This is a recipe I like to make for my boyfriend who recently started venturing into the realm of Paleo. We both think their great and they even ship well!

1/4 cup softened butter
1 cup stevia
1 large egg
1/2 teaspoon vanilla
1 1/2 cups almond flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup nestle chocolate chips
1 cup sweetened coconut
1 (5/8 ounce) packet no-sugar-added hot chocolate mix (or just cocoa powder for strict paleos)

Steps:

  • Preheat oven to 375.
  • Cream butter, stevia, and vanilla.
  • Add almond flour, baking soda, salt, and cocoa. Carefully mix.
  • Mix in chocolate chips and coconut. Drop by rounded tablespoons and flatten or shape as you wish, these cookies do not spread.
  • Bake for 10-12 minutes (only until they look slightly under-done) and allow to cool on sheet for 2 minutes.

I came up with this scrumptious recipe one day, just trying to find a way to use the bag of coconut flakes sitting in the cupboard. It was just a cross between family recipes for cookies and my own special touch of imagination. Well I'm glad that I came up with it as are my family and friends. I hope you enjoy as much as we did.

1 cup butter
1 cup white sugar
½ cup light brown sugar
2 eggs
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups semisweet chocolate chips
2 cups flaked coconut

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda and salt; stir into the creamed mixture. Fold in chocolate chips and coconut. Drop by rounded spoonfuls onto cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

  • In the bowl of a food processor, add in almond butter, coconut sugar and coconut oil; process until it comes together, about 1 minute. Add in eggs and process again. The dough will probably seize up at this point, but don't worry that's okay.
  • Next, add in coconut flour, baking soda and salt; process again until a dough forms. Gently fold in chocolate chips.
  • Use a cookie scoop to drop dough onto prepared cookie sheet. You can flatten dough with the palm of your hand if you'd like to have cookies like mine in the photo, or if you prefer, you can leave the dough as is and cookies will be a bit puffier.
