Time 40m

Yield 35 cookies

Number Of Ingredients 9

3/4 cup unsalted butter, cut into chunks
2 cups old fashioned oats
1 1/2 cups packed light brown sugar or 1 1/2 cups dark brown sugar
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1 large egg, at room temperature
1 cup dark seedless raisins, rinsed, drained, patted dry on paper towels
1 1/4 cups unbleached all-purpose flour, plus more if needed

Steps:

  • Position a rack in the middle of oven; preheat to 350°.
  • Grease several large baking sheets or coat with nonstick spray.
  • In a large heavy saucepan over medium heat, melt the butter, stirring, until completely melted and runny; remove from heat.
  • Thoroughly stir the oats and 1 tablespoon water into the butter.
  • Let stand for 5 minutes so the oats can hydrate.
  • Vigorously stir in the sugar, baking soda, cinnamon, and salt until thoroughly incorporated.
  • Vigorously stir in the egg and raisins, then the flour until very well blended.
  • If the dough is very soft, stir in 1-2 tablespoons more flour.
  • If it is still soft, let stand to firm up for 5 minutes.
  • In a large bowl, vigorously stir the brown sugar into the butter until well blended, mashing out any sugar
  • Using a 1 1/2-inch spring-loaded scoop or heaping measuring tablespoon, form the dough into uniform mounds, spacing about 2 1/2 inches apart on the baking sheets.
  • Using your fingertips, pat down the mounds just slightly.
  • Bake one sheet at a time for 7-10 minutes or until the cookies are barely firm in the center tops , tinged with brown, and slightly darker at the edges.
  • Transfer the baking sheets to wire racks; let stand until the cookies firm up for 3 minutes.
  • Using a wide spatula, transfer the cookies to the wire racks; let cool completely.

THE PALMER HOUSE BROWNIE

The Palmer House Brownie image

This recipe goes way back, like 1898 back, when the brownie was first recorded into existence at the Palmer House Hotel in Chicago. Don't rely on the traditional stick test for doneness in this recipe; the brownies will continue to be gooey even after baking. For easier cutting, place glazed brownies in the freezer for 3 to 4 hours.

Provided by Smart Cookie

Categories     Desserts     Cookies     Brownie Recipes     Nut Brownie Recipes

Time 1h15m

Yield 16

Number Of Ingredients 10

1 pound butter
4 (3.5 ounce bars) semisweet chocolate
1 ½ cups white sugar
½ cup all-purpose flour
8 eggs
1 tablespoon vanilla extract
1 ½ (8 ounce) packages crushed walnuts
1 cup water
1 cup apricot preserves
1 teaspoon unflavored gelatin

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a 9x12-inch rimmed baking sheet.
  • Place butter and chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
  • Combine sugar and flour in a medium bowl.
  • Add chocolate mixture to sugar mixture and mix well, about 4 to 5 minutes. Mix in eggs and vanilla extract.
  • Pour batter into the prepared baking sheet. Sprinkle walnuts on top, pressing down slightly into the batter.
  • Bake in the preheated oven until edges start to crisp and brownies rise about 1/4 inch, 30 to 40 minutes.
  • Mix water, apricot preserves, and unflavored gelatin in a saucepan to make the glaze. Mix thoroughly and bring to a boil for 2 minutes.
  • Remove brownies from the oven and allow to cool for 30 minutes before spreading a thin layer of the glaze on top with a pastry brush.

PALMIER COOKIES EASY DESSERT RECIPE BY TASTY

Palmier Cookies Easy Dessert Recipe by Tasty image

French palmier cookies look like they'd involve a million steps, but did you know you can make them with just three ingredients? It really is as easy and simple as rolling out some store-bought puff pastry, sprinkling sugar and butter, and rolling it into that classic heart shape. As the cookies bake, the sugar caramelizes and makes them golden, making it a fancy-looking but non-fussy dessert that'll impress all your friends!

Provided by Alvin Zhou

Categories     Desserts

Yield 4 servings

Number Of Ingredients 3

1 sheet frozen puff pastry, thawed
4 tablespoons butter, melted
1 cup cane sugar

Steps:

  • Unwrap the puff pastry. Using your hands or a rolling pin, flatten out the seams if your puff pastry has then, making an even rectangle. Brush melted butter evenly over the puff pastry. Sprinkle half of the sugar on the pastry, then spread it around evenly. Using a rolling pin, roll the pastry into a tall rectangle, pressing the sugar into the pastry. Flip the pastry, then repeat the process, brushing with butter and rolling in the rest of the sugar.
  • Tightly roll the bottom of the pastry toward the middle, stopping at the center, then roll the top of the pastry to meet in the centre as well. The rolls should be the same size. Wrap in plastic wrap and chill for about 30 minutes.
  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Remove the plastic wrap and push one of the rolls directly on top of the other. Trim off the uneven ends of the pastry, then slice into ½-inch (1 cm) rounds. They should look like smushed hearts. Place the slices on the baking sheet about 2 inches (5 cm) apart to allow for expansion. Bake for 15 minutes, flipping them halfway, until the sugar is caramelized and the cookies are golden brown.
  • Enjoy!
