan.
- Place vegetables in the oven and bake for 25-30 minutes until the veggies start to brown and are cooked through but firm.

GLAZED CARROTS AND GREEN BEANS
This simple dish is always a big hit, even with non-vegetable lovers. I've substituted frozen green beans for fresh, omitting the blanching process, and it still tastes great.

- In a large saucepan, bring water to a boil. Add carrots; cover and cook for 1 minute. Add beans; cover and cook 2 minutes longer. Drain and immediately place vegetables in ice water. Drain and pat dry. , Place the vegetables in a large skillet; add broth and butter. Bring to a boil; cook, uncovered, for 2-3 minutes or until liquid is reduced to about 2 teaspoons. Add the sugar, salt and pepper; cook and stir for 1 minute.

- Add the red onion, green beans and carrots to a large rimmed baking sheet. Drizzle with the olive oil, then sprinkle with the garlic, rosemary, salt and pepper. Toss to combine then spread in an even layer.
- Bake for about 25 to 30 minutes, stirring once halfway through, or until the veggies are tender to your liking.
- Season with additional salt and pepper to taste if needed (I usually add about ¼ teaspoon more salt), then serve.
