Palak paneer recipe - Indian cottage cheese simmered in onion tomato spinach gravy. This palak paneer is one of the best you can make at home. Tastes simply delicious, creamy and easy to make. Serve with roti, basmati rice or naan.

1¼ cup paneer ((150 grams) Indian cottage cheese)
3½ to 4 cups palak ((spinach) (100 to 120 grams) (2 cups tightly packed))
2 tablespoons oil ((or 1 tbsp oil & 1 tbsp butter))
2 green chilies ((deseeded) (less spicy kind))
¾ cup onions ((fine chopped) (2 small, 90 grams))
½ cup tomatoes ((deseeded & chopped) or puree (2 small))
1 teaspoon ginger garlic paste ((or 1 tsp each fine chopped))
¾ teaspoon salt ((adjust to taste))
8 to 10 cashewnuts (or 7 blanched almonds )
½ to ¾ teaspoon garam masala ((adjust to taste))
½ teaspoon kasuri methi ((dried fenugreek leaves) (skip if you don't have))
3 tablespoons cream ((optional))
⅛ teaspoon cumin seeds ((jeera) (optional))
2 green cardamoms ((elaichi) (optional))
1 inch cinnamon ((dalchini) (optional))
2 cloves ((laung) (optional))

Steps:

  • Pluck only the young & tender spinach leaves and discard the stems as they may leave a bitter taste. If using baby spinach you can use the stems as well.
  • Add them to a large pot of water. Rinse them well few times & drain to a colander.
  • Allow the water to drain completely otherwise it will let out lot of moisture while cooking.
  • Heat half tablespoon oil in a pan. Saute green chilies, cashews and spinach for 3 to 4 mins until the leaves wilt off thoroughly & raw smell of spinach has gone away. [OR another option is to blanch the palak in 4 cups of hot water with ¼ tsp salt for 2 mins. Then immerse in ice cold water. Drain completely.]
  • Cool this completely. Blend this along with ¼ cup water to a smooth puree. The puree should be smooth and thick. You may add 1 to 2 tbsps more water to help in blending.
  • Heat 1 tablespoon butter and half tablespoon oil to the same pan, Once they melt, add cinnamon, cardamoms, cloves & cumin seeds.
  • When the spices begin to sizzle, add onions and fry till they turn transparent to golden.
  • Next saute ginger garlic paste for 1 to 2 minutes or until you begin to smell it nice.
  • Then add tomatoes with salt. Saute until they break down and turn mushy.
  • Add garam masala & saute until the masala smells good. This may take 2 mins. (for a smoother curry refer notes)
  • Pour ¾ cup water and cook covered until onions are completely soft. There should be some water left in the pan. (for consistency check video)
  • Lower the flame, add kasuri methi and pureed spinach. Mix well and cook until it begins to bubble for about 2 to 3 mins. If the curry is too thick you may add a few tbsps of hot water.
  • Avoid overcooking. Add paneer & mix well. Turn off and remove to a serving bowl. Optionally garnish with cream.
  • Serve palak paneer with naan, roti or Jeera rice.

1 teaspoon turmeric
1/2 teaspoon cayenne
Kosher salt
3 tablespoons plus 1 1/2 tablespoons vegetable oil
12 ounces paneer, (Indian cheese, either store-bought or made from my recipe, recipe follows), cut into 1-inch cubes, see Cook's Note*
1 (16-ounce package) frozen chopped spinach
1 medium white onion, finely chopped
1 (1-inch thumb) ginger, peeled and minced (about 1 tablespoon)
4 cloves garlic, minced
1 large green serrano chile, finely chopped (seeds removed if you don't like it spicy!)
1/2 teaspoon store-bought or homemade garam masala, recipe follows
2 teaspoons ground coriander
1 teaspoon ground cumin
1/2 cup plain yogurt, stirred until smooth
Cheesecloth
8 cups whole milk
1/4 cup freshly squeezed lemon juice, plus more as needed, see Cook's Note*
3 large cinnamon sticks (if you have the kind you get at Indian stores, it's about 3 tablespoons of cinnamon bark bits)
3 tablespoons whole cloves
1/4 cup green cardamom pods, shelled, husks discarded (about 2 tablespoons of seeds)
4 large black cardamom pods, shelled, husks discarded (about 1 tablespoon of seeds), optional

Steps:

