GLAZED APPLE BUNDT CAKE
Tender and moist homemade apple Bundt cake smothered in a buttery brown sugar glaze. Your new favorite cake for the crisp fall weather.

- Preheat oven to 325°F (163°C). Spray a 10-12 cup Bundt pan with nonstick spray. Set aside.
- Whisk the flour, baking soda, cinnamon, nutmeg, and salt together in a large bowl until combined. Set aside. In a medium bowl, whisk the oil, yogurt, brown sugar, granulated sugar, eggs, and vanilla together until combined and creamy. Pour the wet ingredients into the dry ingredients and slowly whisk until no large lumps remain. Try to avoid over-mixing. Carefully fold in the apple chunks. If you feel 3 large apples is too much, feel free to cut down to 2 apples. I like a lot of apple chunks in my cake!
- Spoon/pour the thick batter into the prepared bundt pan. Bake for 55-75 minutes or until a toothpick inserted in the cake comes out clean. The baking times may vary depending on your oven, if you used a 10 cup bundt pan or 12 cup, or if you used less apple chunks. Keep your eye on the cake after 55 minutes. Feel free to cover the cake loosely with aluminum foil about halfway through to prevent heavy browning on top. Allow the cake to cool in the pan set on a wire rack, then invert onto a serving plate once cooled and ready to serve.
- As the cake cools, prepare the brown sugar glaze. Combine the butter, brown sugar, and heavy cream in a medium saucepan over medium heat. Stir constantly as the mixture comes to a simmer and then a rapid boil. Once boiling, stop stirring and allow to boil for 1 minute. Turn the heat down to low, give it a quick stir, and let simmer for 1 minute. Remove from heat and whisk in the sifted confectioners' sugar. Allow glaze to cool and slightly thicken for at least 10 minutes. Spoon glaze over the cake right before serving. If your glaze thickens up too much before serving the cake, warm in the microwave for 15 seconds and stir until smooth.
- I like this cake warm, at room temperature, and even cold. Cover leftovers and store at room temperature for 3 days or in the refrigerator for up to 5 days. Flavor is outstanding on day 2!

- Grease a 9x13-inch baking dish.
- Whisk flour, cardamom, baking powder, baking soda, and salt together in a bowl.
- Beat white sugar, butter, and 1/2 cup brown sugar together in a bowl until creamy. Add buttermilk and eggs; beat until smooth. Gradually add flour mixture, mixing until just-combined. Fold in apples and pour batter into prepared baking dish.
- Stir 1/2 cup brown sugar and pecans together in a bowl; sprinkle over batter. Cover the baking dish with plastic wrap and refrigerate, 8 hours to overnight.

EASIEST EVER MOIST APPLE CAKE
A very moist, perfectly spiced Apple Cake! This is incredibly easy to make - no mixer required. This must be made with fresh apples, not canned. See note 5 for information about different measures in different countries & different oven types. Also, I do not recommend substituting butter for all or part of the oil - it does not come out as moist and you can't taste buttery flavour anyway because of the spice flavourings! FREEZES great!

- Preheat oven to 180°C/350°F (all oven types).
- Grease and line a 21 cm / 9" springform cake pan. (Note 4)
- Place flour, baking soda, salt and spices in a large bowl and whisk to combine.
- Whisk oil and sugar in a bowl, then whisk in eggs and vanilla.
- Pour the wet ingredients into the dry and mix with a wooden spoon until JUST combined. Stir through apple (optional: add 3/4 cup chopped walnuts or other nuts).
- Pour into cake pan. Sprinkle over almonds.
- Bake for 50 minutes - 1 hr. Check at 50 minutes - it is cooked when a skewer inserted into the centre comes out clean.
- Cool for 10 minutes before turning out onto a rack to cool. Dust with icing sugar if using, then serve. This cake doesn't need cream or ice cream because it is so moist, but I wouldn't turn it down!

- Preheat oven to 350 degrees F.
- In a large bowl, cream together the butter and sugar until well blended. Add the eggs and mix well.
- Stir in the freshly grated apple. It may seems like the grated apple is completely taking over the dish - this is a good thing :).
- In a separate bowl, mix together the dry ingredients. Add to the wet ingredients and mix, just until incorporated.
- Bake in a greased 9x13 inch pan for 40-50 min, or until a toothpick inserted in the center of the cake comes out clean. (Depending on how large your apples were, you may need to cook it a little longer than 50 minutes).
- Allow the cake to cool for at least 10 minutes. Serve warm with caramel sauce and whipped cream or ice cream.

- Mix flours, oats, baking powder, soda, salt, flax seed meal and 1 tsp cinnamon in a bowl and set aside.
- In another bowl, mix granulated sugar, oil, 1/4 cup brown sugar and egg. Mix in buttermilk and flour mixture. Fold in apples.
- Pour into a 9x13-inch greased baking pan.
- For topping, combine remaining 1/4 cup brown sugar, walnuts and 1 tsp cinnamon and sprinkle over batter. Cover with foil and put in refrigerator until next morning.

OVERNIGHT APPLE CAKE
I came across this recipe while perusing some lovely foodie blogs. The title intrigued me and this simple recipe, as yet untested sounds like it will be delicious. Not really a cake as there is no flour, just delicious slow cooked apples.

- Preheat the oven to 175°F Choose a 6-cup souffle/ovenproof dish, generously grease it with one tablespoon of butter. Cut a round of parchment to fit inside the dish, generously grease it on one side with the remaining tablespoon butter.
- Place the sugar in a bowl. Zest about 1 tablespoon of the orange zest into the sugar bowl, rub the zest into the sugar with your fingertips. Halve the orange and squeeze its juice into another bowl. Peel the apples, core them, and thinly slice them into rings (if you don't want to bother coring, simply halve them and thinly slice). Add the apple slices to the bowl with the orange juice as you work to prevent discoloring, tossing them to coat.
- Layer the apple slices, overlapping them, in the prepared dish, sprinkling each layer with a little of the sugar. Place the parchment round, buttered-side down, over the apples. Place in the oven for 12 hours.
- Remove the apple dish from the oven, there should be a good amount of bubbling juice. Pressing down on the parchment with an oven mitt, pour off the juice into a sauce pan. Bring the juice to a simmer and boil until brightly colored and thickened. Meanwhile, invert the apple cake onto a serving plate. Drizzle with the juices.
