Quick and easy, tender and juicy, Pan Fried Meatballs are made with ground beef, onion, garlic and parmesan cheese for a simple weeknight dinner option that's ready in minutes!

1 pound ground beef (I used 80/20)
1 pound ground veal
1/2 pound sweet italian sausage
1 large vidalia onion (cut into quarters)
4 cloves of garlic
1/2 cup chicken stock
1 tablespoon fish sauce
1 cup panko bread crumbs
1 1/4 cup fresh grated parmesan cheese
3 tablespoons fresh chopped parsley
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
1 large egg (lightly beaten)

Steps:

  • Using your hands, lightly mix the beef, veal and sausage. Set aside.
  • In a blender, add the onion and garlic. Blend until pureed.
  • Add the onion mixture, stock, fish sauce, panko, parmesan, parsley, salt, pepper and egg to the meat mixture and, using clean hands, mix the ingredients together until well combined.
  • Gently shape the mixture into balls approximately the size of a golf ball.
  • Heat the olive oil in a deep skillet or dutch oven over medium high heat.
  • Add the meatballs to the pan and cook until golden brown.
  • Flip the meatballs and continue to brown on all sides turning once crusty and golden.
  • Cover the pan and turn the heat to low.
  • Cook the meatballs for an additional 5-10 minutes until cooked through. (Be sure to check your meatballs to make sure they're not burning. If they seem a bit dry, add 2-3 tablespoons of water to the pan and cover.)
  • Serve your meatballs with your favorite sauce.

500 g minced beef
1 medium onion, finely chopped
1 clove garlic, crushed
1 teaspoon beef stock powder
5 1/2 cups stale breadcrumbs
1 egg, lightly beaten
1/2 teaspoon ground nutmeg
2 tablespoons chopped of fresh mint
2 tablespoons oil

Steps:

  • Combine meat, onion, garlic, stock powder, breadcrumbs, egg, nutmeg and mint together and mix well in a bowl.
  • Roll 2 level tsp of mixture into balls.
  • Heat oil in a pan, add meatballs.
  • Cook until brown and tender.
  • Drain on absorbent paper.
  • Serve with sauce.
  • Can serve with the satay sauce that I have also posted.

This is originally from the Betty Crocker cookbook. My 3rd and 4th grade daughters are learning to cook and this is simple enough for them, but turns out well enough to serve to guests. (When they use this recipe, they usually sub 1/4-1/2 tsp onion powder for the chopped onion.) It's also a very versatile recipe: sometimes we also add other spices -- oregano, basil, thyme for Italian food or cinnamon and mint for Greek food.) We always oven-bake these, though there are also pan-fry and microwave options in the cookbook that we've not tried. Also good to cook ahead and freeze for later use.

1 lb ground beef (we also use ground turkey)
1/2-2/3 cup dry breadcrumbs (can also use seasoned crumbs)
1/4 cup milk
1/4-3/4 teaspoon salt (optional)
1/2 teaspoon Worcestershire sauce
1 small onion, chopped (approx 1/4 c)
1 egg

Steps:

  • Combine all ingredients and shape into 20-24 meatballs (1 to 1-1/2 inches each).
  • To oven bake: preheat oven to 375 degrees F. Place in ungreased 9x13 pan (you may want to line it with foil for easier clean-up).
  • Bake 20-25 min or until light brown and cooked through; turn meatballs halfway through, if desired, to help maintain a round shape.
  • To pan fry: Cook in skillet on medium heat, turning as needed, until brown (approx 20 min).
  • To microwave: Place in micro-proof 12x7 pan and cover loosely.
  • Micro on high for 3 minutes; rearrange meatballs.
  • Cover again loosely and micro until brown inside, approx 5-7 min more.
  • Let stand covered for 3 minutes.