  • In a large bowl, whisk together the turmeric, cayenne, 1 teaspoon salt and 3 tablespoons oil. Gently, drop in the cubes of paneer and gently toss, taking care not to break the cubes if you're using the homemade kind. Let the cubes marinate while you get the rest of your ingredients together and prepped.
  • Thaw the spinach in the microwave in a microwave-safe dish, 5 minutes on high, then puree in a food processor until smooth. Alternatively, you can chop it up very finely with your knife.
  • Place a large nonstick skillet over medium heat, and add the paneer as the pan warms. In a couple of minutes give the pan a toss; each piece of paneer should be browned on one side. Fry another minute or so, and then remove the paneer from the pan onto a plate.
  • Add the remaining 1 1/2 tablespoons oil to the pan. Add the onions, ginger, garlic and chile. Now here's the important part: saute the mixture until it's evenly toffee-coloured, which should take about 15 minutes. Don't skip this step - this is the foundation of the dish! If you feel like the mixture is drying out and burning, add a couple of tablespoons of water.
  • Add the garam masala, coriander and cumin. If you haven't already, sprinkle a little water to keep the spices from burning. Cook, stirring often, until the raw scent of the spices cook out, and it all smells a bit more melodious, 3 to 5 minutes.
  • Add the spinach and stir well, incorporating the spiced onion mixture into the spinach. Add a little salt and 1/2 cup of water, stir, and cook about 5 minutes with the lid off.
  • Turn the heat off. Add the yogurt, a little at a time to keep it from curdling. Once the yogurt is well mixed into the spinach, add the paneer. Turn the heat back on, cover and cook until everything is warmed through, about 5 minutes. Serve.
  • Line a large colander with a large double layer of cheesecloth, and set it in your sink.
  • In a large wide pot, bring the milk to a gentle boil over medium heat, stirring frequently to avoid burning the bottom (a nonstick pot works really well for this purpose). This will take a little while so be patient!
  • Add the lemon juice and turn the heat down to low. Stirring gently, you should almost immediately see the curds (white milk solids) and whey (the greenish liquid) separate. Don't fret, this is perfect!
  • Remove the pot from the heat and carefully pour the contents into the cheesecloth-lined colander. Gently rinse with cool water to get rid of the lemon flavor. At this point, you could squeeze out some of the liquid, and serve with some honey and some nuts, almost like a fresh ricotta!
  • Grab the ends of the cheesecloth and twist the ball of cheese to squeeze out the excess whey. Tie the cheesecloth to your kitchen faucet and allow the cheese to drain for about 5 minutes.
  • Twisting the ball to compact the cheese into a block, place it on a plate with the twisted part of the cheesecloth on the side (this will ensure your block of cheese is nice and smooth!) and set another plate on top. Weigh the second plate down with cans of beans or a heavy pot. Move to the refrigerator and let it sit about 20 minutes.
  • Combine the cinnamon sticks, cloves, green cardamom seeds, black cardamom seeds, if using into a spice grinder or coffee grinder and grind until fine. Store the spice mix in an airtight container away from direct sunlight.

4 bunches fresh spinach
1/4-1/2 teaspoon asafoetida powder (hing)
2 tomatoes
1 green chili pepper
2 tablespoons gingerroot
6 -8 ounces panir (curd cheese)
1/2 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon turmeric
2 teaspoons coriander
1 teaspoon garam masala
8 tablespoons whole milk or 8 tablespoons heavy cream
1 -2 tablespoon ghee (clarified butter) or 1 -2 tablespoon oil
water

Steps:

  • Chop spinach well. Add water, and cook on medium high heat for about 3 minutes. Remove from heat, and drain in a colander.
  • Steam tomatoes on high heat for about 5-7 minutes, until the skin cracks and they are blanched. Chop into quarters, or to preferred size.
  • Seed and finely chop green chile pepper. Finely chop ginger root, and add to chopped chile pepper.
  • Pour ghee or oil into pan on high heat. Add asafoetida, then add chopped ginger and chile mix. Reduce heat to medium. Add paprika, cumin, turmeric, coriander, and garam masala. Stir well for about 2-3 minutes.
  • Add spinach, then add tomatoes, and stir well. Cook on medium to medium-high heat for about 5 minutes.
  • Chop panir (curd cheese) into small cubes, to preferred size.
  • Add water, if needed, to prevent sticking. Reduce heat to medium-low, and stir well. Add panir, then simmer for about 10-15 minutes.
  • Add whole milk or heavy cream. Reduce heat to low. Simmer for about 10 minutes. Turn off heat.
  • Serve with rice or flatbread such as naan or chapati (roti).

Saag refers to an Indian vegetable dish in which spinach or other dark greens are stewed with ginger, garlic, fresh chiles and spices until meltingly soft. As the name suggests, saag paneer includes paneer, a mild Indian cheese that is firm enough to cook without melting. The heat of the serrano chiles balances the creamy richness, but for a milder dish, remove the seeds before mincing the chiles. The fresh greens are finely chopped before cooking, to help them break down faster into a silky gravy. Thawed chopped frozen spinach can be used to save time, but make sure to drain well and squeeze out the excess liquid first. Finish the dish with a little heavy cream (or plain yogurt) to lend body and richness.

1 pound fresh baby spinach (about 8 packed cups)
2 tablespoons ghee
8 ounces paneer, cut into 1-by-1/2-inch pieces
1/2 cup finely chopped yellow onion
Kosher salt and black pepper
1 tablespoon freshly grated peeled ginger (from a 2-inch piece)
2 teaspoons grated garlic (from about 3 cloves)
1 serrano chile, stemmed and minced
1/2 teaspoon ground coriander
1/4 teaspoon ground cumin
1/2 cup heavy cream

Steps:

  • In a food processor, working in batches, pulse spinach until minced but not puréed. Do not pack the spinach too tightly or it won't get evenly chopped. You should have about 3 packed cups of minced spinach.
  • Heat 1 tablespoon ghee over medium in a large nonstick skillet. When it shimmers, add paneer and cook, turning occasionally, until golden all over, 5 to 7 minutes. Using tongs or a fish spatula, transfer cheese to a plate, leaving as much ghee as possible in the skillet.
  • Reduce heat to medium-low, add the remaining 1 tablespoon ghee and the onion, and season with salt and pepper. Cook, stirring occasionally, until softened but not browned, about 5 minutes.
  • Add ginger, garlic and chile, and cook, stirring occasionally, until fragrant and well incorporated, 1 minute. Stir in coriander and cumin until well blended.
  • Add minced spinach and 1/2 cup water, and increase the heat to medium. Season with salt and pepper and cook, stirring occasionally, until spinach is completely soft and most of the liquid is absorbed, about 8 minutes.
  • Stir in heavy cream and paneer until well incorporated. Season with salt and pepper. Transfer to a serving bowl.
  • Divide rice and flatbread among 4 shallow bowls or plates. Pass the saag paneer to spoon on top.
