OYSTER CASSEROLE

Number Of Ingredients 15

5 tablespoons butter (divided)
1/2 cup finely chopped yellow onion
1/3 cup finely chopped red bell pepper
1/3 cup finely chopped celery
1 (4-ounce) package mushrooms, (sliced)
1 garlic clove, (minced)
3 (8-ounce) containers fresh oysters, (drained)
2 tablespoons all-purpose flour
2/3 cup heavy cream
1/3 cup freshly grated Parmesan cheese
3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground nutmeg
1 cup panko crumbs
2 green onions, (sliced)

Steps:

  • Melt 2 tablespoons butter in a pan over medium-high heat. Add onion, bell pepper,celery, and mushrooms. Cook, stirring frequently until vegetables are soft, about 5 to 7 minutes.
  • Add garlic and cook 1 more minute.
  • Add drained oysters and cook, stirring frequently, until oysters are about halfway cooked. Pour entire contents of pan (oysters and vegetables) through a fine-meshed sieve and discard all liquid. Transfer everything in the sieve to a greased 11x7-inch baking pan. Season lightly with salt and pepper.
  • In a small saucepan, melt 1 tablespoon butter. Add flour and cook and stir for 1 minute.
  • Gradually whisk in cream and cook until it begins to simmer and thicken.
  • Add Parmesan cheese, whisk until melted, and remove from heat. Stir in salt, pepper, and nutmeg. Pour over the oysters.
  • Melt remaining 2 tablespoons butter. Toss with Panko crumbs and green onions. Sprinkle on top of casserole.
  • Place under broiler and broil until Panko crumbs are golden brown and mixture is bubbly.

1-1/2 cups crushed butter-flavored crackers (about 38 crackers)
1/2 cup butter, melted
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
1 pint shucked fresh oysters, drained
1/3 cup condensed cream of mushroom soup, undiluted
2 tablespoons milk

Steps:

  • In a small bowl, toss the cracker crumbs and butter. In another bowl, combine the salt, nutmeg and pepper. In a greased 11x7-in. baking dish, layer half of the crumbs, half of the oysters and 1/4 teaspoon of seasoning mixture., Combine soup and milk; pour over the top. Layer with remaining oysters and another 1/4 teaspoon of seasoning mixture. Top with remaining crumbs and seasonings. Bake, uncovered, at 400° for 20-25 minutes or until hot and bubbly.

1 cup butter, melted
½ (16 ounce) package saltine crackers, crushed
2 (8 ounce) cans oysters
1 ½ tablespoons heavy whipping cream
1 teaspoon Worcestershire sauce
2 (14.75 ounce) cans cream-style corn

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 9x13 inch casserole dish. Drain the oysters, reserving juice.
  • In a small mixing bowl combine margarine and crushed saltine crackers. Cut the oysters into small pieces, set aside. In a small mixing bowl combine cream, oyster juice and Worcestershire sauce.
  • Spread one can of corn onto the bottom of the casserole dish. Layer 1/2 of the oysters over the corn, 1/2 of the cracker mixture. Repeat layering with remaining ingredients. Pour the oyster juice mixture over the top of the entire casserole. Cover the casserole dish with aluminum foil.
  • Bake casserole for 20 minutes. Remove foil and bake an additional 30 minutes.

12 slices bacon
¼ cup butter, melted
3 cups croutons
2 cups grated Cheddar cheese
6 eggs
1 ¾ cups milk
1 bell pepper (any color), diced
1 tablespoon prepared mustard
salt and pepper to taste

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Melt butter in the microwave, or in a small pan on the stove over low heat. Spray a 9x12 inch baking dish with vegetable spray. Place croutons in the bottom of the dish, and drizzle with melted butter. Sprinkle with grated Cheddar cheese.
  • Crack the eggs into a bowl, whisking to break up the yolks. Add milk, peppers, mustard, salt, and pepper, and beat until well-combined. Pour over the croutons and cheese, and sprinkle with crumbled bacon.
  • Bake in the preheated oven for 40 minutes. Remove from oven and allow to stand 10 minutes before serving.

3 lbs cooked fresh seafood (shrimp, scallops, oysters, clams)
1 cup cooked rice
2 tablespoons butter
1/2 cup chopped red pepper
1 cup sliced mushrooms
1 cup chopped celery
1/2 cup chopped vidalia onion
3/4 cup heavy whipping cream
1 (10 3/4 ounce) can cream of mushroom soup
1 cup mayonnaise
1 tablespoon Worcestershire sauce
black pepper or cayenne pepper

Steps:

  • in large nonstick skillet over medium heat saute/sweat in butter the red pepper, mushrooms, celery and onions.
  • if seafood isn't cooked you can cook it in some boiling water with very little salt if any or maybe a pinch of oldbay seasoning.
  • mix all ingredients into a casserole dish that is either buttered or sprayed to prevent sticking.
  • bake at 375 degrees for about 40 minutes until cook through.

1 cup coarsely crumbled saltine crumbs
1 quart shucked fresh oyster, rinsed well of grit (30-40, depending on size)
1/4 cup chopped green onion
1/4 cup chopped fresh parsley
1 tablespoon fresh lemon juice
salt
1/2 teaspoon black pepper
1 teaspoon Worcestershire sauce
1/2 cup butter
1 cup light cream
1/2 cup milk
Tabasco sauce
paprika

Steps:

  • Preheat oven 400 degrees.
  • Drain oysters well after rinsing.
  • Generously grease a 1 1/2-quart casserole dish with low sides.
  • Sprinkle half of the cracker crumbs over the bottom.
  • Lay half of the oysters on top of the crumbs, then sprinkle with half of the onions, parsley, lemon juice, salt, pepper and Worcestershire sauce.
  • Dot generously with butter and pour on half of the cream and milk.
  • Repeat layers but save the remaining crumbs for the top.
  • Garnish with paprika, using enough to make it really red.
  • Bake for 30 minutes. Serve hot. with tabasco sauce.
